COUNTRY PIZZA RECIPE

NECESSARY:

15 g fresh yeast
A pinch of sugar
400 g flour
250 ml warm water
3 tbsp. l. olive oil
1/2 tbsp. l. salt

Filling:
1 small zucchini
1 yellow pepper
125 g mushrooms
3 tbsp. l. olive oil
1/2 serving of tomato sauce or 400 g canned chopped tomatoes
1 tsp dried oregano
Handful of black olives
250 g mozzarella
Small basil leaves for decoration
Salt
Freshly ground black pepper

HOW TO COOK:

Dough:

1. Crumble the yeast into a cup, add water and sugar. Stir until the yeast dissolves, leave for 10 minutes before fermentation begins.

2. Add olive oil to the yeast.

3. Sift flour, salt into a mixer cup and, stirring, gradually add the mixture with yeast. Knead for 2 minutes until the dough forms a ball.

4. Cover with a damp towel and rise for 1 hour, or until the dough has doubled in size.

Pizza:

Filling: cut the zucchini into cubes, thinly slice the pepper. Finely chop the mushrooms.

2. Heat olive oil in a frying pan and fry the vegetables over high heat. Remove from heat when almost done. Vegetables and season to taste. Cool.

3. Preheat the oven to 200°C.

4. Knead the dough and quickly knead again with a mixer. Divide into two portions and roll each thinly into a circle.

5. Grease two baking sheets or pizza pans and place the dough on them. Make a slight thickening along the edges.

6. Spread tomato sauce or chopped tomatoes over the surface of the pizza.

Pizza Mia is an Italian cuisine establishment offering to deliver hot and flavorful pizza straight to your door. One of the most popular menu items is pie. It is also called rustic pizza. The dish is a closed pizza stuffed with aromatic garlic sauce, potatoes, cheese and pieces of smoked chicken. However, you can prepare exactly the same closed pizza with chicken yourself - “Village”. The recipe is simple, you can use it to make a pie to suit your individual taste - remove or replace some ingredients, add more or less. And the savings are obvious: for the money for which you order only one pizza, you can prepare as many as three!

For the test:

  • 250 ml milk;
  • a pack of dry yeast;
  • two tablespoons of sugar;
  • a teaspoon of salt;
  • 130 grams of butter;
  • 400 grams of premium flour.

For filling:

  • 300 grams of smoked chicken fillet;
  • 200 grams of fresh potatoes;
  • 200 grams of mozzarella cheese;
  • mayonnaise and garlic sauce.

Making pizza

First prepare the dough. It's pretty simple. We recommend not using store-bought semi-finished products. Homemade dough turns out tender, it is prepared from the freshest ingredients, and this is the key to the taste of rustic pizza, the recipe for which we offer in this article.

Making the dough:

  1. Heat half a glass of milk in a metal bowl.
  2. Add yeast, a spoonful of sugar, a spoonful of flour to the milk.
  3. Stir everything well, cover with plastic and leave to infuse for 15 minutes.
  1. Add melted butter, remaining sugar and salt to the dough. Stir.
  2. Sift the flour through a sieve, this will make the dough softer, and pour it into the dough. Knead an elastic dough, place it in a deep bowl, cover with plastic or a lid, and leave it to rise in a warm place for an hour.
  3. Check the dough every 10-15 minutes, you need to pat it down, lowering it back, twice within an hour, on the third rise you can start cooking.

We assemble a closed village pizza according to the “Pizza Mia” recipe:

  1. The potatoes need to be peeled, cut into thin slices and washed.
  2. Cut the chicken into cubes, or even smaller ones, and mix with garlic sauce.
  3. Roll out a thin sheet of dough that will completely cover the bottom of the baking dish. Lubricate this layer with mayonnaise.
  4. Place the potatoes in one layer, trying to leave no gaps between the circles.
  5. Spread pieces of chicken mixed with garlic sauce in an even layer on top of the potatoes.
  6. You can add more potatoes on top of the chicken or immediately sprinkle with a thick layer of mozzarella.
  7. Cover the pizza with a second thin layer of dough, sealing the edges so that the filling does not leak out. Spread the surface of the pie with a thin layer of mayonnaise.
  8. You need to bake for 20-25 minutes at 180 degrees.

Thanks to mayonnaise, the inside of the potatoes will bake quickly and there will be no raw pieces left. The mayonnaise on the top layer gives a nice crispy crust!

Country pizza "Appetizing"

Another interesting recipe for country-style pizza with chicken. In this case, there is no need to cover the top of the pizza; other ingredients will create a beautiful, appetizing and incredibly crispy top crust.

For preparation you will need:

  • dough - 250 grams, can be prepared according to the previous pizza recipe;
  • two ripe tomatoes;
  • mayonnaise;
  • 200 grams of chicken fillet (smoked);
  • 100 grams of any hard cheese;
  • 4 chicken eggs;
  • greens: parsley, dill, green onions.

Making "Appetizing" Pizza

We prepare the dough according to the same recipe as presented above. From the described ingredients you will get about one and a half kilograms of pizza dough. The number of components for preparing the recipe for the rustic pizza "Appetizing" is presented based on a baking sheet measuring 40 by 30 centimeters.

Preparation:

  1. First you need to prepare a baking sheet. Grease the bottom and sides with a small amount of sunflower oil so that the finished pizza can be easily separated.
  2. Roll out the dough; it should be thinner than for the pie. A thin pizza crust is one of the most important nuances.
  3. Place the dough on the baking sheet so that the edges extend slightly onto the sides, about a centimeter. Lubricate the layer with mayonnaise.
  4. Cut the tomatoes into rings, then divide them in half and place them in one layer close to each other over the dough.
  5. The chicken should be cut into strips and placed in a thick layer on top of the tomatoes.
  6. Break the eggs into a separate bowl, grate the cheese, finely chop the herbs and mix everything with a whisk.
  7. Pour the resulting egg and cheese mixture over the top of the pizza.
  8. Bake at 180 degrees until golden brown.

Pizza "Bavarian" country style

The recipe for this rustic pizza is slightly different from the preparation of everyone’s favorite classic “Bavarian”. Here you can safely replace mozzarella with any hard cheese, ham with smoked or boiled sausage or cervelat, and use herbs to taste. The main highlight of the dish is the combination of fresh tomatoes and pickled cucumbers!

Ingredients:

  • dough;
  • 200 grams of ham or cervelat / smoked sausage (you can use a mixture of smoked and boiled sausages);
  • two large ripe tomatoes;
  • about one hundred grams of pickled cucumbers, more if you like more sour dishes;
  • a tablespoon of mayonnaise;
  • two tablespoons of regular tomato ketchup (not “Shashlik”, not “Lecho” and so on);
  • one bell pepper;
  • fresh herbs: parsley and dill;
  • 150-200 grams of hard cheese.

Making "Bavarian" village pizza

The recipe for rustic pizza is simple to the point of primitiveness; you just need to follow the order of placing the ingredients on the dough to make the dish juicy. Cooking steps:

  1. Roll out a thin layer of dough and place it on a pre-greased baking sheet.
  2. Mix two spoons of ketchup with a spoon of mayonnaise and spread the dough in an even layer.
  3. Cut the tomatoes into half rings and place on the sauce in one layer.
  4. Cucumbers, if they are gherkins, need to be cut into rings. If the cucumbers are large, then divide the rings into four parts. Place evenly on top of the tomatoes.
  5. Next, you need to finely chop the bell pepper and sprinkle it on the future pizza.
  6. Chop the sausage into strips and place on top.
  7. Chop the herbs, grate the cheese, mix, then place on top of the sausage.
  8. Roll out the second layer of dough thinly. Carefully place on top of the cheese, connect the edges of the bottom and top layers, and pinch.
  9. Bake until the dough is ready at 180 degrees.

Pizza with wild mushrooms

Of course, such a pizza can be made with champignons, but the taste will not be the same. Chanterelles, honey mushrooms, boletus mushrooms, milk mushrooms, trumpet mushrooms, i.e., any gifts of the forest, except butter mushrooms, are suitable. You can make this pizza during the mushroom season, or in winter from mushrooms stored in the freezer.

What you will need:

  • dough;
  • half a kilogram of mushrooms;
  • 300 grams of hard cheese;
  • 200 grams of sour cream;
  • three chicken eggs;
  • 3-5 cloves of garlic;
  • a little salt and ground black pepper;
  • small onion.

Cooking mushroom pizza

The procedure is quite simple:

  1. The mushrooms must first be boiled in unsalted water for 3-5 minutes after boiling. Drain the water, rinse the mushrooms and cool.
  2. Next, you need to cut them into small pieces, the onion into half rings, and press the garlic through a press. Mix everything and fry in sunflower oil. Season the prepared mushrooms with just a little salt and pepper; it is worth remembering that the cheese that will be added to the pizza is already salted.
  3. Cool the mushrooms, mix with half the sour cream.
  4. Boil the eggs, grate them on a fine grater, mix with the second part of the sour cream, and add a little salt.
  5. Roll out the dough and place on a baking sheet.
  6. Grate the cheese and place half of it on the dough. Place half of the mushrooms in an even layer on top, followed by a layer of eggs, the other half of the mushrooms, and the other half of the cheese.
  7. Roll out the second layer of dough, close the pizza, pinch and bake in the oven until golden brown.
  8. The top crust of the finished pizza should be greased with butter and covered with plastic wrap for 3 minutes - this will make the crust even browner and softer!

I came across this recipe once on a popular social network under exactly that name. I was wondering what kind of rustic pizza this was, so I decided to try it. It turned out that the resulting dish was more likely not even pizza, but a hearty and tasty pie, vaguely reminiscent of pizza, but rich, varied and very unusual in a rustic way.

Ingredients

  • Water or low-fat kefir – 250 ml.
  • Egg – 1 pc.
  • Fresh yeast – 30 gr.
  • Salt – 0.5 tsp.
  • Sugar – 1 tbsp.
  • Melted butter – 50 gr.
  • Flour – about 400 gr.
  • Semolina – 2 tbsp.
  • Homemade cottage cheese – 200 gr.
  • Hard cheese – 100 gr.
  • Chicken fillet – 1 pc.
  • Mushrooms (mine are champignons) – 3-4 pcs.
  • Salt, ground black pepper - to taste
  • Greens – 1 bunch

Preparation

  • Step 1

    Prepare the dough: dilute the yeast in warm water or kefir (I used half and half water with kefir), add salt, sugar, 2 tbsp. flour. Mix everything thoroughly and leave in a warm place for 15 minutes so that the yeast comes to life.

  • Step 2

    After the allotted time, a “cap” will appear on the surface of the dough, which means you can start kneading the dough.

  • Step 3

    Add egg and flour, melted butter to the dough, knead into a soft, pliable dough that should not stick to your hands.

  • Step 4

    Leave the finished dough for half an hour in a warm place - it should increase noticeably in volume.

  • Step 5

    While the dough is rising, you can start filling.

    Salt the cottage cheese to taste, add finely chopped herbs, mix.

  • Step 6

    Boil the chicken fillet until cooked.

  • Step 7

    Cut the mushrooms into thin slices (sorry, I didn’t take a photo of this moment - I confess).

    So, the dough is ready, knead it again, then roll it out on a floured surface and stretch it into a layer about 1 cm thick (it could be thinner; as it turned out, there was too much dough in the finished dish). Sprinkle the dough with a small amount of semolina on top, this is necessary so that the cake does not become soggy during baking from the juice secreted by the cottage cheese, and then evenly distribute the cottage cheese itself.

  • Step 8

    Spread the torn boiled chicken fillet evenly on top.

    On the fillet there are mushrooms cut into slices. If desired, you can salt them a little.

  • Step 9

    Place the pizza pie in an oven preheated to 180 degrees, bake until lightly browned, about 20 minutes. Then we take the dish out of the oven, generously sprinkle with grated cheese and return to the oven so that the cheese melts and the pizza itself is baked until done.

    Serve the dish hot.

  • Melted butter – 125 g,
  • Wheat flour – 350-400 g,

    For filling:
  • Cottage cheese – 250 g,
  • Semolina – 1 tbsp. spoon,
  • Dill and onion greens – 100 g,
  • Boiled chicken fillet – 200 g,
  • Hard cheese – 100 g,
  • Salt and ground black pepper - to taste.

The ingredients for the filling can be almost any, vegetables, fish and meat products. Only when in a village way, it does not imply sausage, in any of its manifestations.

In a glass of warm boiled milk, dilute sugar, flour and yeast in the following proportions: milk - 100 g, sugar - 1 tbsp. spoon, flour - 1 tbsp. spoon and packet of yeast. Leave in a warm place for 10 minutes.

Pour milk and dough into a deep bowl, add melted butter, sugar and salt. Stir and sift the flour over a bowl to knead into a soft dough. Cover the bowl with a warm towel and leave in a warm place for 1 hour, until the dough rises and increases in volume.


Divide the finished pizza dough into two equal parts. Roll each one individually into a round cake, about 1 cm thick. Place on a baking sheet, cover it with food paper and fill.


For the filling, chop the greens and mix with cottage cheese, add a little salt and pepper. Chop the boiled chicken fillet moderately finely and lay it out in a layer.

Distribute the grated cheese evenly, and to prevent the open edges of the dough from getting soggy, sprinkle with semolina.

Bake homemade rustic pizza in a preheated oven for 20-30 minutes, keeping the temperature at 200 degrees.

The peculiarities of village pizza are the abundance of ingredients and satiety. That’s why you don’t have to skimp on the filling and put whatever you want.

Italians are so sensitive to their national cuisine that they refuse to call most Italian dishes that are prepared outside of Italy Italian. Pizza is no exception!
