Vanilla pudding. Vanilla pudding: recipes

Pour the milk into a deep saucepan and add a vanilla pod there. Turn on low heat and bring the milk to a boil.

Separate the yolks from the whites, add salt, add sugar, and whisk until white. It is not necessary to completely dissolve the sugar.

Then add cornstarch and mix it in carefully and thoroughly.

When the first bubbles appear on the surface of the milk, remove it from the heat and add it into the yolk-sugar mixture in several steps.

Add the milk a little at a time, whisking very quickly so that the yolks do not curdle.

Remove the vanilla pod from the saucepan, return the milk mixture to it, and put it on the fire. At medium temperature, bring to the first bubbles, then reduce the heat and simmer for another 4-5 minutes. The mass should become thick, creamy and homogeneous.

Remove from heat, add small pieces of butter, and mix thoroughly.

Cool our mixture in an ice bath. To do this, pour cold water into a saucepan of a larger diameter, add ice cubes, lower the saucepan, and constantly stirring with a whisk, bring the mass to a temperature slightly below room temperature.

Place the cooled mixture into molds.

Cover the molds with film on top and place the pudding in the refrigerator for 3 hours to harden.

To remove the pudding from the silicone molds, separate the edges from the walls using a knife.

Then dip the mold into very hot water.

Turn the form with the pudding over onto a plate and with a slight movement remove it from the dessert.

Decorate the pudding with nut crumbs, fresh berries and whipped cream. Bon appetit!
