  • finely chop a bunch of parsley, chop a handful of nuts (almonds or cashews), add a spoonful of olive oil, squeeze the juice of ½ lemon, add a pinch of coriander, the same amount of black pepper, make a mashed potatoes with a blender;
  • combine 3 large tablespoons of olive oil, ½ freshly squeezed lemon juice, 1 small spoonful of mustard, 5-6 large tablespoons of sour cream or natural low-fat yogurt, add a pinch of salt and allspice;

  • Pour 100 grams of cashews with hot water, leave for 7-8 hours, add a spoonful of lemon juice, 200 ml of water, salt. This nut sauce is ideal with spring rolls or dishes containing seaweed.

In general, you can freely combine your favorite foods in the sauce, because you can make it sour, sweet or spicy. It is not necessary to be limited to a standard set of products. For example, I really like to make sauces from pickled ingredients - here you can use capers to help you, and pickled cucumbers. Avocado will help to create a calmer taste, and I also like the flavor of fennel and white wine (the main thing with it is not to overdo it).

I will show you some decent recipes for very rare salads for the festive table. We bet that many of them are you seeing for the first time? I promise you won't be disappointed!

Pumpkin salad

Boil the pasta in advance - it needs about 150 grams. Heat 1 large spoonful of olive oil in a skillet. As soon as the oil starts to heat up, add the onion mixture (leek rings and half a red onion), add a little salt. The onion should have a delicious crispy crust. After that, add fresh pumpkin in cubes (200 grams), while the pan is hot, the vegetable will also acquire a golden roast. Then reduce the heat, add water and simmer for a quarter of an hour, adding a little shredded cabbage, 1 carrot, finely grated and a couple of garlic cloves.

Combine the pasta and vegetable roast in a bowl. Drizzle with balsamic vinegar.

Warm salad with couscous

You can prepare a dressing sauce in advance: combine a tablespoon of olive oil with lemon juice, finely chopped mint. Add a pinch of sugar and black pepper.

Pour boiling water over couscous (200 grams) for a quarter of an hour, strain. Add the same amount of boiled chickpeas (it is cooked for about half an hour, to shorten the time, you can soak it in water overnight). Leave the ingredients to dry.

At this time, cut a small zucchini at an angle, fry. Cut 5 pieces of cherry in half, also fry at the cut. By the way, if you add a little thyme and rosemary to the oil before frying, then the dish will turn out to be a little spicy.

Adyghe cheese (100-150 grams) cut into plates, fry each on both sides.

Mix couscous, chickpeas, zucchini and cherry tomatoes, pick green lettuce leaves. Mix. Put the finished ingredients as follows: salad, cheese, sauce.

Quinoa salad

Boil 2 tablespoons of quinoa. To it add fresh lettuce leaves, radish (cut 3-4 things into thin rings), cherry tomatoes (4 pieces also into rings), half a fresh cucumber (in pieces), salt and pepper.

Dressing: knead half the avocado, gradually pouring in olive oil (1 large spoon).

Prepare the dressing: finely chop 3 garlic prongs, 50 grams of grated ginger root. These components can also be chopped in a blender. Pour 40 ml of oil and the same amount of soy sauce to the garlic-ginger mass. Stir the dressing and vegetables and refrigerate for 20-30 minutes.

Pickled chicken and herbs

You can also cook meat salads without mayonnaise. If meat or poultry is successfully marinated, then the opening bouquet of taste cannot be compared with anything.

Prepare the dressing: mix 20 ml of oil and mustard, ½ lemon juice, pepper, salt.

Marinate chicken breast: a spoonful of dry seasonings (in equal parts: coriander, curry, oregano, thyme), 2 cloves of garlic, salt and pepper. Leave for half an hour. Then bake in the oven (35 minutes at 180 ° C). Remove, cut into long strips. Add 100 grams of sun-dried tomatoes and 50 grams of diced Parmesan. Spread on lettuce leaves (in the everyday version, the greens can be torn and added to the dish). Sprinkle with thin leek rings on top.

Shrimp + avocado

Marinate shrimps in soy sauce, fry with garlic. Combine with chopped avocado wedges. Pick up watercress, sprinkle with pine nuts.

Finely chop 200 g of Peking cabbage, chop a small fresh cucumber into strips, add half a can of canned corn, add dill. Salt, season with any vegetable oil.

Mix the resulting delicacy with other ingredients: 100 grams of cheese (preferably "Dor Blue"), thin pear plates, a handful of walnuts, arugula. Season with salt and pepper. Drizzle with ½ small spoonful of olive oil.

Vegetable mix

Cut half the green apple into thin, almost transparent slices, add a handful of young peas pods, grate half of the raw carrots, finely chop the red cabbage (50 grams). Pick up Romano leaves. Sugar lightly, season with salt, drizzle with olive oil.

Salad without mayonnaise: a recipe with a photo step by step

Let's use the example of a very tasty chicken dish, let's try to cook step by step a chicken recipe without mayonnaise, of course with a photo.

We need: chicken breast fillet, green beans - 200 grams, 4 chicken eggs, 3 small potatoes, olives - 8-10 pieces, cherry tomatoes - 4 pieces, 2 garlic prongs, olive oil - 40 ml, Dijon mustard - ½ tbsp. spoons.

  1. First, prepare the dressing. Combine mustard, oil and lemon extract. Mix thoroughly.
  2. Boil potatoes and eggs.
  3. Boil the chicken breast, do not drain the broth.
  4. As soon as the chicken is cooked, take it out, and pour the green beans into the broth, keeping it in boiling water for about 5 minutes.
  5. Cut the olives into slices, the breast into slices, the cherry into quarters, the potatoes and eggs into quarters as well.
  6. Mix all vegetables together with half the dressing.

Rinse small young potatoes (300 g) well, cut each tuber in half and marinate for 20 minutes. For the marinade, we need a spoonful of soy sauce, a pinch of curry, the juice of a quarter of a lemon, a chopped sprig of rosemary, salt and pepper. Further - either bake the potatoes in the oven (preferably on parchment), or grill. Add corn kernels (canned or boiled), bell pepper to the finished vegetable (cut ½ the vegetable into slices).

With cauliflower

Cut the cabbage into small heads, pour wine vinegar for 5 minutes. Boil 1 potato, cut into cubes. Add a quarter stalk of chopped celery and green onion rings. Season with sauce: mix a spoonful of mustard, sour cream, salt and pepper.

Diet Salads

Cut 1 large tomato into wedges. Yellow bell pepper - straws. Cut half the avocado into slices. Season with soy sauce, drizzle with olive oil.

Greek

Cut feta cheese into cubes (you need 200 grams). To it add 1 small spoonful of thyme, a little hot chili pepper, squeeze out a clove of garlic. Stir, fry the cheese in a pan. To it add ½ sweet pepper, 5-6 pieces of cherry, red onion in thin rings, a handful of olives. Sprinkle with oregano, drizzle with wine vinegar.

With daikon

Peel and grate the daikon radish. Do the same with carrots. Keep in mind that these two components are taken in the same amount. And calculate their number based on your needs. I can say that 300 grams of daikon and carrots are more than enough. Fresh vegetables are seasoned with coriander, garlic (2 cloves per 300 grams). Pour freshly squeezed orange juice into the daikon. Sprinkle finely with herbs (parsley, basil, dill), salt.

Beetroot salad without mayonnaise

You can prepare this simple, economical, but insanely delicious beetroot salad without mayonnaise both in winter and in summer, diversifying your usual diet.

  • Grate fresh beets, carrots and apple on a Korean grater.
  • Sugar and salt a little.
  • Grate half an apple.
  • Sprinkle with lemon juice, garnish with mint leaves.

New Year's salads without mayonnaise

Not everyone can celebrate a family holiday and do without a feast. If you are losing weight, I suggest that you do not give up your usual dishes, but replace them with more useful ones, you will see that no one can distinguish New Year's traditional salads without mayonnaise from the original!

Dressing: 1 small spoonful of olive oil + 5 ml of wine vinegar + a pinch of salt + black pepper.

Caprese

Sauce: warm up in a separate container 1 tsp. balsamic vinegar and ½ tsp. Sahara.

Rub the chicken breast thoroughly with a mixture of salt and pepper, fry. Cut into slices. Add to it half an avocado (thin slices), 100 g mozzarella (slices), cherry tomatoes (cut 3 pieces into quarters). Add romano salad and basil as herbs. By the way, traditional caprese, which is one of the most popular restaurant salads, is made without chicken, but it will add nutritional value and will not spoil the taste at all.

Fruit salad

I found several recipes for such awesomely delicious salads that you can safely put on the New Year's table - if you decorate it festively and elegantly, and some of them do not need to be decorated.
But my task now is to choose exactly “mayonnaise-free” salad recipes, since I consider modern industrial mayonnaise to be an extremely harmful product. And if, for the sake of health, not many can refuse meat, then, I think, everyone who thinks at least a little about what he puts on his plate should give up mayonnaise ...

Then I will make a similar selection of salads without meat - with a focus on lighter meals. In the meantime, let them be at hand for the period of the holidays. After all, traditionally these days will be "critically exceeded" in terms of the amount of food consumed for one hour of free time! Let's exclude at least harmful store-bought mayonnaise from this inevitable chain of post- and pre-holiday culinary excesses ...

1. Awesomely delicious and simple salad without mayonnaise with chicken breast

Insanely TASTY, delicate and unusual salad WITHOUT MAYONNAISE. Any salad will decorate, including a festive table! These are tender egg pancakes, juicy chicken breast, fresh cucumber and zucchini, and a delicious salad dressing! A simple and quick cooking recipe.

I tell you how to cook. First things first, let's deal with the eggs. Traditionally, we cook hard-boiled eggs in such salads. This recipe is more original! Since all the components, as you can see in the picture, are cut into strips, we also need to cut the eggs in such an interesting way. To do this, take an egg, break it into a bowl. Lightly add some salt and beat with a fork or whisk.

Pour our egg mixture into a frying pan, heated and slightly oiled with vegetable oil, and lightly fry on both sides. Like a pancake.

We get 3 of these egg pancakes. When they have cooled down and become available for cutting, put them one on top of the other. First, we cut into wide strips, which we also put in a "pile" - and even then we can cut all this into the strips we need.

Chicken breast can be cut into small strips or disassembled into fibers. The main thing is to observe the general shape of the straw and make not very large pieces so that they are well saturated with our dressing (I remind you - we are making a salad without mayonnaise!)

Next, cut the remaining ingredients into the same size into strips. Zucchini too. I personally love them, but whoever does not really respect this vegetable - add cucumber instead of zucchini, and you will be happy. Although zucchini have a neutral taste, it becomes juicy and aromatic with our dressing. Even not all of them "recognize them by sight" after trying our salad!

By the way! Who else does not know - I share in a simple way, how to make bitter onions delicious ... Pour boiling water over the chopped onion and leave for 5-10 minutes. I also add a spoonful of vinegar. We drain the water and ... it turns out marinated, crispy, with a fresh onion, which is the best fit for our delicious salads.

Now we are preparing the gas station. Two tablespoons of vegetable oil and 2-3 tablespoons of soy sauce, plus crushed garlic cloves - mix in a separate cup, add salt and pepper to taste. You can also crumble the greens there. Lemon juice can be added. This is your taste preference.

We fill our delicious salad with this filling, mix it and can be laid out on portioned plates.

2. Recipe with photo - Spicy salad without mayonnaise with meat and beans (Tbilisi salad)

The Tbilisi bean salad is a great option for those who want to make a delicious salad without mayonnaise. The Tbilisi salad is spicy enough, but delicious! This colorful salad with beans and meat will decorate any festive table!

First, finely chop the onion in half rings and pickle it, as described above, in wine vinegar - to remove the bitterness.

We mix everything artistically with vegetable oil and spices, salt - to taste. The photo turned out a little dark, but the salad turns out to be very bright - both in appearance and taste!

3. Delicious Japanese Kyoto salad with light dressing (no mayonnaise)

This salad has a very fresh taste, thanks in large part to the interesting ingredients and the light pouring. The best salad that you can cook every day, or even for a holiday. Your guests will never guess what delicious light "noodles" are in this crispy salad without mayonnaise! But all this is thanks to the Japanese omelet TAMAGO and Chinese cabbage.

First, we cook the eggs, according to exactly the same principle as in our first recipe above. This method is called "Tamago omelette", it allows you to cut eggs into interesting noodles and, depending on the dressing, give them the desired taste.

Now we take Peking cabbage, separate the leaves one at a time and rinse well. Cut into strips.

Cut green onions and cucumbers into long strips.

Chili pepper, of course, is not for everybody's taste ... But it gives a peculiar aroma and pungent taste. If you really don't like spicy ones, replace it with red bell pepper. Before chopping the chili into strips, rub the pod between your palms. This way we can easily shake the seeds out of the pod.

We also cut the ham (can be replaced with any boiled meat) into strips.

We take the omelettes-pancakes from eggs prepared by us, roll them up and cut them into strips.

Now we make the dressing - take and mix 2 tablespoons of dark (dark oil is more aromatic than light), lemon juice and soy sauce. Yes, we also add a spoonful of sugar, so we remove the excess lemon acid, but this is for your taste.

In a large plate, mix the salad gently with two forks or chopsticks, getting an air slide. We take lightly fried sesame seeds (seeds) and sprinkle generously with our wonderful salad.

4. Delicious, but quite hearty salad without mayonnaise with beef liver

Very tasty, rather not a salad, but a cold appetizer, but rather "nasty" from the point of view of a healthy diet, although it formally falls under our today's criterion - "salad without mayonnaise". But the holidays are so good that you can forget about the benefits for a while and think a little about the taste 🙂 And the taste of this salad comes out great!

Put the pan on a small fire and begin to chop the onion in half rings. Fry the onion until half cooked.

Mushrooms can be boiled and then lightly fried with onions. You can take raw - then you will have to fry a little longer and separately from the onions. If these are champignons, wait until the moisture evaporates, and then fry for a while for taste. By the way, did you know that fresh mushrooms can be eaten even raw? I really like it, their taste is interesting, spicy. But not everyone can digest mushrooms raw, so for guests and for holidays it is better not to take risks and cook everything "according to the classics" - by heat treatment.

It is better to take the liver of beef, you can also boiled meat, probably, you can also take chicken - but the taste will be different. I boil the liver in hot salted water in small pieces. When it cools down, I cut it into thin strips. We also cut pickled cucumbers into strips. I take carrots ready-made from the store, you can cut them a little smaller.

For dressing, we take an incomplete tablespoon of vinegar, if you are not afraid of pungency - 2 cloves of garlic (do not forget that Korean carrots are already quite spicy and spicy, there is also garlic there) and vegetable oil. You can also add a spoonful of mustard tea - this will add an unusual flavor to our salad without mayonnaise!

Mix it all and pour it into our salad.

5. Light and beautiful salad without Harmony mayonnaise

This, I confess, is my favorite salad. It is, in general, similar to the well-known Greek salad.

Not only is it very tasty, but also looks very beautiful on the festive table - without requiring any special "decorations" in the form of mayonnaise and egg additives and sprinkles ...

Cut the tomatoes into medium slices.

Cut the onion into half rings. You can take raw onions, if very bitter, marinate for 5 minutes in vinegar and boiling water, as described above.

Carefully cut the cheese into cubes. With white cheese (Feta, for example), it seems to me that it turns out better.

Cut the greens not very finely, add the black pitted olives.

Add the dressing - lemon juice, salt to taste.

The salad looks very elegant and delicious! At the same time, it is light, crispy and very tasty.
