Preparing a miracle dough with kefir

Not all housewives know how to properly prepare yeast dough. And sometimes there is simply no time to do it. In this case, it can be easily replaced with kefir dough, which in its properties is as close to it as possible.

Choux pastry

Suitable for baked goods that you can eat during Lent. Its peculiarity is that it is prepared without milk and eggs.

Ingredients:

4 cups wheat flour
one glass each of warm water and boiling water
1 tbsp. spoon of sugar
1 teaspoon salt
1 tbsp. spoon of vegetable oil
1 pack of instant yeast

How to prepare choux pastry:

    Dissolve yeast in warm water and add vegetable oil, salt and sugar. Wait a few minutes for the mixture to infuse. While the dough is resting, sift the flour.

    Then mix it with yeast and add a glass of boiling water. Stir the ingredients all the time. Then place the dough on the table, sprinkle with flour and knead until it becomes homogeneous.

    As soon as you bring the dough to the desired state, immediately start cooking. To do this, prepare the filling immediately.

Potato dough

If you prepared mashed potatoes for lunch, but overdid it with the quantity, you can use it to prepare the dough. The peculiarity of this dough is that the inside is tender and soft, while the outside can be covered with a golden crust. Of course, if we are talking about baking.

How to prepare potato dough:

Mix the latter with flour and egg. Sprinkle with a little salt. Remember that potatoes are the base, so watch the amount you add.

Handling such a test is quite difficult. It is not elastic, sticks to your hands and breaks easily. Therefore, you need to work with it carefully. It will be more convenient to make small portions of the dish, since a small amount of dough is easier to handle. At first, because of all this, you may not be able to cook the dish the way you want. But once you get the hang of it, everything will start to work out for you.

Curd dough

It cooks quickly, and the dough itself has a delicate, slightly milky flavor.

Ingredients:

250 g cottage cheese
3 tbsp. not too rich sour cream
egg
2 cups of flour
1 teaspoon soda
a little salt
2 tbsp. spoons of vegetable oil

How to prepare curd dough:

    Knead cottage cheese, sour cream and soda together. Mix the ingredients thoroughly. Add salt and bring the mixture until smooth.

    Place egg and vegetable oil into the future dough. Stir again. Then add 1 glass of flour whole, add the other gradually, mixing the dough with your hands.

    The result will be a soft dough that will slightly stick to your hands. Place it in a bowl, cover with a towel or other rag and let it sit for 30 - 40 minutes. Then you can start cooking the dish.

Puff pastry

Ingredients:

250 g flour
1 teaspoon salt
butter

How to prepare puff pastry:

    Mix flour with salt. Pour onto the table and place a few pieces of chilled butter in it. Gradually add water to the mixture while kneading the dough.

    When finished, place it in the refrigerator and cover with foil. Then roll it out to the required number of layers.

Properly prepared yeast dough for pies is a guarantee that you will be satisfied with the result, and the pies will retain their freshness and taste for a long time.

There are two ways to make the dough. Both are suitable for baking pies, the only difference is that one is suitable for a sweet filling, and the other for a fresh one.

Required Products:

  • A couple of eggs;
  • About 500 grams of flour;
  • Two tablespoons of vegetable oil;
  • Salt and sugar for taste.

You will also need 30 or 40% of flour, from the amount you have already used, about half a pack of dry yeast and of course milk, about 200 ml.

Cooking process:

  1. Start by preparing the milk and yeast. You need to heat the liquid a little and add yeast along with a small amount of sugar to make the process go faster.
  2. While the yeast reaches the desired state, prepare a container where all the products will be mixed, sift the flour and all the remaining ingredients into it. Mix well.
  3. Then pour milk in there. Now all that remains is to cover it all up with something and find a suitable place in which the future dough should stand for at least an hour and a half.

How to cook with dry yeast?

You can prepare the dough using any yeast. In this case, an option is presented on how to make yeast dough for pies using dry yeast from a bag.

Required Products:

  • A packet of yeast, dry only;
  • About 150 ml of warm water or the same milk;
  • A couple of raw eggs;
  • About half a kilogram of flour, you may need more;
  • A little salt and a little sugar, it’s better to rely on your taste;
  • A spoon of vegetable oil.

Sequencing:

  1. Start by preparing the yeast mixture. To do this, pour the contents of the package into a container with warm water. Please note that the water must be warm, not hot, otherwise the result will disappoint you. Add sugar and salt there. Leave for a while: bubbles should appear on the surface.
  2. Next step: take everything you have left and mix it together. Then pour in the yeast mixture, bring to a homogeneous state and leave for two hours so that everything rises well.

Yeast dough for fried pies

The recipe for yeast dough for fried pies involves a straight cooking method. Since they do not require a large amount of baking.

Required Products:

  • A glass of water, which can be replaced with milk if you prefer;
  • Small spoon of yeast;
  • Two large spoons of sugar for a sweet filling or one small spoon for a savory one;
  • About 500 grams of premium flour;
  • Salt.

Cooking process:

  1. A small volume of the liquid you decide to use. Add the specified amount of yeast and a little sugar into it.
  2. Pour salt into the flour and pour in the dissolved yeast.
  3. Mix the resulting mass well so that everything looks homogeneous. You should now have a ball. Place it in a warm place for up to two hours so that it has time to rise. After this, it is completely ready for use.

On the water

It doesn’t matter what you use as a base: simple purified water or milk - in both cases the result should be only positive.

We will need:

  • A glass of water – approximately 200 ml;
  • 500 grams of flour;
  • A small spoon of sugar and a little salt;
  • Contents of two eggs;
  • Dry yeast - half a pack.

Cooking process:

  1. The preparation of ingredients is no different from the version with milk: you should start by mixing warm water with sugar, salt and the specified amount of yeast. Then everything is infused for 15-30 minutes so that the yeast plays.
  2. After time, the liquid, which has acquired a gray color due to the dissolution of yeast, is poured into the flour, which was previously mixed with all other products.
  3. Wrap the resulting mass well and place it in a suitable place where it is warm enough. The process will take at least 1.5 hours.

For baked pies

This is a universal option, suitable for any filling.

Required Products:

  • Approximately 200 grams of flour;
  • Some milk;
  • A small spoon of yeast;
  • One chicken egg;
  • Salt on the tip of a knife and a couple of tablespoons of granulated sugar;
  • Spoon of butter.

Cooking process:

  1. You need to start preparing the dough with yeast. To do this, you need to dissolve yeast with sugar and a small amount of flour in milk heated to about 30 degrees. Leave all the mixed products for two hours so that they ferment well.
  2. The composition, after the allotted period of time, should increase in volume and then decrease again. If this happens, then you can continue cooking.
  3. To the fallen mass you will need to add the remaining sugar, flour, butter and break an egg there. Don’t forget to lightly salt the mixture, mix it thoroughly and of course, as in all other recipes, let it stand for several hours. Don't forget to knead it periodically. This needs to be done 2-3 times, which will affect the quality of baking and taste.

Fluffy pie dough made with yeast

In order to make pies fluffy, you need to choose the right recipe. Any cooking method or option will do, the most important thing is that there is dough. It is due to this that the dough turns out light, tender with bubbles and leads to the fact that the finished baked goods become airy.

Required ingredients:

  • A little vegetable oil and about two small spoons of baking powder;
  • Two table eggs;
  • A pinch of salt and 5 grams of granulated sugar;
  • 7 grams of yeast from a bag, you can replace it with fresh if desired;
  • A glass of water or milk.

Cooking process:

  1. The liquid chosen for cooking must be slightly heated, without bringing it to a boil; the temperature should not exceed 40 degrees. Then bulk products are added to it: sugar, salt, yeast. Stir the mixture a little and leave it for about fifteen minutes.
  2. While the yeast reaches the desired state, make flour. Mix it with all other products except baking powder. You will need it if the dough does not fit well: add it to the dough in an amount of no more than two teaspoons.
  3. Pour water/milk with dissolved bulk ingredients into a container with flour. All that remains is to mix and leave to increase in size. This usually takes about two hours. Don't forget to periodically lower the dough.

No eggs

If there are no eggs in the house, but you have a great desire to prepare a dessert, then you can get amazing results without them.

Required Products:

  • Sugar about two tablespoons;
  • Small packet of dry yeast;
  • Water about 400 ml;
  • 40 ml vegetable oil;
  • Flour 600 grams, you need to watch as you cook;
  • Gram of salt.

Cooking process:

  1. Heat the water until it is not hot and add the yeast and a small spoonful of sugar.
  2. In a large bowl, whisk together the yeast liquid, flour, butter, remaining sugar and salt.
  3. All ingredients must be mixed very carefully, starting from the edges. Bring the mixture until smooth. You should end up with a slightly sticky ball. Transfer it to another container, which you first grease with a small amount of vegetable oil.
  4. Cover the bowl with film or a plastic bag and put it somewhere to settle for about an hour and a half. The mass should become larger, after which it should be lowered and removed again for one hour.

Butter yeast dough - step by step recipe

Cooking takes a lot of time, but if everything is done correctly, you will be able to enjoy delicious pastries. This recipe is suitable for any baking.

Required Products:

  • 30 grams of fresh yeast or a bag of dry;
  • A glass of milk;
  • About 120 grams of sugar;
  • Two eggs;
  • Small package of butter;
  • A little salt;
  • A little more than three glasses of flour;
  • A spoon of vegetable oil and vanilla sugar, if desired.

Cooking process:

  1. This recipe calls for milk, but you can also use water. The liquid needs to be heated so that the temperature is 30-40 degrees. And add a little sugar, flour and yeast there. Let the mixture sit for at least 30 minutes. It should increase well and then decrease. After this, it can be used further.
  2. Take a large bowl and mix sugar, eggs and slightly softened butter. You should not use a mixer. Just stir with a fork and whisk. Then pour in the liquid mixed with other ingredients. At the same stage you need to add salt and vanilla sugar.
  3. Bring the mass to a state of smoothness and elasticity. Cover the resulting ball and put it in a warm place for two hours.
  4. After some time, within two hours, the mass will begin to rise in the container. This means that you need to knead it a little so that it softens and use it for baking.

How to cook with kefir?

It is believed that pies made with kefir dough remain fresh and soft much longer. Moreover, they can not only be baked, but also fried. Another plus is that it always fits.

Required ingredients:

  • 200 ml kefir;
  • The egg is fresh;
  • About 700 grams of premium flour;
  • 40 grams of sugar;
  • Packaging of dry yeast;
  • A little salt;
  • Vegetable oil.

Cooking process:

  1. As always, you need to start preparing yeast dough by “brewing” the yeast. To do this, they are mixed with warm water and left for about twenty minutes.
  2. While they settle, mix kefir with egg, salt and sugar. Kefir is used only at room temperature; cold is not suitable.
  3. After the allotted time, the liquid with yeast is poured into the kefir, oil is added here and everything is mixed.
  4. The next step is adding flour. This must be done in portions, simultaneously mixing all the products so that a uniform mass is obtained.
  5. Place the resulting lump in a clean bowl, wrap it in something warm and leave for an hour. After which it is crushed and used for its intended purpose.

Choux pastry recipe for pies

This is an instant recipe, one might say in a hurry, and does not require a lot of time and a lot of ingredients.

Required ingredients:

  • A packet of yeast;
  • Two spoons of sugar;
  • A little salt;
  • Two tablespoons of vegetable oil;
  • Water;
  • Approximately 600 grams of flour.

Cooking process:

  1. Combine the ingredients together, excluding only the flour, you will need it a little later. Warm water should be used.
  2. Now you can add flour to what happened.
  3. Pour a little boiling water and knead the resulting mass. Most importantly, do not add flour while kneading.

Puff yeast dough

Not everyone knows how to prepare puff pastry, as it is a complex and lengthy process. Most often it is bought ready-made. But homemade is always better.

Required Products:

  • 200 grams of butter or margarine;
  • Yeast packaging;
  • Three spoons of sugar;
  • A little salt;
  • Water - a little less than half a glass;
  • Some milk;
  • One egg;
  • 700 grams of flour.

Preparation:

  1. Heat the water until it is slightly warm but not hot. Pour yeast into it and add a small spoon of sugar. Leave for 15 minutes.
  2. Pour flour into a bowl and mix it with salt and whatever sugar is left. Throw in the butter, previously cut into pieces or grated. It is best to knead it with the rest of the ingredients by hand.
  3. Leave the flour and return to the water with the yeast. After the allotted time, you need to break the egg here, pour in the milk and stir. In total, you should get a full glass.
  4. Now mix the liquid in the glass with another mass. And bring it to form a smooth ball.
  5. The resulting mass should be wrapped in natural cloth and placed in the refrigerator for about two hours.

Lenten recipe

Absolutely any recipe is suitable here, the main thing is that it is without eggs and dairy products.

All that is required is to mix the yeast with water and mix the flour and bulk products separately, and then combine it all together. Knead well, shape into a smooth ball and put it somewhere warm for an hour.

Often, having decided to prepare yeast dough, we still do not know what the filling will be - sweet or salty. We can often start cooking with thoughts of delicious cherry pies. And when the filling suddenly runs out, stewed cabbage and fried mushrooms are used. Below we will talk about a very delicate and versatile dough for pies and pies. It’s not difficult to make, the products come out rich and don’t go stale for a long time. This is especially true if you are baking several portions at once. Here is a recipe for pies with cabbage made from yeast dough.

We will use dry yeast, it can be purchased in advance and it will calmly await our culinary exploits, lying on the shelf.

In order for the yeast to work, we definitely need a warm place. If in summer it is not difficult to find a warm place, and in winter it is most often a radiator, then in spring and autumn it is more difficult to find the optimal temperature. There are a couple of simple options.

First place the bowl of dough in another, larger bowl. We will pour hot water into it. The water will cool and the dough will rise. As it cools, pour boiling water over the edge of the container.

The second option is not suitable for everyone, but only for those who have a gas oven. I haven’t conducted similar experiments in electric, so I can’t vouch for the results. Turn on the oven and start kneading the dough. Minimum temperature. When you have completely kneaded the dough, turn off the oven and wait 5 minutes. After this, put the dough in the switched off oven. We wait half an hour. Usually the dough rises well during this time, despite the fact that the recipe specifies a different time.

Ingredients:

  • 250 ml milk;
  • 8 g dry yeast;
  • 30 g sugar;
  • 1 egg;
  • 2 tsp salt;
  • 450-550 g of flour (as much as the dough will absorb);
  • 50 g butter or margarine;
  • 50 g refined vegetable oil.

Recipe for yeast dough for pies, pies and buns

1. We buy thicker milk for the dough. Ideally, this is homemade milk. Pour into a small saucepan and heat to a temperature of 40 degrees. The milk should be pleasantly warm, not hot.

2.While the milk is heating, break the egg into a convenient bowl. First wash it with baking soda.

3. Pour warm milk here.

4. Beat the milk and egg until smooth and lightly foamy.

5. Add dry yeast. They are distributed quite evenly and do not bunch up.

6. Pour sugar on top of the yeast and stir the dough with a spoon until smooth. The yeast immediately dissolves in the milk along with the sugar.

7. Mix the bowl in a warm place, wait 20 minutes. If we did everything correctly, then a beautiful airy hat appears on top.

8. Sift the flour right before cooking. Add half the flour (250 grams) to the dough.

9. Knead the batter with a spoon.

10. The dough becomes more pliable, and the walls of the bowl are already starting to come off.

11. Set aside for a couple of minutes.

12. Melt the butter in a water bath or in the microwave. Let the oil cool a little.

13. Pour melted butter into the dough, followed by refined vegetable oil.

If you use aromatic oil instead of refined oil, then such dough is suitable exclusively for meat filling.

14. During the next kneading, the dough will settle.

15. Knead the dough thoroughly with a spoon, it is still quite soft.

16. Add the rest of the flour (another 250 grams).

17. Knead the dough. If necessary, you can add just a little more flour. The finished dough should be soft and elastic and stand well behind the sides of the bowl.

The tender yeast dough is ready. In this form, it can be wrapped in a bag and stored in the freezer.

18. Before preparing buns, pies and pies, the finished dough should be placed in a warm place for 1-1.5 hours so that it rises.

Depending on the quality of flour, a different amount is needed each time. During the preparation of this recipe, 520 grams of premium flour were used.

The dough is smooth, elastic, not sticky at all. All that remains is to make some delicious pies.

In my old notes, I found a recipe for a yeast dough called “Air”, which at first glance combines the incompatible - yeast and soda. I rummaged through books and surfed the Internet, read reviews and discussions on this topic. I learned that no one knows how these two components work together, but in Hungarian cuisine such a combination is traditional. And therefore I concluded that until you try it, you won’t understand anything (it’s not for nothing that I once wrote down the recipe). I made it once and the dough turned out just fabulous!
It's with apples

I thought maybe it was just an accident, lucky? Yesterday I made the dough again and baked pies from it. The result exceeded all my expectations - the pies are airy, soft, tender - SUCCESSFUL BAKING. Making the dough is easy and simple, it comes together very quickly, literally in 30-40 minutes at room temperature and does not have a yeast or soda taste.

Yeast dough with the addition of soda "Air"

Will need
2 tbsp milk, 200 g margarine, 3 tbsp unflavored sunflower oil, 2 tsp dry yeast, 1 tsp baking powder or 0.5 tsp soda, 2 tbsp sugar, 1 tsp salt, 2 eggs + 1 egg for greasing, 1 kg 50 g - 1 kg 200 g flour or if for glasses (250 g), then 6.5 - 7.5 glasses.

Advice
It is better to sift flour for dough to get rid of solid impurities and saturate it with air, making the dough more airy and fluffy.
The amount of flour required for kneading the dough depends on the quality of the flour. Flour with a high gluten content is considered the best. For this reason, the recipe does not contain exact information about the required amount of flour.

Cooking method
Dissolve yeast in warm milk, add eggs, salt, sugar, melted warm margarine and stir everything well. To the resulting mass, add half the flour mixed with soda (not slaked) or baking powder, stir well, then add two tablespoons of sunflower oil and add the rest of the flour little by little, stirring well. The dough should be elastic and homogeneous, but it still sticks to your hands. Pour 1 tablespoon of sunflower oil onto the dough and knead it again, just a little so that it does not stick to your hands. Cover the dough with film or a napkin and leave for 30-40 minutes.

If the dough has risen, but the filling is not yet ready, knead the dough, cover again with film and set aside.
When everything is ready, you can start making pies,

Once they are ready, gently brush them with egg. And to make the pies more beautiful and shiny, brush them with egg again.
I really regret that I didn’t write earlier about the temperature conditions and because of this, not everyone’s pies turned out well, but better late than never
Bake the pies at 200 degrees for 15 - 20 minutes, until golden brown. Baking time depends on the oven. If the pies are browned on top and pale on the bottom, then cover them with a sheet of paper and continue baking until the bottom of the pies is done.

Any filling for pies is suitable. But with this dough I liked the non-sweet one more.
