Hello friends. Do you know what's the hardest thing about frying chicken breast? This is to preserve the juiciness of the product. Believe me, this task is not easy to cope with. Again, about the frying pan - take a good thick-walled one. On a thin foil pan, nothing will happen during 2 minutes of frying. Moreover, there can be no talk of any crust or juiciness of the meat. Therefore, take a good thick-walled one.

How to cook properly

First, beat the meat so that there are equal pieces. To do this, place the breast on a plastic bag and cover it with another one on top. Then lightly pound the chicken with a wooden mallet. Just not too hard so as not to tear the bag.

This will soften the muscle fibers of the meat and make the breast much more tender. Tested many times in my kitchen :) 1 way:

Take a strong bag, put the meat there, pour in any marinade. Then tie the bag, leaving a little air so that the meat can roll around. Shake it lightly in different directions. This way your hands will be clean and the sauce will be well distributed over the surface of the meat. Instead of a bag, take a plastic container with a lid. Place all ingredients in a container and close the lid well. Shake the container in different directions, actively turning it over. And leave the chicken there to marinate for a while.

Pieces in mayonnaise

This is a win-win option for marinating. I cook not only chicken breasts this way, but also... It turns out very quickly and fragrantly.

Prepare:

  • 2 pcs. chicken breasts;
  • 3 tbsp. mayonnaise;
  • 0.5-1 tsp. garlic sauce (you can use Tabasco);
  • salt.

Cut the chicken meat into pieces the size of a walnut, although you can make them a little larger. Place all the pieces into the pan. Add sauce, mayonnaise and salt if necessary.

Mix the marinade well with the meat and leave the breast for 1-1.5 hours. If desired, this time can be increased, but it is better to place the chicken in the refrigerator.

Next, place the marinated chicken pieces in a frying pan with heated oil. And fry on both sides until done. As a result, you will get a juicy, tender breast, the aroma of which will fill your apartment in a matter of minutes.

With a crispy crust in batter

This recipe has an interesting breading. Believe me, the finished chicken will have a wonderful crispy crust and juicy meat inside.

Stock up:

  • 2 pcs. chicken breasts;
  • 14 pcs. salty thin crackers;
  • 50 grams of hard Parmesan cheese;
  • 1 egg;
  • salt (to taste);
  • 1 tbsp. lemon juice.

Cut the fillet lengthwise into 2 slices and beat slightly. Place it in a deep bowl, sprinkle with lemon juice and salt on both sides.

Grind the crackers in a food processor. Grate the cheese on a coarse grater and additionally cut it with a knife. It needs to be smaller. Mix the cheese mixture with the cracker crumbs. In a separate bowl, beat the egg with salt.

Now dip each piece of meat completely into the bowl with the egg. And then roll in cheese and cracker breading in a separate bowl. Place cracker coating on chicken fingers.

Fry in well-heated oil on both sides. You need more oil, just like when making batter. The cracker adds crunch to the breading, and the melted cheese adds softness and creaminess. Mmm... My mouth is already watering :)

With honey and mustard

Take 100 grams of honey, 50 grams of butter, 1-2 tsp. mustard seeds, 70 grams of tomato paste. Prepare 5 pieces for this amount of food. chicken breasts.

Cut the chicken on one side diagonally. Make cuts every 1.5 cm, but not very deep. Melt the butter in a water bath and add honey. Mix well. Then add tomato paste and mustard.

Now coat the chicken fillet with this marinade. Use only half - you will also need the rest, but later. 20 minutes is enough for the chicken to soak in the marinade.

Heat a frying pan and drizzle in a little oil. Place the marinated fillet on the surface of the frying pan and fry for 2-3 minutes on each side. Use the rest of the marinade as gravy. I also use honey for baking in the oven. I add another orange and it turns out amazingly delicious. Try it :)

With aromatic pear

For 1 breast you will need a green pear, 1 tsp. sugar or stevia, cinnamon, black pepper. Instead of black pepper, you can use a spice mixture. And, of course, salt will be needed.

Make small diagonal slits in the meat on one side. Then salt the chicken on both sides and sprinkle with spices to taste. Cut the pear into slices and insert into the slots of the breast. The fruit slices should not stick out too much from the slots. Fry on both sides. But on the side where the chicken is stuffed with pear, lightly press the breast with a spatula.

The aroma of pear will mix with meat juice and spices. It will be incredibly delicious! Yum-yum :)

With ginger and lemon

For 2 breasts you will need:

  • 1 tbsp. honey;
  • 1 tsp grated ginger root;
  • 1-2 tsp. lemon juice;
  • 4-5 cloves of garlic;
  • a small bunch of parsley or dill;
  • freshly ground black pepper + salt.

Cut the chicken lengthwise into 2 halves. Mix honey with ginger, lemon juice and finely chopped garlic. Add freshly ground pepper to taste and salt.

Chop the greens coarsely. It is only necessary for marinating. You will need to remove it before grilling, otherwise the greens will burn.

Marinate the chicken pieces in this mixture, leaving the meat for 30 minutes. Or you can put the chicken in the refrigerator for an hour. Then remove the greens from the chicken meat; they should not remain. And grill in a frying pan for 1.5-2 minutes on each side.

And remember that fried breasts can be stored in the refrigerator for no more than 2 days. However, I am sure that they will not linger with you - they will “evaporate” immediately after cooking :) And then your family will ask you to prepare something else delicious.

Peel the onion and chop finely. Heat vegetable oil and butter in a frying pan. Add onion, fry until light golden.

Stir and fry until all the liquid released has completely evaporated and the mushrooms are lightly browned. Salt and pepper.



Prepare the filling for the breast. Remove the mushrooms from the pan, add grated cheese to half the mushrooms and mix.

Cut off a small fillet from each breast, which is located on the underside. Then, using a small knife, make one longitudinal cut on the breast itself, but without cutting all the way through.



Next, make two deep side cuts, going deeper to the sides, and open the breast, creating a large pocket. Salt inside and outside.



Place a third of the filling inside and press it well.



Close the small fillet, pushing it inward on all sides.

Remove the strips from the kefir and roll in flour on all sides. Place on a hot frying pan with vegetable oil. Fry until browned on both sides, about 3-4 minutes on each side.



While the chicken is frying, peel 2 cloves of garlic and finely chop or crush them using a garlic press. Place the finished chicken fingers on a dish, mix with garlic, salt and pepper to taste. Chicken fillet – 600 gr
Lemon - 1 pc.
Walnuts – 50 gr
Paprika - 1 tsp.

Salt, pepper to taste
Flour - 2 tbsp. l.

Ingredients:
Chicken fillet – 350 g
Onion - 1 pc.
Refined sunflower oil – 25 ml
Dry white wine – 50 g

Fresh chili pepper - 1 pc.

Tomatoes - 2 pcs.
Salt - 3 g
Garlic - 1 clove

Preparation:

Ingredients:
Chicken fillet - 2 pcs.

Fresh orange juice - 3/4 cup
Dry white wine - 1/2 cup

Butter (chilled) - 4 tbsp. l.

How to cook chicken fillet with oranges

Cut each fillet into 2 parts, place between two layers of cling film and beat with a kitchen hammer. Salt and pepper. Dip each chicken cutlet in flour and fry in an oiled frying pan over medium heat for 6-8 minutes on each side. Transfer the cooked meat to a plate.


Pour juice, wine and mustard into the same pan. Boil for 5 minutes, then reduce heat.


Add butter, orange slices and add fried fillet to this mixture. Simmer chicken fillet in orange sauce for 1-2 minutes.

I suggest you diversify your usual table with Georgian chicken.
Any part of the chicken is suitable for preparing the dish, preferably without bones, or with bones. It is best to take a convenient frying pan or non-stick pan. Adjika can be used both dry and canned.


Ingredients:
Adjika - 2 tbsp. l.
Fresh cilantro - 0.5 bunch
Chicken fillet – 650 g
Onions - 2 pcs.
Sweet pepper - 1 pc.
Tomatoes – 600 g
Salt - 1 pinch
Garlic
Khmeli-suneli mixture - 1 tsp.
Refined sunflower oil - 4 tbsp. l.

How to cook chicken in Georgian style


Cut the onion into thin half rings.



Also cut the chicken into convenient pieces. Place chicken pieces, onions in a bowl, add adjika, 1/2 part of khmeli-suneli, 2 tablespoons of vegetable oil, salt to taste. If your adjika is not spicy, then sprinkle with red pepper.



Mix everything well with your hands and leave to marinate for at least 1 hour.



While the chicken fillet is marinating, cut the sweet pepper into squares, chop the garlic and cilantro.



Chop the tomatoes.



Heat the remaining vegetable oil in a saucepan and add the marinated chicken along with the onions. Fry everything until the chicken turns white.



Juice will form in the saucepan.



Add tomatoes and simmer everything together for 20-30 minutes.



Then add chopped sweet pepper, remaining suneli hops, chopped cilantro and garlic. Simmer for another 10 minutes. There should be juice left in the saucepan, and the chicken meat should easily fall apart when pressed.



You can serve aromatic Georgian chicken as a separate dish, with vegetables or any side dish.
