Ingredients:

For the test:

  • Sour cream – 200 gr.
  • Flour – 2.5 tbsp.
  • Water – 100 gr.
  • Sugar – 1 tsp.
  • Salt – a pinch.
  • Baking powder – 1 tsp.
  • Little vegetable - 2-3 tbsp. l.

For filling:

  • Vegetable oil - for frying.
  • Potatoes – 3 pcs.
  • Carrots – 1 pc.
  • Cabbage – 200 gr.
  • Onion – 1-2 pcs.
  • Salt - to taste

  • Sour cream – 1 tbsp. l.

Cooking process:

  1. Peel the onion and chop finely.
  2. Chop the cabbage thinly and grate the carrots on a coarse grater.
  3. Heat a couple of tablespoons of vegetable oil in a frying pan, fry the onion in it until it browns a little.
  4. Add cabbage and carrots to the onions, fry everything together for a couple of minutes.
  5. During this time, cut the peeled potatoes: you need to chop them very finely, or you can grate them on a coarse grater.
  6. Add the potatoes to the rest of the vegetables, fry a little, stirring, and then simmer everything together under the lid for about 5 minutes. If there is not enough liquid from the vegetables, add a couple of tablespoons of water to help the vegetables stew better and not burn.
  7. After 5 minutes, turn off the heat, add salt to the filling and add spices to taste.
  8. Allow the filling to cool while you prepare the pie dough in a large bowl. Add oil, water, salt, sugar and sour cream, stir well.
  9. Add baking powder (or baking soda), as well as flour. The specified amount of flour should be enough to knead soft shortbread dough in a bowl. And in order to place the dough on the table, add another half a glass of flour or a little more. But don't overdo it, otherwise the dough will be too tight, which you don't want.
  10. Knead the dough on the table for a few more minutes; it will be soft, like yeast dough. To prevent it from sticking to your hands, grease your hands with vegetable oil.
  11. Leave the dough on the counter for a quarter of an hour or 20 minutes, covered with a kitchen towel. And then divide it into 2 parts.
  12. You can lightly grease the baking dish with oil. Spread some of the dough over the mold.
  13. Place the already cooled filling on it.
  14. Cover the filling well with the second part of the dough, tucking the edges in and pinching them tightly.
  15. Make a small hole in the center of the cake to allow steam to escape.
  16. Brush the top of the pie with a small amount of sour cream, and then place in a preheated oven at 180 degrees (if your mold is ceramic or glass, then place the pie in a cold oven).
  17. The pie can be baked for the first 30 minutes under foil to prevent it from burning, and then baked for another 20-30 minutes without it until fully cooked.
  18. To make the cake shiny, grease it with butter while hot.
  19. Let the cake cool slightly in the pan, then remove and serve.

Bon appetit!

Do you want to please yourself and your loved ones with something delicious? Then prepare an open cabbage pie. Such pastries differ from ordinary pies in that the filling is not “hidden” under a layer of dough, but is on top. Open pies look attractive, so they look great on the holiday table.

When making a traditional pie, the filling is baked between two layers of dough. This allows you to maintain the juiciness of the products. But open pies can be no less tasty. To prevent the filling from drying out during baking, use a filling of eggs and cream (sour cream) or make a cheese crust by sprinkling the filling with grated cheese.

The base of an open cabbage pie can be made from different types of dough. Sometimes the base is pre-baked until half cooked, and only then the filling is laid out on it. This technique is used if the filling is very juicy and can “wet” the bottom of the pie.

The cabbage filling for an open pie is pre-prepared - stewed, fried or blanched. You can use sauerkraut, then the filling will have a piquant sourness.

Interesting facts: Many people mistakenly believe that sauerkraut is a Slavic invention. In fact, this harvesting method was invented in China. Sauerkraut was fed to the slaves who built the Great Wall of China.

Cabbage can be supplemented with other products, this will make the taste of the pie richer. In addition, if you add meat or fish as an addition, the dish will be more satisfying.
