Bread is the head of everything! Especially the one made at home with your own hands. Of course, there is not enough time to bake bread at home, and there are a lot of worries with it. But as soon as you devote a few precious hours to baking, taste the finished crumb with a crispy crust, and immediately all matters fade into the background. You cook it once and you already promise yourself to bake bread almost every day.

Today we will not bother with the rules and canons of baking such an important dish in the diet, but will make a very simple bread from rye flour with kefir. Instead of yeast, we will use soda, which will reduce the cooking time. We will also take wheat flour (of course, it is better to take the first or second grade, but the highest grade is also possible), salt and sugar, as well as vegetable oil and sunflower seeds.

As a result, we will get tasty and aromatic rye bread made with kefir without yeast with a unique, slightly moist crumb. You can’t call it dietary, but it sure is nutritious and satisfying!

Let's start cooking!

In a bowl, combine room temperature kefir, salt, sugar and vegetable oil. Stir until smooth.

Add seeds pre-roasted in a dry frying pan to the liquid ingredients.

Combine rye flour with soda and mix.

And sift to the liquid components.

Using a spoon, start kneading the bread dough.

Now sift the wheat flour in parts. Its quantity will depend on the quality of all ingredients.

As soon as it becomes difficult to stir with a spoon, we switch to manual kneading.

Knead the dough for at least 5 minutes, adding wheat flour if necessary. As a result, the dough should not stick too much to your hands and walls, while remaining soft and very elastic.

We form bread of the desired size from the resulting dough. We place it on a baking sheet sprinkled with flour, and also sprinkle the product with flour, after which we make transverse cuts along the top. There is no need to sprinkle seeds on top, I did it for beauty. Bake the bread in the oven at 200 degrees for 30-45 minutes. Cooking time may vary depending on oven. You can check readiness with a knife.

Homemade rye bread with kefir is very aromatic and tasty! My household members finished this rather large loaf in half a day. But to prevent bread from turning into a big cracker when baking, you need to know some little tricks.

I experimented for a long time with the amount of wheat and rye flour, because at first I wanted to bake bread with rye flour alone. It turns out delicious, but such bread ends up with a very hard crust, and even keeping it under a damp towel does not soften it. Therefore, it is better to use wheat and rye flour equally when kneading. And I will tell you about other nuances in the process of describing the recipe.

To bake this bread you will need:

  • 2 tbsp. wheat flour;
  • 2 tbsp. rye flour;
  • 10 g salt;
  • 250 g kefir;
  • 250 g water;
  • 10 g sugar;
  • 1 teaspoon yeast;
  • 20 g butter;
  • 0.5 teaspoons of cumin;
  • 0.5 tsp coriander.

Prepare two bowls: a medium size and a larger one.
Pour kefir into a smaller bowl (you don’t need to heat it). Pour 150 ml of hot water into a glass (photo 1).


Combine kefir and water, stirring quickly with a whisk so that the kefir does not curdle (photo 2).

Place both flours, salt, cumin and coriander in a large bowl. If you are using yeast that needs to be combined directly with flour, then add that too (photo 3). In this case, mix the entire amount of water with kefir.

Stir well.

If you have yeast that must first be soaked, then dissolve the yeast in 100 g of warm water, adding sugar. After a few minutes, a foam cap will appear (photo 4).

Combine both liquids (photo 5).

Now start kneading the dough. Since different flours absorb different amounts of water, pour the kefir mixture in parts, combining it with the flour using a wooden spatula (photo 6-7).

You may have a little mixture left (like me) or, conversely, not enough - then add warm water. But your dough should not be tight, otherwise the bread will turn out “heavy” and may not bake. The dough will stick to your hands like melted plasticine. Knead it well and make a bun (photo 8). Rinse the dough off your hands thoroughly.

Pour vegetable oil over the bun and knead it until the oil is completely absorbed into the dough (photo 9-10). This is approximately 2-3 minutes.

Cover the dough with cling film and leave it to rise for one hour (Pic 11).

During this time, knead it once.

Knead the dough again, place on a baking sheet, greased and lined with baking paper. When the dough has risen again, carefully make cuts with a sharp knife (photo 12). Wait 15-20 minutes.

Heat the oven to 180°, sprinkle its walls with water and immediately bake the bread.

The bread will be baked in 40 minutes. To check the readiness of the bread, lift it by the edge and knock on the bottom - the sound should be dull (photo 13).

Wrap the hot, finished bread well in a towel, sprinkle with water and leave to cool. Unwrap it only after it has cooled completely! And only then can it be cut (photo 14).

Bread without yeast. How many people use it as food, replacing the usual baked goods? Yes, because they taste similar, and this option is also healthy. And making yeast-free bread with kefir in the oven is much easier.

So, if you can’t imagine any soup without bread, but at the same time you don’t want to gain weight, then give preference to the yeast-free option.

  1. Sift the flour into a deep bowl, preferably twice.
  2. After this, add all the bulk ingredients, with the exception of soda.
  3. Pour kefir into a tablespoon. The specified amount of soda is added to it. That is, the extinguishing process is carried out. After this, the contents of the tablespoon are added to a common bowl.
  4. Stir, pour in the remaining kefir.

  9. Cover it with cling film or a towel so that it can “rest” a little. Half an hour will be enough. During this time, you can preheat the oven at 220°C.
  10. After 30 minutes, the dough is kneaded again a couple of times, shaped into a “bun”, and two crosswise cuts are made on top.
  11. Place the future bread on a baking sheet, sprinkling a small amount of flour on top to give it a crispy crust.
  12. Place the dough in the oven for 50 minutes. The temperature is not reduced yet.

  • wheat flour - 100 grams;
  • salt and sugar, a teaspoon;

To prepare yeast-free bread with bran, the following ingredients will be useful:

  • flour - 400 grams;
  • bran - 400 grams;
  • low-fat kefir - 1.5 cups;
  • vegetable oil - half a glass;
  • salt and soda - half a teaspoon each.

Steps for kneading and baking bread:

  1. Pour kefir and butter into a deep bowl.
  2. Bulk ingredients are gradually added to the mixture of liquids, stirring constantly.
  3. Then knead the dough well with your hands.
  4. The oven should already be preheated.
  5. Place the formed bread on a baking sheet, sprinkling flour on top.
  6. Place in the oven for 40-50 minutes at a temperature of 200 °C.

Making unleavened cornbread involves several steps.

  1. All bulk ingredients are combined in one container.
  2. In another container, combine the liquids and the egg.
  3. Next, the liquids are poured into bulk liquids and first mixed with a spoon.
  4. Then the dough is dumped onto the table and kneaded by hand.
  5. Leave the dough to rest for 15-20 minutes.
  6. Preheat the oven to 200 degrees.
  7. The suitable dough is given the desired shape. Several cuts are made at the top.
  8. Transfer the still raw bread to a baking sheet, sprinkling the top with flour.
  9. Place the bread in the oven. The first 10 minutes are baked at 200 °C, and the remaining 20 at 180 °C. The baking time may need to be extended. This is the case if the bread inside is not thoroughly baked. Then it is sent back into the hot oven for another 15 minutes.

The prepared bread will be fragrant, with a crispy crust. If the crust turns out to be too stale, cover the bread with a damp towel for 15 minutes. This will make it softer.

To make rye bread you will need:

300 ml thick kefir;

150 g rye flour;

1 tbsp. l. Sahara;
1.5 tsp. salt;

325 g wheat flour;

2 tbsp. l. vegetable oil;

1.5 tsp. dry yeast.

Cooking steps

Pour kefir at room temperature and vegetable oil into the bread maker bucket, add sugar there.

Add salt and yeast. Set the baking mode to "Basic", weight - 750 grams, medium crust, baking time - 3 hours 10 minutes. If you knead by hand: dilute the yeast with sugar in 100 ml of warm water and leave for 15 minutes. Then combine the suitable yeast, 200 ml of kefir, salt and vegetable oil. Add sifted flour, knead soft dough and leave warm for 1.5 hours. When the dough has risen, knead it well, place in a baking dish and leave in a warm place for 1 hour. Then place the pan with the dough in a preheated oven and bake at 200 degrees until done.
