How to choose the right products

The key to how to deliciously cook haddock with potatoes in the oven is the quality of the products used.

  • When choosing fresh fish, pay attention to the eyes is an indicator of its freshness. The eyes of the fish should be transparent and not cloudy. If the store has a fish cleaning service, I advise you to use it. Usually this is inexpensive, but there is less hassle and “dirty” work at home. You can take frozen haddock, but I try not to do this, since I always have doubts about its freshness and suitability, and, as you know, there is practically no chance to check this.
  • And here broccoli and asparagus You can just use fresh ones from the garden or market, or frozen ones from the supermarket. It’s good if you froze these vegetables yourself, you still have more confidence that they are suitable for use as food.
  • It is better to take oblong potatoes. Varieties that boil quickly are ideal.
  • As a spice, of course, in addition to salt and pepper, I like to add it to fish dishes dry marjoram and lemon basil.
  • Dry garlic You can replace one medium clove of fresh, finely chopped one.
  • Any bow will do: white, purple, and even green.
  • Mayonnaise can be replaced with sour cream. Although it is generally accepted that sour cream is inappropriate in tandem with fish, this does not apply to dishes cooked in the oven.

Step-by-step preparation

If you are using frozen vegetables or fish, you need to defrost them first. Just take the food out of the refrigerator in advance.

Preparing the fish

Always use a separate cutting board for cutting fish! This is important, since neglecting such hygiene measures can lead to serious health risks. Pour boiling water over the knife and scissors you use in the process or wash in the dishwasher. We need one medium sized fish. If you used uncut haddock for the dish, you need to prepare it before you begin the step-by-step cooking process.

Algorithm of actions

  1. Cut 2 rectangles of foil so that each is 8-10 cm longer than the fish itself. Put one aside for now, and place the other on a baking sheet and grease with 1 tsp. olive oil using a silicone brush. Salt, pepper and season each haddock steak to taste, then place it in the middle of the foil in the order in which they were originally, that is, so that it looks like a whole fish.
  2. Wash 200-300 g of broccoli, divide it into florets and place in a bowl. Add 1 tsp. olive oil, salt and pepper to taste and mix well with your hands. You can use gloves at this stage, or you can simply wash your hands with soap later. Place the broccoli on both sides of the fish. Pour the remaining juice over the fish itself.
  3. Pour 100-150 g of beans with less than half a teaspoon, add salt, pepper, mix and place in the same way as broccoli.
  4. Take one medium onion, remove the husks, wash and cut into large half rings. We separate the half rings from each other and arrange them among the already prepared vegetables and fish.
  5. Now we need 3-5 medium potatoes. We clean them, wash them and cut them into slices, as shown in the photo. It is this kind of cutting that is relevant for our recipe, because the fish cooks quickly, and in this case it is unlikely that the potatoes will remain raw inside. Place the chopped root vegetable in a bowl, season to taste with salt and pepper, then add 1/2 tsp. dry garlic and 1 tbsp. l. mayonnaise without top, mix the contents and add to other vegetables. Spread the remaining mayonnaise in a bowl over the surface of the fish.
  6. Water the haddock and assorted vegetables with 2-3 tsp. olive oil. We take a previously prepared piece of foil, cover our workpiece with it, and carefully seal all the edges. Using a toothpick, make 5-6 punctures on the surface of the foil. Preheat the oven to 200°, place a baking sheet with our future dish in it. Bake for 30-40 minutes. When taking out the finished dish, do not forget to take an oven mitt. Also, be careful when opening the foil to avoid getting burned by the hot steam.

Fish dishes create harmonious flavor combinations with lemon and lemon basil. You can place the haddock and assorted vegetables on a beautiful large diameter vessel, Place thinly sliced lemon rings or half rings around, sprinkle the dish with chopped fresh herbs on top and garnish with lemon basil sprigs. Haddock is a large fish with juicy white meat, belonging to the cod family. It is an excellent source of high-quality protein and a dietary product. The fat content of haddock meat is low, about 0.5%, so it can be used in almost any diet. The taste of this fish is not very bright, rather muted and soft, so it perfectly absorbs and highlights other tastes. It is prepared and served with various sauces and seasonings, with vegetables and fruits, herbs, wine, and cream.

In stores and markets you can find fresh, smoked and dried haddock, but most often it is sold frozen, pure or in an ice glaze. To preserve the shape of the fish, it is better to defrost it gradually, moving it from the freezer to the refrigerator several hours before cooking. One of the advantages of haddock is its thin skin, which does not need to be peeled and which, when fried, becomes crispy and very tasty. Haddock meat - elastic and dense - retains its quality under any processing method, from stewing to grilling, but it turns out to be the most tender and the most dietary when steamed.

Fried haddock Haddock can be fried in a variety of ways. The simplest one: wash the fish, dry it with paper napkins, cut into portions and fry in vegetable oil in a hot frying pan. The haddock will turn out delicious without any breading or additives, you just need to add salt. It is best to serve fried haddock with some kind of spicy sauce: soy, garlic, ginger, tomato, etc.

To ensure that the crust of the fish is crispy, the haddock is fried in potato starch or potato flour. It's very simple: wet fish is dipped in starch, the excess is shaken off and fried in a pan.

You can fry the fish in breadcrumbs or regular flour; in this case, in order for the breading to stick better, it is advisable to first dip the fish in a beaten egg. Sometimes whipped egg whites are used.

Another way of frying is in batter. The batter is made from flour, eggs and cream (milk) or from flour and beer. It is better to make the pieces small so that the fish has time to fry while the dough is browning.

Salad with haddock For the salad, simply boil the haddock in salted water and separate the meat from the bones. After that, all that remains is to cut it into small cubes and add to the salad.

Haddock salad options:

Lettuce, dill, parsley, cherry tomatoes, olive oil, lemon juice.
Boiled eggs, rice, canned corn, mayonnaise.
Carrots, cut into strips and grated on a coarse grater, fried in oil with onions, pickled cucumbers, mayonnaise mixed with sour cream.
Rice, fresh cucumbers, boiled carrots, green peas, mayonnaise.
Haddock cutlets If you managed to buy ready-made haddock mince, great; if not, you can make it yourself, it’s not difficult at all. It is easiest to prepare minced fillet - you just need to cut it into pieces and pass it through a meat grinder or grind it in a blender. If desired, add the onions immediately, although they can be diced and added to the minced meat later.

You can make minced meat not only from fillets, but also from fish carcasses. First remove all large bones and fins, and during the chopping process, carefully ensure that the small bones are well ground.

Soak white bread in milk or cream, squeeze out, mix with minced meat, add salt and pepper, and you can make cutlets. Roll the finished cutlets in breadcrumbs or flour and fry in a frying pan in vegetable oil. Another option is to bake the cutlets in the oven, and you can top them with cream, sour cream, or a mixture of sour cream and tomato sauce (ketchup will also work).

Haddock baked in the oven And there are different options in this cooking method. You can simply bake the fish with lemon and herbs, wrap it in foil and add a few pieces of butter for softness.

Or you can cook haddock in the oven immediately with a side dish. Boiled rice or potatoes can serve as a side dish. Before baking, it is advisable to fry the haddock on both sides in a frying pan so that it forms a crispy crust.

Baking occurs in the following sequence: place a side dish (rice or sliced potatoes) on a greased baking sheet and place pieces of fish on top. You can add tomatoes cut into thin slices and sprinkle it all with grated cheese. Bake until golden brown.

Diet haddock stewed in cream with potatoes There is very little fat in this dish, mostly from the cream. Therefore, if you want to reduce the number of calories, take low-fat cream or milk.

Boil several potatoes in their skins and peel them. Cut into cubes or small slices. Cut the haddock fillet into small pieces. Bring the cream to a boil in a small saucepan and place the fish in it. Season with salt and pepper to your taste. Cook for 5-7 minutes, then add the potatoes and continue to simmer the dish over low heat under the lid for several minutes.

If desired, you can add onions fried in oil, chopped herbs and a piece of butter to the stewed haddock.

Haddock is a fish from which you can prepare a large number of different dishes, constantly surprising your family and friends with your culinary talents. It is grilled, baked in the oven, salads are prepared using fillets, and pates are prepared.

Haddock belongs to the cod family. It lives in the northern seas of the Atlantic and Arctic oceans. This fish can be found off the coast of North America, Europe, Iceland, as well as in the Barents and Norwegian Seas. Its favorite habitat is full-salt reservoirs.

In terms of catch volume, haddock is in 3rd place among all representatives of its species, immediately after cod and pollock. In the North and Barents Seas, on the shores of Nova Scotia and England, this fish is the most important fishery item. Despite the fact that it is listed in the Red Book, the annual catch is approximately 05.0.7 million tons.

Haddock is a very large fish, its average length is 70 cm, and its weight is 3 kg. But sometimes fishermen catch individuals that reach a length of 1 m and their weight is 17-19 kg!

The body of the haddock is slightly flattened laterally and tall. The color is silver, the belly is milky white, the sides are also light, but the back is dark gray with a lilac tint. A little below the back, along the entire body, the haddock has a black horizontal line, and near the head on each side there is a dark oval spot. It is this spot that is the main difference between fish of this species. By it, individuals recognize each other and gather in large flocks. This way of life allows them to notice seals, large fish and other predators earlier. Another difference between haddocks is that they have 3 dorsal and 2 anal fins.

In grocery stores, this fish is sold fresh, smoked and dried, but most are sold frozen. Haddock meat, white, not fatty, with a delicate taste, is a dietary product. It is compatible with hot spicy sauces, various vegetables and seasonings.

The appetizing appearance and beneficial properties of this fish, as well as the elasticity of the meat, are preserved after any cooking method. If you boil or steam haddock, its fillet will contain virtually no fat, which allows it to be included in the diet of those people who are on a diet. Even after frying, this product retains a mild taste; there is no need to peel off the skin; when fried, a pleasantly crispy crust forms on it. The beautiful golden hue of this fish can be achieved by using breadcrumbs when cooking. You can also make cutlets, pies, dumplings, pate, and salads from haddock. And if you salt it or smoke it, it will acquire a new, brighter and richer aroma.

Due to the fact that the meat of this fish, like other representatives of the cod species, is low-fat, it is excellent for dietary nutrition. Its main fat accumulates in the liver; it is often rendered out and used for medical needs.

Haddock is rich in proteins, selenium, vitamin B 12, it also includes sodium, potassium, pyridoxine, iron, bromine, zinc, fluorine, iodine, vitamins A and D.

This product is rich in amino acids necessary for the human body, and its fat contains omega-3 polyunsaturated fatty acids, that is, alpha-linolenic and eicosapentaenoic acids. These acids promote normal functioning of the eyes and brain, lower cholesterol levels in the blood, and help the body fight inflammatory processes. Haddock does not contain the insoluble protein elastin, which ensures its easy and rapid digestion by the gastrointestinal tract, compared to animal meat.

100 grams of this fish contains only 73 kcal. It is not recommended to eat it only for those people who have an individual intolerance.
