The recipes for this dish are varied, they can be complex or simple, allowing you to prepare the dish in a hurry, for a family dinner or the arrival of unexpected guests. The pies differ in the variants of dough and filling, which is why they turn out completely different from one another. Among this variety it is difficult not to find a dish to your taste.

Cooking features

The specifics of preparing salmon pie depend on the type of dough and filling. However, there are several points that are common. If they are not taken into account, the finished food may not live up to expectations.

  • To prepare salmon pie, you need fresh (unspoiled) fish. If it smells, you will only transfer the products.
  • Salmon for the filling can be stewed, boiled, or fried. In rare cases, it is placed raw. In any case, there should be no bones in the fish placed in the pie. Even if you bought fillet, it makes sense to make sure that there are no bones left in it.
  • The flour for the dough needs to be sifted. Thanks to this, it will be cleared of debris and saturated with oxygen, this will make the dough more tender and airy.
  • The pie should be baked at a low temperature, otherwise it will brown before it is baked inside. If the product is large and you are not sure that it will have time to bake, cover the browned pie with foil and bake until done. You can check readiness with a wooden toothpick. If it remains dry after dipping into the dough, the cake is ready.

It is better to serve salmon pie warm, but not scalding hot. If the baked goods have cooled down, you can reheat them. Fish pie is also eaten cold, but in its organoleptic qualities it is inferior to warm.

  • unsweetened yogurt or low-fat sour cream - 170 ml, including 150 ml for the dough, 20 ml for greasing the pie;

  • green onions – 50 g;

Cooking method:

  • Place the salmon in boiling water. For flavor, you can add onions and carrots and spices. Cook the fish for 20–30 minutes. Remove from water and cool. Using your hands, separate into small pieces, at the same time removing bones if they accidentally remain in the fish fillet.
  • Wash green onions, parsley, dill. Shake them off the water and dry them with a kitchen towel. Finely chop with a knife and mix with salmon.
  • Hard boil three chicken eggs. After peeling, cut into small cubes and add to the fish and herbs.

  • Break the remaining eggs into a separate container. Add a pinch of salt to them, beat with a whisk.

  • chicken egg – 2 pcs.;
  • wheat flour – 0.2 kg;
  • mayonnaise – 125 ml;
  • milk – 0.25 l;
  • soda – 3 g;
  • sugar – 5 g;
  • fresh salmon (fillet) – 0.4–0.5 kg;
  • onions – 100 g;
  • hard cheese – 70 g;
  • salt - to taste;
  • breadcrumbs - for sprinkling the mold;
  • butter – as much as needed (about 20–40 g);
  • nutmeg - a pinch;
  • ground black pepper - a pinch.

Cooking method:

  • Cut the salmon into fillets, removing skin and bones. Cut into small pieces.
  • Peel the onion and cut into thin half rings. Fry in melted butter.
  • Grind the cheese on a grater.
  • Sift the flour, mix with soda.
  • Break the eggs into a bowl, add sugar to them, beat with a mixer. The egg mixture should turn white.
  • Add mayonnaise and milk to the eggs. Continue whisking until the mixture reaches a smooth consistency.
  • Stir the sifted flour into the liquid dough base.
  • Grease a baking dish with butter and place two-thirds of the dough into it.
  • Place salmon pieces on the dough. To ensure that it is distributed evenly, the pieces are first laid out around the perimeter, then placed closer to the center.
  • Sprinkle the fish with nutmeg and pepper. Salt it lightly. You should not use a lot of salt, as the dough contains salty mayonnaise.
  • Place fried onions on the fish and sprinkle with cheese.

  • dry yeast – 7 g;
  • milk – 0.25 l;
  • wheat flour – 0.4 kg;
  • sugar – 5 g;
  • salt - to taste;
  • salmon fillet – 0.3 kg;
  • spinach – 0.2 kg;
  • sour cream – 60–80 ml;

Cooking method:

  • Heat the milk to 40 degrees, add sugar and yeast, stir. Wait 10–15 minutes. During this time, the yeast should “earn” and the milk will become foamy.
  • Add salt and sifted flour. Knead a stiff dough. Leave it for an hour in a warm place. Do not forget that yeast dough will not rise in the cold and that it is afraid of drafts.
  • While the dough is rising, prepare the filling. To do this, cut the salmon fillet into small pieces and fry in a frying pan in a small amount of oil for 15 minutes.
  • Wash the spinach and pour boiling water over it until it becomes soft.
  • Combine spinach with salmon, salt and pepper them, add sour cream and mix well.
  • Punch down the dough and divide into two unequal parts: one should be almost twice the size of the other.
  • Roll out most of it. The resulting layer of dough should be the same shape as the container in which you will bake the pie. The size of the layer should be sufficient to cover the bottom and sides of this container.
  • Place the rolled out dough into the mold. Place the filling on it and smooth it out with a spoon.
  • Roll out the remaining dough and cover the filling with it. Seal the edges of the bottom and top layers of dough. It’s better to do it curly, for example with a braid.   • wheat flour – 0.25 kg;
  • butter – 130 g;
  • chicken egg – 3 pcs.;
  • water – 50 ml;
  • cream – 0.2 l;
  • cheese – 180 g;

  • broccoli – 0.3 kg;

  • Dry yeast - 3.5 g.
  • Chicken egg - 1 pc.
  • Sugar - 2 tbsp. l.
  • Salt - 1 tsp.

Fish pie with salmon - preparation

  • Heat the milk to 30 degrees.
  • Remove from heat and add yeast, 1 tbsp. l. Sahara.
  • Add the remaining sugar, salt, butter, egg, flour and knead the dough.
  • Let it sit for two hours, during which time it will increase in volume by 3 times.
  • Get busy with the filling for now. Cut tomatoes into slices, peppers into rings, cheese into slices or slices.
  • Remove skin and bones from the fish and cut into 2.5 cm thick strips.
  • Line a baking tray with baking paper.
  • Start shaping the pie, because it should turn out very beautiful to decorate the table.
  • Roll out the dough into a circle approximately 0.5-0.6 centimeters thick.
  • Leave 1/2 inch from the edge and line the circle with sliced ​​trout strips. Leave the middle of the circle empty for now. Salt and pepper.

  • Cover with dough from the edge inwards and seal well. You should end up with a roller in a circle.

  • Cut the roller into pieces about 4 cm wide and turn each piece so that the fish is facing up.

  • Cut the remaining fish into pieces and place in the center of the pie.

  • Place tomatoes and bell peppers on top. Salt and pepper.

  • Place pieces of cheese on top. If desired, you can sprinkle with fresh or dried herbs.

  • Let the cake rest for 30-40 minutes. During this time, heat the oven to 180 degrees and place the pie in it for 20-25 minutes.
  • Remove the pie, brush with beaten egg and return to the oven for 20 minutes.

Pour the flour into a sieve in small portions and sift over a clean deep bowl. This must be done to ensure that the dough is soft and airy, and also to get rid of excess lumps.

Add the remaining cold water to the container with dissolved dry milk and mix with a tablespoon.
Then pour this liquid into a bowl with the egg mixture and beat with a mixer or whisk until smooth.
Pour the yeast mixture here and mix everything well again using a tablespoon.

We begin to pour the flour into the bowl in small portions, continuing to whisk with a whisk. When the mass becomes smooth and silky, pour vegetable oil into it, but do not stop stirring everything.

Immediately after the mixture begins to become thick, continue kneading the dough with clean hands. It should turn out dense and elastic. Give it a round shape, cover the bowl with a cloth towel and put it in a warm place to infuse. for 1–1.5 hours. During this time the dough should increase 2–3 times.

Well, for now let's prepare the filling.

Step 6: prepare the rice.


Pour the rice into a sieve and rinse several times under running water until the liquid becomes clear.

Then transfer the cereal to a medium saucepan. Fill it with regular cold water so that it 1.5–2 fingers cover the component. Place the container on low heat and wait for the liquid to begin to boil. As soon as this happens, reduce the heat and cover the pan with a lid. Cook the rice until the water has completely evaporated. Then turn off the burner, pour the component into a sieve and rinse again under running water. This must be done so that the cereal cools faster and does not stick together while we prepare other ingredients for the pie. Now we leave the component aside so that all excess liquid drains from it.

Step 7: Prepare the onions.


Using a knife, peel the onion and rinse under running water. Place the component on a cutting board and chop into squares. Place the finely chopped onion into a clean plate.

Then pour olive oil into the pan and place on medium heat. When the container with the contents is well warmed up, put the chopped onion into it. Stirring occasionally with a wooden spatula, fry the component until light golden brown. Immediately after this, turn off the burner and set the pan aside.

Step 8: prepare the salmon.


We rinse the salmon fillet under running water and place it on a cutting board. We dry it on all sides with kitchen paper towels. Now, using a knife, remove the skin from the back and chop the fish into pieces. Transfer the finely chopped component to a free plate.

Step 9: prepare the pie filling.


Place boiled rice, fried onions and chopped salmon in a medium bowl. Add salt and ground black pepper to taste and, using a tablespoon, mix everything thoroughly until smooth.

Step 10: prepare the salmon pie.


When the dough is ready, place it on the kitchen table, dusted with a small amount of flour. Use a knife to cut the ball into two unequal parts ( approximately 1/3 and 2/3). First, take the second piece of dough and use a rolling pin to roll it into a thin cake. Attention: We try to make it as round or square as possible, depending on the baking container.

Place a layer of dough into the mold and smooth out the edges with your hands so that they overlap the sides. Using a tablespoon, pour the filling here and smooth it out.
Now roll out the second part of the dough on the kitchen table, also giving it a round or square shape. Carefully cover the pie with a layer and pinch the edges.

We make a shallow cut in the center so that steam can escape during baking.

  1. I cut the fish into small pieces.
  2. I peel the onion, which I then chop into the same small pieces and mix with the salmon.
  3. I roll everything in spices.
  4. I take cheese, which I chop into cubes using the same method - all for the fish.
  5. I send a bunch of onions, chopped into rings and washed, to the fish.
  1. I divide the dough into two approximately equal parts, one of which I immediately roll out into a fairly thin layer.
  2. I grease a special baking dish with oil, where I place this layer.

  8. Beat eggs and sugar until fluffy.
  9. Add sour cream to the egg mixture and continue stirring.
  10. I mix wheat flour with baking powder, add it and finally knead the dough.
  11. I add salmon to the liquid base and stir.
  12. I coat the baking dish with oil and put exactly half of the mixture with fish into it.
  13. The next layer will be broccoli.
  14. I “cover” the filling with the rest of the dough and bake the pie for up to 40 minutes at 180°C.

Nourishing recipe: pie with juicy salmon and spinach

For this baking I will need:

300 g of good fish; 1.5 one cups of wheat flour; 100 g butter; 5 pieces of chicken eggs; 2 tablespoons of sour cream with a fat content of your choice; one glass of cream; half a glass of selected milk; 200 g semi-hard cheese; nutmeg to taste; 70 g fresh spinach; butter, a piece is enough.

Pie with salmon, recipe with photo:

  1. I sift the wheat flour through a sieve and divide the butter into cubes.
  2. I mix these two ingredients and grind them well. This can be done entirely by hand.
  3. I beat 2 eggs with sour cream, add them to the flour and eventually knead a soft, elastic dough that should not stick to your hands.
  4. I roll it into a ball, cover it with a towel or wrap it in cling film. I leave it for half an hour in a warm, wind-free place.
  5. I break the remaining eggs into milk and cream and beat everything with a whisk or fork. You can use a mixer.
  6. I divide the cheese into two parts, one of which is rubbed on the fine side of the grater.
  7. I throw the grated mixture into the liquid mixture, where I sprinkle the nuts. I mix everything thoroughly.
  8. I roll out the dough into a circle with a rolling pin. The size should be larger than the baking dish, which I pre-grease with oil.
  9. I put the dough in the mold and cut off the excess.
  10. I cut the washed spinach into strips and spread them evenly over the dough.
  11. I pour the filling on top.
  12. I cut good and clean salmon without bones and skin into small pieces - the next layer.
  13. I grate the remaining cheese on top.
  14. I bake the pie at 180 degrees for up to 40 minutes.
