Hi all! Today I have for you a delicious charlotte with cottage cheese and apples. I baked this cottage cheese biscuit a long time ago, but only remembered the recipe now (baking recipe for a slow cooker or oven).

For the biscuit dough recipe you will need:

  • 5 eggs
  • 1 faceted glass of wheat flour (or 2 multi glasses),
  • 1 cup granulated sugar (or 2 sugar).

For the recipe for apple-curd filling in a biscuit you will need:

  • 300 g cottage cheese,
  • 70-100 g sugar,
  • 50 g butter,
  • 5 medium apples (at the beginning of summer I used 10 pieces of small green apples of the lungwort variety)

How to cook charlotte with cottage cheese in a slow cooker

For a cottage cheese biscuit with cottage cheese, the dough is prepared in the same way as for any sponge cake or cupcake.

Beat the eggs and sugar well (to a fluffy, stable foam using a mixer for about 7-10 minutes).

You need to prepare the filling for the curd charlotte before beating the dough for the apple sponge cake:

Rub the cottage cheese through a sieve and mix with sugar and butter, or simply puree everything at once with a blender,

Cut the washed apples into slices and remove the core.

Grease a tall baking dish or multicooker bowl with butter.

The bulk biscuit dough (a small part of it) is laid out in the mold so as to cover the bottom by 2 cm.

Place more than half of the chopped apple slices on the dough.

Pour a little more dough onto the apples

The last top layer will be the remaining apples; there is no need to pour dough over them; during baking, the sponge cake will rise and fill the gaps between the slices.

In this recipe for apple-curd biscuit charlotte, cake or pie, instead of apples, you can use slices of oranges (dividing them into segments without veins), peaches, nectarines, bananas or any berries (red or black currants, blackberries, strawberries, pitted cherries, only Do not overdo it with berries, otherwise the biscuit will be wet and soggy).

In an oven preheated to 180 degrees, the curd biscuit with apples is baked on the middle tier for 40-45 minutes (it all depends on the oven).

My charlotte with cottage cheese and apples was baked in a Panasonic multicooker for 65 minutes on the “Baking” mode.

After the signal, you need to leave the curd charlotte in the multicooker on heating for 15 minutes, only then open the lid and let the biscuit cool slightly. As soon as it moves a little away from the walls of the multicooker, insert the steaming tray and tip our curd cake onto it.   • charlotte-cake, with the maximum amount of baking and additives in the form of raisins, honey, candied fruits and other sweets;
  • charlotte with apples without baking;
  • charlotte according to old recipes, from pieces of stale bread.

In addition to the classic apple filling, cottage cheese is often put into the charlotte, and then it gets the name curd.

Among all these options, the so-called one stands out. It is based on an old bread recipe. What is new, however, is that freshly baked sponge rolls are used instead of stale bread, making the baking step unnecessary. Royal charlotte is curd, but there are no apples in it. They can be used as a filling for rolls, and also for finishing the pie.

For added elegance and beauty, the dish is decorated with berries or fruits.

Ingredients:

For the biscuit:

  • 2 sponge rolls with apple jam;
  • sour cream, ½ kg;
  • cottage cheese – 250 g;
  • 0.1 kg sugar;
  • cream, 200 ml;
  • gelatin – 7 g.

For decoration:

  • hard apple – 1 piece;
  • syrup from water and sugar at a ratio of 1:1.

  1. Dissolve the gelatin by adding a little sugar to the water. Slowly heat this mixture until all components have dissolved. Cool.
  2. Place sugar, cream, cottage cheese and sour cream in a mixer and beat. While beating, add the gelatin mixture to the contents.
  3. Cut the biscuit rolls into transverse layers and place them on the bottom and sides of a deep bowl. Let's put it more tightly.
  4. Fill the inner cavity with the curd mass and place the remaining slices of roll on top. Place the bowl in the refrigerator for 1½ hours to cool and harden.
  5. Peel the apple, remove the core and cut into thin slices. After boiling the syrup, cook the apple slices in it until transparent, but not longer. When they cool, they look like varnish.
  6. After removing the frozen charlotte from the refrigerator, carefully tip it onto a dish. We lay out apple “petals” randomly; some craftswomen use them to make roses or daisies.

Charlottes in the oven

The most recipes for baking charlotte in the oven have been proposed. This is understandable, because it is the oven that guarantees the high rise of the cake and even baking. And the smell of fresh baked goods floating through the apartment cannot be put into words. Pies in the oven, including charlotte, turn out fluffy and beautiful.

Charlotte with apples and cottage cheese on butter dough without eggs

Ingredients:

  • white flour – 1 tbsp;
  • 0.2 kg cottage cheese;
  • ½ tsp. baking soda;
  • milk or sour cream;
  • vanillin;
  • kefir – 1/3 tbsp.;
  • citric acid – 1 pinch;
  • 3 tbsp. l. Sahara;
  • 0.1 kg butter;
  • 3-4 apples.

  1. For the dough, melt the butter, then let it cool. We extinguish the soda in kefir, mix it with butter, and gradually add flour. We get a dough that resembles shortbread. It is not liquid and can be easily shaped by hand. After rolling it into a bun, put it in the refrigerator for 15 minutes.
  2. Prepare the curd filling. Mash the cottage cheese with a fork, add vanillin, sugar and citric acid. Soften the filling with sour cream or milk, mix thoroughly until smooth.
  3. After removing the seeds and skin, cut the apples into thin semicircles.
  4. We take a springform pan with high straight sides, grease the entire inner surface with oil, and put the dough out of the inside in the same shape as in the baking container. The dough can be shaped well by hand, so spread it out to cover the bottom and then line it into thin walls, pressing them against the sides of the pan.
  5. Fill the inner cavity: first there is a layer of apples, followed by the curd filling. We lay the apples on top in beautiful circles, folding the edges of the dough sides inward.
  6. Bake the pie for 25 minutes at 200°C.

The charlotte turns out tall, rosy, crumbly, with a pleasant sourness.

Among charlotte recipes, many dietary ones have recently appeared. This is understandable: you need to maintain your figure, but you still want something tasty. Let's consider a couple of options for charlottes that are as close as possible to a healthy diet.

Diet charlotte with apples and cottage cheese on oat bran

Ingredients:

  • 2 chicken eggs;
  • low-fat cottage cheese – 2 tbsp. l.;
  • cinnamon powder – 1 tsp;
  • oat bran – 4 tbsp. l.;
  • 1 apple;
  • sweetener;
  • 2 tbsp. l. starch.

  1. Set the cinnamon and apple aside, mix the remaining ingredients and let them brew for a while.
  2. Slice the apples thinner, take a silicone mold and line the bottom with apple slices. There is no need to lubricate anything. After laying out the apples, sprinkle them with cinnamon.
  3. Pour the infused dough on top and place the mold in the oven for 20 minutes. The temperature should be kept at 180°C.

Diet charlotte with apples and cottage cheese on whites

Ingredients:

  • baking soda – ½ tsp;
  • whole grain flour – 250 g;
  • 4 apples;
  • cottage cheese – 200 g;
  • 3 egg whites;
  • starch – 25 g;
  • vanillin;
  • honey – 60 g.

  1. Beat the whites. Combine cottage cheese with soda, vanillin and starch in a bowl, carefully mix in the whipped whites.
  2. Cut the apples into slices. Pour the dough into the mold and place the apple slices on top of it.
  3. Bake in the oven for 40 minutes.
  4. If you have a slow cooker, then pour out the dough and place the apples in a bowl. Then turn on “Baking” and set the time to 45 minutes.

By the way, charlotte in a slow cooker turns out no worse than in the oven. Moreover, many housewives who have tried both claim that the curd turns out delicious: sheer tenderness!

So why not try cooking charlotte in a slow cooker? It won’t burn or overcook, it will bake perfectly and turn out fluffy and tasty.

Apple charlotte in a slow cooker, with cottage cheese and syrup

Ingredients:

  • fresh cottage cheese – ½ kg;
  • 2 tbsp. l. sour cream;
  • 3 tbsp. l. semolina;
  • sweet apples – 4-5 pcs.;
  • 2 eggs;
  • 5 tbsp. l. white flour;
  • sugar, equal parts for dough and syrup - only 300 g;
  • 50 g butter for cream syrup;
  • salt.

  1. Make the syrup by mixing sugar with water and butter and heating the mixture to a boil.
  2. Peel the apples from seeds and peel, cut into slices. Place them directly into the bowl, just grease the bottom with butter first. Pour syrup over apples.
  3. Collect cottage cheese, eggs, semolina, sugar, sour cream, flour and salt in a blender. Turning on the blender, achieve homogeneity of the curd mixture, then spread the dough on top of the apples.
  4. Level everything on top and turn on “Baking” for 60 minutes. At the end, after the sound signal, we are not in a hurry to open, but give the charlotte time to cool sufficiently inside. Then put it on a plate and serve.

Ingredients:

  • cottage cheese with fat content 9% – 400 g;
  • 4-5 apples;
  • sugar, distribute 2 tbsp. between the dough and the cottage cheese filling;
  • flour – ½ tbsp.;
  • 50 g butter;
  • 5 eggs;
  • sour cream with fat content 15% – 100 g;
  • starch – 1½ tbsp. l.
  1. Take 3 eggs and separate the yolks from them. Place the yolks in the cottage cheese, add sugar and stir well. After this, add starch and sour cream, knead again.
  2. Separately, beat the whites with sugar until they reach white foam. We introduce this foam, carefully mixing, into the mass of cottage cheese, yolks and sour cream - we get a curd filling.
  3. Beat the remaining 2 eggs with sugar, add flour, get biscuit dough.
  4. Peel the apples and cut them into beautiful slices. Place them in one layer on the bottom of the multicooker, pre-greased, and pour half of the dough on top. Then place the rest of the apples and the curd filling on them, carefully leveling them out. Fill the top with the dough again until the remainder remains.
  5. Set the “Baking” mode and set the time to 1 hour.

Cottage cheese goes well with apples. Both in the case where cottage cheese dough is simply made, and in another case when the cottage cheese forms a separate layer, acting as an independent filling. And most importantly, preparing such curd charlottes with apples is extremely easy, regardless of whether you use a slow cooker or a modern oven for baking.

The multicooker produces the most fluffy baked goods - the charlotte with cottage cheese and apples you prepared will prove this to you. No one will refuse such a dessert; it will also attract children who shy away from cottage cheese in its pure form. And you will only need an hour, and your efforts will take only 10 minutes, the rest of the time the smart technology will work.

Ingredients

  • 1–2 sweet apples
  • 100–150 g cottage cheese
  • 3 chicken eggs
  • 1 cup granulated sugar
  • 1 cup wheat flour

Preparation

1. Break the eggs into the bowl of a food processor or into a deep bowl or container. Add salt and sugar there. Beat until fluffy foam at highest speed for about 3-5 minutes (this can also be done using a mixer). If you are not sure about the quality of the eggs, add a pinch of baking powder along with the flour to make the charlotte fluffy.

2. Sift the flour and pour it into the beaten egg mass, but now mix everything not at high speed, so as not to knock down the foam, but at the lowest speed for 1-2 minutes. Then grease the multicooker bowl with any oil you have in the kitchen: vegetable or butter.

3. Peel the apples, rinse and cut into four parts. Remove the seed blocks and cut into cubes.

4. Pour the dough into the multicooker bowl and place apple slices on top of it. It is better to cut the apples at the very last moment so that they do not darken. If you first peeled the apples and then started preparing the dough, sprinkle them with lemon juice.

5. Pour cottage cheese, mashed with a fork, on top of the apples. You can use ricotta or cream cheese instead. Turn on the multicooker in the “Baking” mode for 50 minutes.
