Kefir pies

Ingredients (for 10-12 pcs):
kefir (3.2%) – 250 ml
sour cream (20%) – 50 ml
flour – 400 g
soda – 0.5 tsp.
salt – 1 tsp.
sugar – 1 tbsp. l.
sunflower oil – 35 ml
eggs – 1 pc.

Preparation:

Shake expired (no more than 2 weeks) kefir, fermented baked milk or sour milk, mix with sour cream and heat over low heat for 2-3 minutes to 36-37 °C. Add salt, sugar, yolk and sunflower oil to the warm mixture of kefir and sour cream. Then add half the flour in portions, mix and sprinkle the dough with soda.

Add the remaining flour, knead the dough, greasing your hands with sunflower oil. Place the finished dough in a greased bowl, cover with film and leave for 15 minutes at room temperature.

Squeeze balls of dough the size of a chicken egg between your thumb and forefinger and stretch them into pancakes with a diameter of 10cm. Place 1-1.5 tbsp of filling on the dough and make pies. Fry them, seam side down, in oil for 3-4 minutes on each side.

Cabbage filling for pies

Ingredients:
cabbage – 250 g
onions – 70 g
carrots – 75 g
tomato paste – 2 tbsp. l.
salt – 2 g
ground black pepper – 2 g
sunflower oil – 35 ml
butter – 20 g

Preparation:

Cut the onion into cubes. Grate the carrots on a coarse grater. Chop the cabbage, mix with carrots, add salt and crush with your hands.

Heat vegetable oil and butter in a frying pan. Fry the onion for 2 minutes until translucent.

Place the cabbage and carrots in the pan, cover with a lid and simmer, stirring, for 10 minutes until softened. Add ground pepper and tomato paste, simmer covered for another 5 minutes.

Potato filling for pies

Ingredients:
potatoes – 500 g
salt – 1 tsp.
oil – 35 ml
onion – 1 pc.
dill – 3-5 sprigs

Preparation:

Cut the potatoes into pieces, pour boiling water over them, add sunflower oil and cook for 10-15 minutes until tender, covered. Halfway through cooking, add salt.

Finely chop the onion and fry in oil. Drain all the water from the potatoes, mash them with onions and butter. Add dill.

Pear filling for pies

Ingredients:
pears – 300 g
butter – 20 g
sugar – 16 g
vanilla sugar – 8 g

Preparation:

Cut the pears into cubes approximately 1 cm in size. Melt the butter in a frying pan and add the chopped pears. Fry, stirring, over medium heat for 2 minutes.

When the pears are lightly browned, add sugar and vanilla. Roast for about 5 minutes more until the pears are caramelized.

Garlic Sause

Ingredients:
garlic – 1 clove
salt – 2 g
sour cream (20-25%) – 100 ml
parsley - 1 sprig

Preparation:

Peel the garlic, crush and mix with salt and sour cream. Chop the parsley and add to the sauce.

Orange sauce

Ingredients:
sour cream (20-25%) – 100 ml
oranges – 1 pc.
powdered sugar – 50 g
cinnamon – 2 g

Preparation:

Grate the orange zest. Cut the orange in half and squeeze the juice from one half. Add powdered sugar, zest and cinnamon to the juice. Combine the mixture with sour cream.

Other types of filling

Bean and nut filling

carrots - 1 pc.
onion - 1 pc.
canned beans – 200g
salt - ½ tsp
nuts – 50g

Grate the carrots on a fine grater, cut the onion into small cubes. Fry vegetables in hot oil for 2 minutes. Grind the nuts in a blender along with the beans thrown into a sieve. Add to vegetables, add salt and fry for another 2 minutes.

Chicken giblet filling

chicken giblets – 1kg
onion - 1 pc.
salt - ½ tsp
butter - 100g

Rinse the chicken giblets, peel off the films and grind in a meat grinder along with the onion, and add salt. Melt 50g butter in a frying pan, add chicken liver and fry for 10 minutes. Add another 50g of butter and after 2-3 minutes the filling is ready.

Curd filling

cottage cheese - 200g
yolk - 1 piece
sugar - 1 tbsp
vanillin - 1g

Grind the cottage cheese through a sieve, add the yolk, sugar and vanillin, mix.
