  • Cooking time – 30 minutes.

How to make sesame cookies:

Pour all the sesame seeds into a dry non-stick frying pan and fry over moderate (almost high) heat, stirring constantly, until golden brown. Immediately remove the pan from the stove and leave to cool (it will be even better if you pour the fried sesame seeds into a dry, cold plate).

Grind granulated sugar and vanilla sugar with softened butter.

Add the egg and juice squeezed from lemon into the resulting mixture.

Mix everything thoroughly - for convenience, use a mixer.

Add salt and flour with baking powder, then add the roasted sesame seeds, mix everything thoroughly.

As a result, you will get a viscous “dough” that is impossible to pick up. Spread with butter) spread on a baking sheet. Use a teaspoon to place the cookie dough at a respectful distance from each other (note that it will spread very much during the baking process).

Place the baking sheet in a well-heated oven - t = 180 °C - and bake the products for a maximum of 13 minutes. It can be safely removed from the “inferno” when the edge turns brown, despite the fact that it itself remains soft.

Carefully remove the finished sesame cookies from the mat (or paper), cool slightly (literally a couple of minutes - during this time they will have time to harden) and serve.

Enjoy your tea!!!

Sesame cookies are a healthy sweet for children and adults! A variety of step-by-step recipes will help you prepare this delicacy for tea quickly and tasty.

The sweetish nutty taste and aroma of seeds complements the taste of meat, salads and is often used in the preparation of various baked goods. They are also used to make delicious sweets - kozinaki and halva. If in most dishes sesame can only add a certain note of taste, then in cookie recipes it can be one of the main components.

Sesame cookies are prepared so quickly that at first glance it may seem impossible to prepare so much tasty and crispy delicacy. The main feature of the dough is that the white sesame seeds do not separate and are not sprinkled in the finished baked goods.

  • 120 g sugar;
  • 60 g butter;
  • 1 chicken egg;
  • 160 g sesame seeds;
  • 70 g wheat flour;
  • 10 ml lemon juice;
  • 7 g baking powder;
  • 3 g salt.

Combine soft butter with sugar in a dough container and beat well. Then add the egg and mix until smooth.

Pour in lemon juice, and then add salt, flour and baking powder to the mixture. Lastly, add sesame seeds to the dough. The mass must be mixed very carefully until it absorbs absolutely all the seeds.

Place the finished dough with a teaspoon on a sheet of parchment at a considerable distance from each other (at least 4 cm). The dough portion size for one cookie should not be larger than a walnut. Otherwise, there is a high risk of getting one large cookie (for the entire baking sheet).

Bake at a temperature no higher than 170-175 degrees until a beautiful golden color.

Do not place it close, optimally at a distance of 4-5 cm. Heat the oven to 180 °C and bake for 15 minutes, it should brown well. Let it cool on the sheet; it’s easier to remove them when they’re cold. Bon appetit!

It turns out very tasty, light, toasted sesame seeds give the cookies an incredible aroma and a pleasant crunch. In a word, for me, this is the ideal addition to a cup of tea or coffee.

  • 100 g sesame seeds;
  • 60 g butter;
  • 2 eggs;
  • 4 tbsp. spoons of flour;
  • 1 teaspoon baking powder;
  • a pinch of salt, vanillin;
  • 1 tbsp. spoon of sugar (30 g sweetener).

Fry the sesame seeds in a frying pan for 3-5 minutes until golden brown, stirring constantly. Then the sesame seeds need to be allowed to cool slightly.

The butter must be melted and then also allowed to cool slightly.

After this, mix the melted butter with the eggs and beat a little.

In a separate bowl, mix the dry ingredients: flour, baking powder, salt, vanillin, sugar or sweetener. I used oat and corn flour, but you can use any other flour you like.

Now mix the egg-butter mixture with the dry mixture. This must be done with quick movements to avoid lumps forming.

Add the fried and now cooled sesame seeds to the mass, mix all the ingredients well again.

Using a spoon, spread the sesame dough in the form of round, thin small cakes onto a baking sheet covered with parchment paper. Bake in an oven preheated to 180 degrees for 15-20 minutes.

Delicious, fragrant sesame cookies are ready. All that remains is to brew your favorite tea and invite everyone to the table.

Recipe 5: the easiest sesame cookies without flour

Interesting cookies without a gram of flour and butter. Sesame (also called sesame) is a very healthy seed that contains a record amount of calcium, very useful amino acids and proteins, vitamins A, E, B and C. Due to the riboflavin content in sesame, it improves the condition of hair, nails and promotes human growth. Try making these simple sesame cookies for your kids.

  • Peeled sesame 270 g
  • Sugar 5–6 tbsp
  • Large egg 2 pcs.

In eggs, separate the whites from the yolks. Yolks can be used, for example, for custard, and we use whites to make sesame cookies.

Add sesame seeds to the whites

Stir everything until the sugar is completely dissolved. If sugar particles remain, the cookies may burn later. This is how the dough turns out.

Spoon the dough onto baking parchment. It is clear that the weight of egg whites may vary slightly, so the dough may turn out to be a little thicker or a little thinner. Place the first spoon and see if the dough spreads a lot (for example, 1.5 times), then it’s better to add a little sesame seeds.

Bake in a preheated oven at 180 C for 20 minutes. Be careful not to burn!

Healthy and tasty sesame cookies are ready! Bon appetit!

  • sesame oil – 40 ml;
  • egg – 1 pc.;
  • ground cinnamon – 5 g;
  • orange powder – 20 g.

Add sugar, grind the fats with granulated sugar until the grains of sugar dissolve and the mass turns light.

Then break a raw chicken egg into a bowl, mix it with sugar and margarine.

Knead the dough first with a spoon. At first it turns out sticky, then it becomes elastic and stops sticking to your hands and bowl.

When the dough is ready, add white sesame seeds. You can brown it in a dry frying pan, but this is not necessary, since the cookies are thin and everything will bake well.

Add flavorings - ground cinnamon and orange powder, mix the ingredients well with your hands again.

Place the dough in the refrigerator for about 20 minutes, meanwhile heat the oven to 165 degrees Celsius.

Take a sheet of parchment and roll out the dough into a thin layer (thickness no more than 0.5 centimeters).

Use a cookie cutter to cut out flowers or any other shapes. We collect the dough scraps and roll them out again on another sheet of paper.

Place a sheet of parchment paper with cookies on a baking sheet, place in a preheated oven, and bake for 8 minutes.

Recipes

Thin and crispy sesame cookies

For some reason, these sesame cookies are called “Cipollino”, “grilled”, etc. Basically, these are classic shortbread cookies, but with more sesame seeds.

Sesame is included here both as part of the dough and also on top as a decoration. The result is a pleasant crunchiness and bright aroma of “fried” sesame. I recommend starting with this recipe!

If desired, wheat flour can be replaced with oatmeal or any other flour.

Ingredients:

  • Chicken egg – 1 pc.
  • Salt – 1 pinch;
  • Baking powder – 1 teaspoon;
  • Sugar – 120 g.
  • Butter (margarine) – 60 g.
  • Vanilla sugar – 10 g.
  • Wheat flour – 70 g.
  • Sesame seeds – 160 g.

How to cook

First you need to lightly toast the sesame seeds. Pour the seeds into a dry frying pan and place over medium heat. Now you need to stir constantly and make sure nothing burns. The sesame should change color from pale to golden brown. This process is called "grillage". That’s why all such cookies are called that.

Pour the hot golden sesame somewhere and let it cool completely.

Now let's knead the dough. Place the softened butter in a deep bowl. Add salt, vanilla and regular sugar.

Grind thoroughly until smooth. Add one egg here and beat until smooth. This is best done with a mixer.

Sift flour and baking powder into the creamy egg mixture. You can, of course, just pour it in, but then the cookies won’t be particularly crispy. The fact is that the flour particles are caked and need to be saturated with oxygen.

Mix everything thoroughly. You can beat it again with a mixer. You should get a soft dough.

Add the fried sesame seeds and mix again with a spatula or spoon. Yes, don't forget to leave a handful of sesame seeds for decoration.

This is how the dough turns out. Place it in the freezer for 10-12 minutes. The dough should harden a little.

Take the chilled dough out of the refrigerator. It became thicker and less sticky. You can start making cookies.

Line a baking sheet with baking parchment. Take a little dough with a spoon, then roll it into a small ball with your hands. Place these balls on a baking sheet.

We press the dough lightly, and as a result we get the final cookie shape - small flat cakes. Sprinkle sesame seeds on top.

Heat the oven to 180 degrees for 12-15 minutes until the color changes to a more rosy color.

This is how the cookies end up. First let it cool completely, and only then try it. Excellent crunch and crumble. An excellent addition to tea.

With sesame and sour cream

For those who like it more gently. There is less sesame here, there is no sesame in the dough, just sprinkled on top. And you don’t need more! Here the peculiarity is different.

The uniqueness of this cookie is that the dough for it is prepared with sour cream, condensed milk and fresh pears! Very original and tasty.

Ingredients:

  • Wheat flour – 230 g.
  • Condensed milk – 170 ml.
  • Ripe pear – 160 g.
  • Sour cream – 100 g.
  • Sunflower oil (odorless) – 50 ml.
  • Soda – 0.5 teaspoon;
  • Vanillin – 2 pinches;
  • Sesame – 90-120 g (how you sprinkle it);

Cooking process

  1. Peel the pear, remove the core and seeds. Grate on a coarse grater into a large cup.
  2. Add condensed milk, sour cream, butter, vanillin to the pear. Mix everything well until all ingredients are combined.
  3. Sift flour and mix with starch. Pour the resulting mixture into the liquid mass and knead the dough. The dough will be soft and slightly sticky. If it gets too sticky, put it in the freezer for 8-10 minutes.
  4. Roll the dough into small balls and place them on a baking sheet. Pre-oil the baking sheet or line it with baking paper.
  5. Sprinkle sesame seeds on top of all the preparations. If desired, sesame seeds can be pre-fried in a frying pan for flavor (see recipe above).
  6. Heat the oven to 180 degrees, place the baking sheet with cookies in it for 15-20 minutes, depending on the thickness of the cookies.

Without flour

Is it possible to make sesame cookies without flour? And this is possible! By “flour” we mean wheat. Some of the sesame seeds will have to be ground to “flour” using a coffee grinder.

This recipe is popular in the diet (diet “proper nutrition”) and among people involved in fitness.

Required ingredients:

  • Raw egg whites – 3 pcs.
  • Sesame seed – 270 g.
  • Sugar – 50 g (if desired, you can even exclude it);
  • Vanillin – 1 pinch;
  • Sunflower oil (refined) – 2 teaspoons;

  • As mentioned at the very beginning, such cookies not only taste good, they are also very healthy. And the more sesame you add, the more benefits you will get. Sesame is rich in calcium, unsaturated oils and vitamins (especially E).
  • In addition to sesame, you can add to all the recipes listed: sunflower seeds, peanuts, walnuts, puffed rice and other crunchy things and nuts.
  • Don't forget about dried fruits: raisins, dried apricots, dates, prunes. This is not only an additional taste, but also a decoration. Cookies look much more appetizing when pieces of raisins peek out from them.
  • Butter can be replaced with sour cream, thick yogurt or kefir.
  • For extra crunchiness and fluffiness, add baking powder.

Despite the ease of preparation and relatively basic composition, sesame cookies turn out to be impressive in taste, incredibly nutritious and healthy. A dessert like this will transform any tea party and fill it with new flavor notes.
