Preparing dough for flatbreads. Flatbread in a frying pan

Hastily. Preparing them will not be difficult for an inexperienced cook, but an experienced housewife will consider the process a relaxation.

Flatbread can replace bread during lunch, or can be a separate dish. In Rus', people have long loved flatbreads with seasoning - our version of Italian pizza. Porridge, jam, pickles, boiled meat and fish, vegetables and fried mushrooms were used as baked goods. In this article we will talk about the dough and ways to improve the taste of flatbreads using oil, seeds and flour from different plants, and first we will learn how to make the simplest and most affordable - wheat flatbreads.

The dough for flatbreads can be purchased at the store, or you can make it yourself. Moreover, it can be made in advance and frozen until the appropriate time.

Making a simple dough

Quickly made flatbreads from unleavened unleavened dough are made from flour, water and salt. Place a mound of flour on the table and make a well at the top. It turned out like a volcano with a crater. Pour salt into this crater depression and pour in a little water. Gently mix the water into the flour, using a spoon to form a crater. Gradually stir in the flour from the sides of the crater. When the dough becomes so thick that the spoon will not turn, start kneading with your hands. The dough is considered ready when it stops sticking to your hands. Wrap it in plastic wrap and put it in the refrigerator for 25-30 minutes. This is necessary for it to stabilize.

Ingredients for the dough:

Wheat flour - 5-6 glasses;

Room temperature - 1 glass;

Salt - a pinch.

The number of ingredients is arbitrary. It also includes flour for rolling out the dough. Flour can vary in gluten content, so don’t be afraid to add more if necessary.

Roll out the rested dough into a sausage and divide into equal parts, one hundred grams each. Pour flour onto the table and roll out one piece with a rolling pin. The thinner the better. 2-3 millimeters is the most optimal for unleavened flatbreads. Using a template plate, cut out a round cake from the dough. To prevent the flatbread from puffing up too much during frying, pierce it all over the surface with a fork.

Quickly fry the flatbreads on a hot stove for 2-3 minutes on each side. Flatbreads made with peanut, mustard, walnut or grape seed oil are especially tasty.

Recipe with potato filling

You can quickly make double flatbreads with a thin layer. To do this, two identical pieces of dough are rolled into flat cakes. In the middle of one, moving 3 cm from the edge, place one tablespoon of filling in a thin layer. The edges of the cake are brushed with egg white. Another cake is placed on this cake and pressed while simultaneously smoothing out the voids. It is pressed especially carefully around the perimeter.

Potato filling:

Peel one onion, finely chop and fry in vegetable oil;

Peel 400-500 grams of raw potatoes, boil and mash;

Mix fried onions and potatoes, add salt to taste.

You can add spicy herbs to the filling - chopped dill, parsley or celery.

Kefir dough

You can whip up flatbreads with poppy seeds, sesame seeds, pumpkin seeds, sunflower seeds, cumin seeds and amaranth seeds.

Knead the dough from 4-5 glasses of wheat flour and one glass of kefir. Stir a pinch of salt and a tablespoon of seeds into the dough. Let the dough rest for half an hour. Now you can roll out and bake. Bake delicious flatbreads in a hurry, not necessarily in oil. It’s faster and easier to do this. Preheat the oven, place baking paper on a baking sheet, and a flatbread on it. Prick with a fork and bake for 10 minutes at 220 degrees.

Recipe with cheese

With kefir dough you can bake very tasty ones in a hurry. There are three options:

The first option, with kefir dough in the oven. Hard cheese is cut into cubes, with sides of approximately 1 cm, and carefully mixed into the dough. Bake as usual at 220 degrees for 10 minutes.

The second option, with cheese filling. Two identical flat cakes are rolled out. Hard cheese is grated on a coarse grater and placed in the middle of one flatbread, about a tablespoon. The edge of the flatbread is brushed with egg white. Another one is placed on top, pressed firmly and pierced with a fork. To make it more flat, roll it over the flatbread with a rolling pin. To avoid tearing the dough and squeezing out the cheese, do not press too hard on the rolling pin.

Third option, with cheese topping. Roll out the flatbread, pierce it with a fork and sprinkle grated cheese on top.

There is no need to salt the dough. Cheese will accomplish this task.

What to serve with and how to maintain a slim figure

The flatbreads are very tasty with warm milk. This is a good and filling dinner. Flatbreads are served with meat or fish broth. They are good with fresh vegetable salads. You can take the flatbreads with you on the road. Then it’s nice to wash them down with tea from a thermos.

You shouldn’t get too carried away with wheat cakes. This can have a bad effect on your figure. Therefore, the dough must be made not only from wheat flour, but also from buckwheat, rye, oatmeal, barley, amaranth or a mixture of them.

How to cook

We prepare the products. Heat the milk to a temperature of 30 degrees. Warm milk will improve the functioning of the yeast and help the dough rise and expand. Sift the flour several times so that it is enriched with air and the dough is elastic and fluffy. It is better to take dry yeast, since regular yeast is suitable for making dough and requires more time for cooking. All other products must be at room temperature. Pour the heated milk into a deep container.

Add sugar, salt and gradually stir until it dissolves. Sugar helps the yeast work and activates the fermentation process. But you don’t need to add a lot of it, since sugar will simply prevent the dough from rising and make it heavy.

Pour dry yeast into the milk-sugar mixture, add vegetable sunflower oil and chicken eggs. Many housewives are afraid to use dry yeast and prefer live yeast. Dry yeast is very unpretentious both in use and storage. They can even be added along with flour without dissolving in the liquid.

Now pour in the flour and, stirring constantly with a fork, let the dough set. Then we begin to knead with our hands for 10 minutes. The finished dough should be soft, light, and not stick to your hands. To make it easier to knead, its surface can be slightly greased with vegetable oil.

Cover the container in which the dough lies with a paper towel and leave in a warm place for half an hour. During this time it will increase in volume. After 30 minutes, grease the dough with oil, sprinkle with a little flour and knead again from the edge to the center. We leave it to approach again. It is important that at this time there are no drafts or open windows or doors in the room. Cold air will prevent the dough from rising.

In an hour, the dough for fluffy cakes will be twice as large in volume and will be ready to create a wide variety of delicious flour products.

Is the house out of bread? Is your family used to eating fresh bread for breakfast? But shouldn’t we run to the store now? There is the simplest option - make delicious water cakes from products that you probably have in your home. Plus, your flatbreads will be much healthier and tastier than regular store-bought bread. And believe me, your household will appreciate your creation.

In order to quickly prepare the dough for our flatbreads, you need the following basic components:

flour, water, vegetable oil, a little salt and sugar, soda (baking powder) - optional.

The simplest recipe

You need to mix flour (500 grams), water (1 tbsp.), salt - ½ teaspoon and baking powder (20 g) or soda - ½ teaspoon (for fluffy dough). Cover the finished dough with a napkin for 10 minutes.

Then cut the dough into several pieces, each of them needs to be rolled out into small flat cakes. Fry them on both sides in a greased frying pan.

Ready water cakes should be stored in a bag so that they remain fresh for a long time. Before eating, the flatbread can be topped with garlic dressing (grated garlic mixed with previously melted butter). They can be safely served with borscht.

Delicious flatbreads with cheese

In a small saucepan, bring 300 ml of water to a boil, pour the boiling water into a deep plate with flour (300 g). Knead the dough and let it rest for 15 minutes. As you can see, the recipe for water cakes is quite simple and accessible to every housewife.

Cut the finished dough into small pieces and then roll each into a thin layer with a diameter of 15 centimeters. Place a mound of grated cheese in the center of each layer (any hard cheese can be used). Roll up each layer and roll out carefully. And now the finished cakes can be fried in a frying pan greased with any vegetable oil.

Please note that instead of filling, you can put mashed potatoes with fried onions, salted cottage cheese, ready-made minced meat, etc.

Green flatbreads

To prepare flatbreads with water, you will need flour (225 g) and warm water (half a glass). For the filling - fresh green onions (quantity to your taste).

Prepare a soft dough from flour and water. Leave it for a few minutes.

Roll out a layer with a diameter of 40-45 cm. Grease it with any oil and scatter chopped green onions over the entire surface.

Now the resulting “sausage” needs to be divided into 5 parts and then each of them is rolled out into a small flat cake.

Fry all the flatbreads in a greased frying pan. And our flatbreads are ready!

Sweet cakes with honey

Do you want to please your kids with sweet cakes? Try it - and you will see, they will go away with a bang! Of course, like previous recipes, these water cakes are made using the same technology. So, we need two tbsp. flour, salt (a pinch is enough), lukewarm water (four tablespoons), honey (two tablespoons), 1 egg, sugar to taste. And, of course, any oil for frying.

Mix honey and salt in a deep plate, add water and egg. Mix and add flour to the resulting mass.

Cut the finished dough into pieces, and then roll each into a layer. Fry the resulting flat cakes in a frying pan with oil.

Sprinkle with sugar when serving.

Flatbread with mineral water

Mineral water flatbreads are prepared in the same way as regular ones. The difference is that instead of regular water, you can add carbonated mineral water to the dough. The dough turns out fluffy and airy. We recommend preparing flatbreads, maybe minced meat, mashed potatoes, mushrooms with vegetables, etc.

For the dough you need to take: mineral water (1 tbsp.), salt (teaspoon), sugar (2 teaspoons), vegetable oil. butter (2 tablespoons) and flour (2 tbsp.). Prepare dough from these ingredients.

Divide it into small pieces and then roll each into a small flat cake, grease with any oil and put any filling in the center. Pinch the edges and carefully roll out again into a small cake.

Fry the finished flatbreads in a hot frying pan.

Enjoy your meal!
