The question often arises of how best to cut Chinese cabbage so that the structure of the salad can be felt and the hard centers of the leaves can be used. I admit, I tried a bunch of options, and found “mine”: disassemble the head of cabbage into leaves. Next, use a large knife to cut out the white centers. You should get a very elongated triangle. We will always cut them finely, about 0.5 cm.

It is better to tear the green part of the leaf with your hands, this way more juice and vitamins are preserved. But if there is no time left for this, we simply cut it into much larger pieces.

Here's what we need:

  • Beijing cabbage – 0.5 heads
  • Chicken breast – 1 pc.
  • White bread – 4-5 pieces
  • Hard cheese – 50-100 gr.
  • Cherry tomatoes for decoration – 5-7 pcs.
  • Good quality fatty mayonnaise
  • green onions (if you like)

Preparation:

Boil the chicken breast for 25-30 minutes.

To make it tastier, it must be immersed in boiling water, so the meat will have more flavor and juice.

Cut the crust off the white bread and cut it into cubes 1.5-2 cm in size.
Fry them in a small amount of vegetable oil, stirring constantly so that they brown on all sides.

If you don’t have time to prepare croutons, you can use store-bought croutons, preferably cheese-flavored ones.

We cut the cabbage like this - the green part is large, the white part is smaller.

Ingredients: 230 g of fresh chicken fillet, 55-65 g of Parmesan (it cannot be replaced with other hard cheese), a small bunch of Chinese cabbage leaves, a miniature loaf of white bread, 2 raw eggs (chicken), 120 ml of olive oil, 2 fleshy tomatoes, steam garlic cloves, salt, herbes de Provence, 3 large spoons of freshly squeezed lemon juice, a large spoon of dry mustard, a pinch of granulated garlic.

  1. To prepare croutons, all crusts are carefully cut off from the selected bun. Next, miniature bread cubes are drizzled with oil, sprinkled with granulated garlic and baked in the oven or microwave. The crackers should be crispy.
  2. To make the dressing, eggs are boiled, after which their yolks are ground with chopped fresh garlic. Dry mustard is poured into the same mass, salt to taste and lemon juice are added. All that remains is to pour in the olive oil and thoroughly mix all the ingredients of the sauce.
  3. The chicken is cut into pieces, salted, sprinkled with herbs and fried to an appetizing crust in hot oil.
  4. Peking cabbage is washed, dried and torn by hand.
  5. All prepared non-hot ingredients are poured onto a plate, sprinkled with finely chopped cheese and poured generously with dressing.
  1. First, the onion cubes are sauteed in oil, after which they are fried along with thin slices of mushrooms. When the mass has cooled, it can be mixed with chicken, divided into fibers.

  2. The eggs are boiled for 10-12 minutes, cooled and cut into small cubes.
