Ingredients:

  • 4 small potatoes
  • 1 chicken breast
  • 250 g champignons
  • 1/2 onion
  • 2 pcs. chicken eggs
  • cream cheese
  • vegetable oil
  • ground black pepper
  • So, first of all, we put the chicken breast to cook. Cook for 20-25 minutes, you should not overcook the meat, as it will still be baked in the oven.
  • Peel and finely chop the onion. We cut the mushrooms into slices.
  • In a small amount of vegetable oil, first simmer the onion, and then add the mushrooms.
  • Fry lightly, salt and pepper to taste. We don't overcook mushrooms either.
  • Remove the finished chicken breast from the water, let it cool. Cut the chicken into strips.
  • Combine chicken and mushrooms, fill with beaten egg.
  • Important!!! The egg mixture acts as the main connecting ingredient, it connects the filling and the potatoes, so this mixture should be sufficient. If the eggs are small, and you see that the egg mixture is not enough, add the third egg before.
  • If any potato is suitable for ordinary potatoes with chicken and mushrooms, then for our potatoes in the shape of roses you will need medium-sized oblong potatoes.
  • Peel the potatoes and then cut them into thin slices like potato chips. The thinner the plates are, the easier it will be to fold them into roses.
  • Yes, another important point, we also need a mold or muffin tins. Lubricate the form with vegetable oil. Do not forget to turn on the oven in advance.
  • Well, now the most interesting thing - we will form potato roses. To do this, put one or two potato circles on the bottom of the mold, after which we put potato plates with an overlap over the entire lateral surface of the mold (see video).
  • We distribute the filling over all potato blanks. Place a slice of cream cheese on top. From the remaining potato circles, close the top of the basket.
  • To make potato roses especially beautiful, you can paint them with melted butter, but this is not necessary.
  • Salt, and then put the baking sheet in the oven. We bake potato roses with chicken and mushrooms inside for 20-30 minutes at a temperature of 200 ° C.

Separate the whites from the yolks, send the yolks into the potato mass, add softened butter there, salt to taste.





Mix everything thoroughly, or beat with a kitchen machine.
You should get an airy potato mass, without lumps.

  • Honey mushrooms (or any forest mushrooms, champignons, oyster mushrooms) - 100 g

  • Turkey (boiled) - 100 g

Peel and boil potatoes in salted water. Drain the water, remove the lid from the pan and let stand for 5 minutes for steam to escape and the potatoes to dry

While the potatoes are boiling, prepare the filling - fry the finely chopped onion and mushrooms in butter (I have frozen mushrooms) for about 5 minutes. My mushrooms are small, I left them whole, but if you have large mushrooms, they should be finely chopped

As soon as the mushrooms start juicing, add the turkey fillet, cut into small cubes. Season with salt, pepper and fry until mushrooms are cooked - about 10 minutes.

Add grated parmesan, yolks, butter, garlic powder and nutmeg to the potatoes. Thoroughly grind the potatoes with a crush and, if necessary, rub through a sieve. Under no circumstances beat the puree with a blender - it will be rubber!

Transfer the mashed potatoes to a pastry bag with an asterisk attachment and plant round bases with a diameter of 7 cm.I got 15 servings of such potatoes

  • one chicken breast;
  • mushrooms - 250 grams;
  • one small onion;

Potato roses. Step by step recipe

  1. For the filling: boil one chicken breast in salted water until the meat is fully cooked (I took a small breast, during boiling I added a bay leaf to the water). It takes me about 20-25 minutes in time, it all depends on the size of the breast.
  2. Cut the champignons into plates (you should not cut the mushrooms very finely, because during baking they will lose their taste)
  3. Peel the onion and cut into small squares (if you have a large onion, half will be enough).
  4. Put a frying pan with vegetable oil on the stove. When the pan is well heated, put the chopped onion in it and fry a little.
  5. And then put the prepared mushrooms in a pan with the onions, add salt, black ground pepper and fry.
  6. Cool the boiled chicken meat and cut into strips.
  7. Shake chicken eggs with a fork: or you can use a whisk.
  8. Combine meat with fried mushrooms in one container, pour in beaten eggs. Mix well.
  9. Wash the potatoes, peel them and cut them into rings (it is best to use long potatoes for this dish).
  10. To bake potato roses, we need a muffin pan.

And we begin to collect each rose in the following sequence: put a ring of potatoes in the cupcake molds on the bottom, then put the potatoes inside along the entire mold (overlapping a ring on a ring), put the prepared filling in the middle of each rose and put a piece of cream cheese on top of the filling, covering it with potato rings. Let's cook potatoes on the basis that about 3 roses will be obtained from each medium tuber. When cooking, you can add a clove of garlic and bay leaf to the water.

Grind the mashed potatoes very carefully so that there is not a single lump (otherwise they will get stuck in the nozzle of the pastry syringe when squeezed out). Salt.

Add grated cheese to the hot potatoes so that it has time to melt, at the rate of 1 tablespoon for each potato. Mix quickly. Add the egg yolk. We check again that there are no lumps in the puree.

Method 1. Using a flat nozzle

We fill the pastry bag. Since the puree is hot, you have to put on a mitten on the hand holding the bag.

We need 2 nozzles: round - for the core of the rose and oval flattened at one end - for the petals.

Place the cone-core on a small square of parchment paper with a round nozzle.

Then we take a pastry bag with a flattened nozzle. Thickened edge down. We make a revolution around the top edge of the cone. The next turn is a little lower.

We continue to squeeze out the rose petals, changing the angle of the nozzle. The result should be a whole rose.

Method 2. Using a star attachment

You can make stylized roses.

For this we will use an asterisk attachment.
