Cookies "Ears" are often called "Crow's feet" or cookies "Triangles". But in any of the three options you get a simple, easy-to-prepare delicacy. The main conditions are the combination of a soft structure and a crispy crust with a sprinkle of sugar in one dish.

Prepare the following ingredients for mixing the cookie dough:

  • 450 g cottage cheese;
  • 225 g butter or spread;
  • 345 g flour;
  • 3.5 g baking powder;
  • a bag of vanillin or 10 g of vanilla sugar;
  • a pinch of salt;
  • sugar for rolling cookies.

Approximate calorie content of the finished dish: 350 kcal.

Total cooking time: 80 minutes.

Let’s start preparing the dough for the curd cookies “Ears”:

  1. Cottage cheese and butter - grind with a fork until smooth and creamy. Which cottage cheese should I choose? Let's be honest: there are no exact indications of the fat content of the product. However, it is worth considering that the higher the fat content of the cottage cheese, the more the calorie content of the dish increases. And vice versa - low-fat cottage cheese makes cookies closer to dietary dishes.
  2. Combine all bulk products, everything except sugar, in a separate bowl. Is the amount of flour indicated in the ingredients list accurate? This question is quite difficult to answer: it all depends on the flour that is available. Most often, recipes are based on the weight of durum wheat flour. Therefore, each brand and manufacturer will have its own mass fraction of flour in each recipe. Focus on your feelings and everything will work out.
  3. Mix the butter-curd and bulk mixtures. Do not delay - after all, oil tends to flow, which means that more flour may be required.
  4. The dough should be slightly sticky and very soft. To ensure that it rolls out well and does not stick to the surface, sprinkle the table with flour. We also pre-divide the dough into 2 or 3 parts - this will make the rolling process easier. In this case, we store the parts that are not involved in the process in the refrigerator.
  5. Using a mug or a special round mold, cut out future cookies from a rolled out sheet of dough no more than 0.5 cm thick.
  6. You may have noticed that the sugar is missing from the recipe. This is not entirely true: we will use it to sprinkle circles of dough. It is convenient to do this by simply pouring sugar into a plate and rolling the dough circles on each side, gradually folding in half until a triangle is formed.
  7. Place the resulting quarters on a sheet of parchment and place in the oven for 10-20 minutes at 180°C.

For 8 servings of finished cookies, take:

  • 500 g puff pastry;
  • 35 ml vegetable oil;
  • 75 g sugar.

Let's start cooking:

  1. First, let's decide what kind of cookies we want to get as a result. This determines the type of test you should choose. For a tender one, use yeast dough. For crispy – yeast-free. But in both cases, the dough must be rolled out into a sheet about 1 cm thick.
  2. Grease the sheet with vegetable oil. This will help the sugar stick to the surface of the dough. Yes, we sprinkle sugar on top of the butter.
  3. Visually determine the middle of the dough sheet and bend the dough to this place on both sides. The middle with the connected edges is lightly fastened and coated with oil.
  4. Again - in half. And cut into pieces. Approximate thickness – 1 cm.

Cookies "Bear Ears"

The difference from the previously presented recipes is that the shape, due to which the delicacy received its name, is formed after baking in the oven.

What do we need to prepare?

  • flour - a glass of 250 ml;
  • eggs – 4;
  • sugar – 2/3 tbsp.

Calorie content: 272 kcal per 100 g.

Time: 25 minutes.

Preparing the dough, and even the Bear Ears cookies themselves, will not take much time, as it consists of only a few steps:

  1. First of all, turn on the oven - 180°C.
  2. Add flour in portions to the eggs beaten with sugar.
  3. We don’t worry when the flour runs out and the dough is still quite liquid - that’s how it should be.
  4. Place 1 teaspoon of the finished dough on a baking sheet greased with butter.
  5. The process of placing the products in the oven will take 7-10 minutes. The main thing is to dry it out. Otherwise, the cookies will not take the desired shape.
  6. The cookies, barely pulled out of the oven, are lifted with a spatula and the sides are fastened according to the principle of an ear or a calla lily flower. We do this quickly, as the dough cools quickly and becomes brittle.

Cooking with Nutella

Making cookies with Nutella differs from the previously discussed puff pastry recipe only by using Nutella chocolate spread instead of sugar.

For 500 g of puff pastry, take a large jar of Nutella.

It will take 20 minutes.

To prepare the cookies:

  1. Roll out the dough.
  2. Coat it with chocolate paste.
  3. We wrap the two edges of the dough towards the middle with a roll. Place in the freezer for 20 minutes to facilitate the cutting process.
  4. Cut the resulting roller into pieces.
  5. Place on a baking sheet and bake at 200°C for 15 minutes.

How to cook "Pig ears"

Let’s make the “Pig Ears” cookies again – also known as “Bear Ears” or “Calla Lilies”.

Let's prepare:

  • flour – 160 g;
  • sugar – 200 g;
  • eggs – 3;
  • soda – 1/2 tsp;
  • a couple of drops of lemon juice.

Cooking time at 190°C – 10 minutes.

We prepare the dough by mixing the ingredients: first eggs and sugar, then flour and soda. Add the acid last, then check the dough for thickness and place it with a teaspoon on a baking sheet.

Consistency: sour cream.

After finishing baking, we form an ear from the round cookies, pinching the edges.

Delicate “Magic Ears”

The magic of the ears lies in the unusually tender and tasty filling.

Required for the test:

  • margarine – 200 g;
  • flour – 3 tbsp;
  • sour cream – 50 g;
  • kefir – 50 g;
  • soda – 1/2 tsp;
  • egg yolk – 3 pcs.

For the filling we will prepare:

  • protein – 3 pcs.;
  • sugar – 1 tbsp.

Let's start kneading the dough:

  1. Mix yolk, sour cream, kefir and soda until smooth.
  2. Grind margarine with flour.
  3. Pour the liquid base into the dry mixture and knead the dough.

  1. Taking the balls out of the refrigerator, roll them into thin cakes. Considering the original shape, the cakes should be in the shape of circles. Thickness no more than 0.5 cm.
  2. Place a teaspoon of meringue in the middle.
  3. We fold it twice until a triangle is formed: at the same time, we securely fix the edges of the cookies so that the filling does not run away.

  • 260 g flour;

  • 1/2 tsp. baking powder;

  1. Beat the softened butter with powdered sugar and vanilla extract into a creamy mass.
  2. Break a whole egg and 1 yolk into the cream.
  3. Stir in flour, starch and baking powder.
  4. We get a sticky but homogeneous dough. Therefore, we keep it in the refrigerator - it will stop sticking to your hands and will become more pliable.
  5. Roll out the dough to 0.5 cm thick and cut out circles from it.

Once again, a recipe for those with a sweet tooth who watch their figure.

I offer two cooking options cookies from childhood called " Bear ears».

What is the difference between the proposed options? The first one will bring you more benefits, since it contains whole grain wheat flour in its main composition. But it is quite difficult for the “ears” to stick together, since such flour contains a minimal amount of gluten in its composition.

The second option has more first-grade wheat flour, and therefore the “ears” stick together more easily, but such products are NOT beneficial for the digestive organs, although I tried to make this option more easily digestible for you by adding wheat bran to the ingredients.

The choice is always yours.

As a child, I really loved these cookies. Then it was prepared from premium flour, which has not been in my kitchen for a long time, and it looked very beautiful, because the high gluten content made it possible to sculpt products as if from plasticine, which is completely harmful to internal organs.

While still a schoolgirl, I made this sweet myself. But previously premium flour was of high quality, but now it is not only purified of all nutrients, but also with the addition of chemicals and bleaches.

How to make Bear Ears cookies

Ingredients for the first option:

  • Whole wheat flour – 1 cup
  • 1st grade wheat flour – 1 tbsp.
  • Eggs – 3 pcs.
  • Coconut or peanut oil - 2 tbsp.
  • Cane sugar – 2 tbsp.
  • Salt - a pinch

Ingredients for the second option:

  • 1st grade wheat flour - about a glass
  • Wheat bran – 2 tbsp.
  • The rest is the same as in the first option, but we don’t add oil.

I don’t know why these cutlets were called that, but it sounds cool, the kids like it. So, let them be “bear ears.”

I remember this dish every time I cook liver. There are always not very successful pieces of liver left, where there are a lot of unsightly tubes, veins, and poor condition, in short. I put them aside and then put them through a meat grinder.

I always have minced meat in my stash, all that remains is to take it out of the freezer and, in fact, defrost it. And now, consider half the work already done.

But let's imagine that I start cooking from scratch. And you study my recipe and look at the photo.

For about 20 cutlets we will need:

  • 500 grams of liver,
  • 250 grams of beef,
  • 250 grams of pork,
  • one head of onion,
  • one raw egg for mincing,
  • about half a loaf of white bread,
  • salt, pepper to taste,
  • vegetable oil for frying.

We take equal proportions of pork and beef (or veal), and a head of onion:

Next, cut the liver into pieces in an amount equal to the amount of prepared meat (approximately, of course, but the taste will be perfect if both meat and liver are equal):

The minced meat is ready. I always advise putting any minced meat in the refrigerator for a while, where it will set more securely and be better saturated with spices. You can remove it for at least half an hour.

During this time, we will wash everything and prepare the crackers. More precisely, these are not crackers yet, but simply finely chopped bread (a loaf or loaf of white bread, rye will not work):

Then the jewelry work begins. Our ears are not easy to make, since the minced meat turns out sticky, and it still needs to be covered with pieces of bread. I asked my daughter to help me demonstrate this process to you. This is roughly what it will look like.

Place a few crackers on your palm:

On top of them with the other hand we place a flat cake of minced meat (slightly smaller in size than the palm itself):

We send what happens to a heated frying pan, and do this with each cutlet:

We distribute the crackers evenly along the way, but, in fact, beauty is far from the main thing here (who knows what kind of ears a bear has?!). And the main thing now is that our cutlets are cooked correctly, because the bread will fry much faster than the minced meat itself, and for this you need to cook over medium heat and not leave the stove, burnt crackers will ruin the whole taste.

Sometimes I just turn them over more often, and at the end I close the pan with a lid and turn the heat down, then the cutlets will be better fried and will not burn.

The downside to bear ears is that they are not fun to eat the next day. They should only be eaten when it is hot. That's when they are so tasty, so juicy with such a crispy crust!

But this is their only minus, and a very small one!

But what an unusual taste! I never thought that meat and liver complement each other so well! They are also very satisfying and do not need any additional side dish, as long as they are served with fresh vegetables and herbs.
