  • jam - 320 g
  • eggs - 4-5 pieces depending on size
  • sugar - 100-250 g to taste (100 g is enough for me)
  • Refined sunflower oil - 5 tbsp.
  • premium wheat flour - 200 g (a little more than 1.5 cups)*
  • soda - 1 tsp.
  • baking powder - 0.5 tsp. (can be replaced with 0.3 tsp soda)
  • salt - 0.5 tsp.
  • * 1 cup = 200 ml liquid = 125 g flour

Place the jam in a clean, dry bowl. Let me remind you once again that it must be homogeneous. If you have pieces of berries in it, it is better to remove them so that they do not burn and use one syrup. I have pear puree.
Add a teaspoon of baking soda to the jam and stir well with a spoon.
If you plan to use only soda, without baking powder, then add its entire volume at this stage - 1.3 tsp. I prefer to quench the jam with soda, and then use baking powder, mixing it with flour.

I left the jam for 5 minutes. This is the kind of hat I got! (You can stir again).

But while the jam was standing, I did not sit idly by. I broke the eggs into a separate bowl, added salt and beat them together.

Then, in a thin stream, without ceasing to beat, added sugar. And beat for 2-3 minutes.
For my taste, 100 grams of sugar is enough, because it is also present in the jam. But for me, reducing its volume in recipes is a common thing. If store-bought baked goods usually don’t seem cloying to you, add more, up to 250 grams to taste.

To this light fluffy egg mass I added jam that had reacted with soda. And then she poured in the purified sunflower oil.

Pour the dough into a mold greased with sunflower oil. I chose a rectangular one 18x24.5 cm (the area is equal to a round one with a diameter of 24 cm). But you can take a round one with d=22 or 26 cm - the biscuit will just be a little higher or lower.

Since I bake sponge cake with jam in the oven, I preheated it to 180 degrees and baked for 55 minutes. I checked the readiness with a wooden skewer - it was dry.
During baking, when the top was nicely browned, cover with foil. I did it in 40 minutes. But remember that you cannot open the oven door in the first 20 minutes, otherwise the biscuit will fall off!
