Buns, which any housewife can prepare with little culinary skills, have always been a wonderful addition to home tea, and any everyday tomorrow or lunch, decorated with their help, easily turns into a real holiday.

Delicious homemade buns are a unique level of skill for any housewife, because, to be honest, at first they don’t always turn out exactly as airy and fragrant as we imagine them to be.

Let's start our experiments with quick recipes, they are simpler than others and do not require a large number of ingredients, which means that even a completely inexperienced housewife can cope with them.

Sometimes it happens that there is a little left at home or, you don’t want to finish drinking it, but it’s a pity to throw it away, and it’s not necessary, because with their help you can cook delicious pastries. So what we need:

  • yogurt – 300 g;
  • flour – 350 g;
  • sugar – 30 g;
  • baking powder - 2 teaspoons;
  • salt - a pinch.
  • vegetable oil– 1 tbsp. spoon;

Sift the fly, mix with baking powder, salt and sugar. Mix the yogurt and butter separately, and begin to add the previously prepared flour in parts, constantly stirring the dough. After the dough has been kneaded, it must be placed on a flat surface, previously sprinkled with flour. We divide the entire piece into 8-10 equal pieces, from which we form buns.

Prepare a baking sheet, cover it with parchment, and place the prepared buns on top; you can first roll them in sugar. The buns must be baked in an oven preheated to 220° for 25 minutes until they are browned.

You can easily add vanilla or dried fruits to these buns for flavor, and if you want them not to be sweet, for example, as a base for hamburgers, you can use seeds and herbs, such as poppy seeds or sesame.

And if such buns are also decorated with some kind of filling, then the result is absolutely perfect: baked goods with cinnamon or poppy seeds, sugar or sesame seeds, jam or raisins, you will lick your fingers! For the test:

  • milk – 150 ml;
  • flour – 320-350 g;
  • sugar – 80 g;
  • egg – 1 pc.;
  • ground cardamom – 1 teaspoon;
  • butter – 70 g;
  • dry yeast – 5 g;
  • a pinch of salt.

For filling:

  • sugar – 1 tbsp. spoon.
  • cinnamon – 0.5 tbsp. spoons;
  • butter– 60 g;

In a separate dry container, break the egg; to knead the dough you will only need half, the rest can be poured into a small bowl for further greasing the buns. The yeast must be diluted in advance; for this you will need three tablespoons of warm milk.

Leave the yeast in it for 10 minutes, you need to wait for the whole mixture to increase slightly in volume. For a softer effect, don’t forget to melt the butter. steam bath, then pour the dissolved yeast into it, pour in all the remaining milk, sugar, lightly beaten half an egg, ground cardamom, salt.

  • butter – 80-100 g;

First, let's make the dough: the milk needs to be warmed up a little, but not brought to a boil. Then add half of all the prepared flour to the total mass, continue stirring so that all the formed lumps disperse.

Set all contents aside for 40 minutes. In a separate container, mix lightly beaten eggs and sugar. The butter must be melted in advance, cool slightly and then combined with the beaten egg mass.

Now you can combine it with the milk dough that was set aside earlier (it should already begin to bubble), then gradually add all the flour and continue kneading the dough. When finished, remove the bowl with it for 90 minutes to rise.

Let's start with the filling: grind the cottage cheese with the egg, add regular and vanilla sugar, continue grinding until a homogeneous mass is formed. At the end, add raisins, put the filling in the refrigerator for half an hour. Then we return to the dough: it must be kneaded and divided into 25 pieces.

We unfold each piece in the form of a flat cake, put a little filling in the middle, and then bend the edges back, in the form of a donut. Place the buns on a baking sheet, wait 20 minutes for them to rise further, then brush them with beaten yolk and bake in an oven preheated at 180° for 30 minutes.

  • 1 cup of sugar
  • zest of 1 lemon or orange

  • vanillin - to taste
  • salt - 1 pinch

For filling:

  • fresh apples - 2-3 pcs.
  • granulated sugar - 5 tbsp.
  • citric acid - 1 pinch
  • water - 2 tbsp.



How to cook

Let's start kneading the dough. Take a small bowl, pour dry yeast into it, one tablespoon granulated sugar, taken from the total amount and the same amount of flour.

Many housewives prefer to use dry yeast - it’s more convenient, you can always keep it on hand at home. However, if possible, for baking sweet baked goods, purchase wet fresh yeast. They rise better, make baked goods more airy, and give them a special subtle aroma.





Pour in half a glass of warm milk. Mix well, cover with a cotton kitchen towel and place in a warm place to activate the yeast.

Attention!

There should be no drafts or temperature changes in the place where the dough is suitable. Otherwise, yeast fermentation will be interrupted or slowed down, and the dough will turn out heavy and tough. The dough works well if you cover it with a towel and place it in a container with warm (+35-38 degrees) water. At high temperature the yeast dies.





While the dough is rising (about 20-30 minutes), take another bowl. Break the egg into it and add the remaining sugar. And beat everything well with a whisk.

Even if you have a big sweet tooth, do not over-sweet the dough. Excess sugar will make it more sour, heavier, rise less well and not be as airy and tasty.





Pour in the rest warm milk, vegetable oil and melted butter.



In another bowl, mix dry ingredients, sift wheat flour, salt, vanillin.

The perfect baking dough will only work if you use flour good quality, premium, dry, carefully sifted.





At this point, the dough has risen well, the yeast has formed a beautiful, fluffy cap. Pour the prepared dough into the flour mixture.



Then pour in the egg mixture.



Knead thick but tender and soft dough. Cover the bowl with the dough with a cotton towel and leave to rise in a warm place. It will take approximately 1.5-2 hours to rise; during this time, the dough must be kneaded at least once.



While the dough is rising, let's make the filling. Peel the apples, remove the core and cut into small cubes.



Place them in a frying pan or saucepan with a thick bottom, add sugar, citric acid and water. Place on the stove and simmer over low heat, stirring the apples from time to time to prevent them from burning.



The apples should simmer until softened, but not until caramelized. Ready apple filling let cool.

As a filling for buns you can use thick apple jam or jam. Moreover, jam can be made not only from apples, but also from other fruits or berries.





The finished dough should at least double in size.



Divide the dough into three equal parts, roll each of these parts into round cake 0.5 cm thick. Then cut the cake into equal 4 parts.



We get some kind of triangles, we make beautiful cuts in them on the sides.



Place the cooled apple filling in the middle of each triangle.



Cover the filling first with one end of the triangle, then with the other. We do the same with the rest of the dough and filling.



Cover the baking sheet parchment paper, lay out the prepared products at a distance of 2 cm from each other. Cover the baking sheet with the buns with a towel and let them increase in size a little. The towel will prevent the surface of the buns from drying out and cracking.



Bake in an oven preheated to 200 degrees for 20 minutes. The buns should turn out golden.

Check the readiness of the baked goods with a wooden toothpick or match. If you see that they are not yet baked inside, but the top is already well browned, turn off the top heat, or cover the buns with parchment paper and continue baking for some more time. Thanks to the paper, the products will not burn on top.
