During the season, such a pie can be made from fresh berries, but since they are not available now, we will use frozen ones. After all, only your own hands can so carefully select the freshest, juiciest berries and lovingly knead the dough. Today I bake berry pie for my family and friends very often. This is a bright, beautiful and very tasty pastry. Recipe for berry pie with sour cream filling and delicate shortbread dough

1. Sift wheat flour into a deep bowl to get rid of unnecessary impurities and enrich it with oxygen. Add baking powder and soft butter to the flour, which has been left for at least an hour at room temperature.


2. Grind the flour and butter well with a fork until fine crumbs form.



4. After adding sour cream, mash the ingredients again with a fork until smooth.


5. Next, very quickly knead the dough into one whole. Gently flatten it flat, wrap it in cling film and put it in the refrigerator for 1 hour. This is the most delicate shortcrust pastry you can imagine!


6. While the dough is cooling in the refrigerator, you can prepare the berries for the filling. My berry pie includes blackcurrants, gooseberries, raspberries and cherries. Rinse the berries under running water and leave for a while to allow the excess liquid to dry. Remove the pits from the cherries. Place all the berries in one bowl.


7. Currants and gooseberries are very sour berries, so you will need more sugar than usual. Cover them with granulated sugar and starch. It should taste very sweet, but don't worry, the acid released from the berries will balance out the sweetness of the pie when baking.


8. Mix the berries thoroughly so that the sugar and starch are evenly distributed. Sugar will sweeten the berries with sourness, and starch will remove excess juice, which will be intensely released during baking of the pie.


9. After an hour, take the dough out of the refrigerator, place it on the work surface and very quickly roll it out into a layer of the same thickness to fit the size of the baking dish. Now let's get to the berries. They need to be sorted and washed. I took raspberries and apricots. My family loves this combination very much. My apricot is slightly sour, and my raspberry is sweet. Get a nice combination. After washing and pitting the apricots, I gave the berries time to dry, and only then cut them into slices.

It's time to prepare the filling. For it, pour all the ingredients into a bowl and mix thoroughly with a blender. If the sour cream is runny, add a little (1 tbsp) flour. The filling should have the consistency of thick sour cream. For taste, you can add vanilla or (who loves cinnamon).

After 45 minutes - 1 hour, and it should take us about that much time for the berries and filling, we take the dough out of the refrigerator and roll it out in a layer of 0.7-1 cm. Then put it in the mold. I greased the bottom with butter and sprinkled with flour, but it's better to line it with parchment.

Then carefully place the prepared raspberries and apricot slices on the dough.

Now it's time to fill. Pour it over our berries. The filling should cover the berries completely. If there are more of them, it is better to remove the extra ones (they will burn and will look ugly). Too few berries will not affect the cooking process.

Now put our pie in the oven for 15–20 minutes. We set the temperature to 220–2400.

I ended up with such a delicious and very aromatic pie.

I also decorated the top with the remaining raspberries.

Cooking tips:

  1. If the berries are frozen, you need to defrost them before placing them on the dough. Take a regular sieve or colander, place a plate underneath and let them melt at room temperature. The juice will make an excellent drink, and the berries will be in excellent condition. It is very undesirable to defrost in the microwave (the berries will turn out too soft and will spread).
  2. To make the pie, you can use berries from canned compotes. But they should be allowed to drain well before pouring.
  3. When using sour or thawed berries, it is better to keep them in thick syrup. Take 0.5 cups of sugar and dissolve in 1 cup of boiling water. Pour this syrup over the berries and let them stand for about 0.5 hours. Then the syrup must be strained using a colander. Now your pie will not have a strong sourness, just a little.
