Today I invite you to try making delicious muffins with chicken and cheese. This interesting appetizer is perfect for a buffet table and will decorate the holiday table.

The first time I tried snack muffins was at a party. Later, I found out the recipe from a friend and now I cook them quite often. Before this, I made muffins with chicken and cheese using kefir, but today we will use milk. It turns out very tasty, aromatic and satisfying. Additionally, you can add olives, olives, ham or mushrooms to the filling.

Ingredients:

  • 200 g wheat flour;
  • 100 ml sunflower oil
  • 100 ml milk
  • 3 eggs
  • 10 g baking powder
  • 250 g chilled chicken fillet
  • 100 g hard cheese
  • several green onions
  • 0.5 tsp. salt
  • 0.25 tsp black pepper
  • 0.5 tsp. dried oregano

How to make chicken and cheese muffins:

First, wash and remove films from the chicken fillet. Then boil it in cold water as a whole piece to keep the meat juicy. About 20 minutes after the water boils, the fillet will be ready. Remove it from the broth and cool to room temperature.

In the meantime, prepare the dough. To do this, mix milk and vegetable oil in a deep bowl. You can use either sunflower or olive oil, depending on your taste.

Then beat three eggs into the mixture. Combine the ingredients together using a whisk.

To make snack muffins with chicken and cheese fluffy and airy, add baking powder to the dough.

Grate the hard cheese on a fine grater and add to the dough.

Cut the meat into medium cubes after it has cooled to room temperature. Chop the green onion feathers into thin rings. Add the crushed ingredients to the dough, following the recipe for muffins with chicken and cheese.

Lastly add salt and spices.

Mix the dough thoroughly. It should become thick and homogeneous.

  • Baking powder - 1 sachet (10 g)
  • Salt - a pinch

This recipe for snack muffin dough is basic, you can make any filling. In the fall, muffins literally ask for ripe vegetables. These small muffins look very appetizing and are also really healthy: they have very little flour, and you can use whole grains, bran, flakes, and nuts as additives.

How to cook:

In terms of preparation, the secret of muffins is to mix the liquid and dry ingredients separately. The second trick is to do as little kneading as possible when combining the ingredients. Literally three or four movements and place it in the molds. It’s okay if you see small lumps of flour - everything will bake perfectly in the oven. The fact is that if the dough is kneaded thoroughly, it will become heavy, will not rise well in the oven, and will lose its juiciness.

Boil the chicken fillet in lightly peppered and salted water for 15 minutes. For chicken meat, this time is enough to cook well and not turn into rubber.

In a deep bowl, beat 3 eggs.


Add vegetable oil (100 ml.) Use olive oil or any other vegetable oil. For example, corn dough works very well.

And then milk (100 ml) goes into the bowl. Let me remind you that all ingredients should be at room temperature, so if the milk is cold, warm it up a little.

Salt and pepper the batter and add other favorite spices to taste.

Sift flour (250 g) into a separate bowl.

Combine flour with baking powder (11 g)

Mix the dry ingredients using a whisk or mixer at the lowest speed. This is a very important step that many people skip. If the baking powder is mixed unevenly into the dough, the baked goods will not rise well.

Add flour mixture to liquid ingredients.

Finely chop the chicken fillet. Grate the cheese on a medium-mesh grater. You can use several types of cheese, the taste will be more interesting. A piece that has already weathered a little in the refrigerator will also work (you won’t feel this in baked goods).

I love snack muffins with a splash of olives. If you like their taste, you can also use olives in the recipe.

Buy olives with pits - they are much more aromatic and tastier. Getting rid of the pit is not difficult: you need to place the olive on a cutting board and lightly press the fruit with your palm, the pit will pop out on its own.

Mix the resulting dough carefully. Do not use a mixer! Only a spatula or spoon should be in your hands at this moment.

The dough has the consistency of thick sour cream. If it's too runny, add a little flour; if it's too thick, add a little milk. If you follow the recipe exactly (use scales, measuring cups and spoons), you won't have to adjust the thickness.

Place 1 tbsp in muffin cups. heaping spoonful of dough. Look at the photo to see how much dough is needed for one serving.

Muffins with chicken and cheese are baked in the oven at 180 C for 30 minutes.

  • a handful of olives;
  • champignons - 115 g;
  • egg - 1 pc.;
  • dried garlic and oregano - 1 teaspoon each;
  • chicken fillet - 740 g;
  • a pinch of paprika.

Preparation

After cutting the mushrooms, fry them, seasoning with herbs and salt.

To make the mixture more homogeneous, it is better to use a powerful blender. Whisk together cheese, chicken and cottage cheese. Salt everything and mix with the egg. Add mushroom pieces, a pinch of salt and paprika. Place the mixture, which has a mousse-like consistency, into six wells of the mold and place in the oven for half an hour at 180. Minced chicken muffins can be served hot or reheated before a meal; this will not affect the consistency of the dish.

If you have boiled chicken at your disposal, then you can also use it for muffins, using this recipe as a basis.

How to make chicken muffins with cheese

To make muffins, use chilled chicken breast. The meat in the breast is tender and without streaks, it is perfect for this appetizer. Some housewives prepare this dish from boiled chicken breast.

Hard cheese will add piquancy to chicken muffins. Give preference to aromatic varieties, such as “royal” or “radomer”. In addition to hard cheese, I add half of the processed cheese to the muffins.

Chicken fillet for muffins can be chopped with a knife or passed through a meat grinder. Place the finished minced meat into a bowl.

Pour two chicken eggs into the meat in a bowl.

Pour a little milk (50 ml) or cream into the minced meat to make the muffins juicy in taste. Add two tablespoons of flour or semolina there.

  • 110 g butter.

Time – 55 minutes.

Preparation:

  1. Pour the milk into a bowl, add salt, baking powder and sugar to it, mix everything until dissolved;
  2. Add eggs one at a time and beat;
  3. Add flour through a sieve, stirring with a whisk to avoid lumps;
  4. Dissolve the oil on the stove and pour into the remaining ingredients, mix well;
  5. Wash the chicken fillet, remove films and fat using a sharp knife, then place in a pan with water;
  6. Add spices and make sure that the water covers the meat by two phalanges of the finger;
  7. Place on the stove and boil for thirty minutes from the moment the water boils;

  • 220 g chicken fillet;
  • 30 ml sour cream;
  • 1 carrot;
  • 60 ml mayonnaise;
  • 2 eggs;
  • 3 cloves of garlic;
  • 120 g hard cheese;
  • 1 onion;
  • 30 g flour;
  • 100 g young onions.

Time – 1 hour.

Calorie content: 27 calories.

Preparation:

  1. Wash the green onions and chop them finely;
  2. Remove the peel from the garlic and chop it as convenient as possible;
  3. Also chop the onion into small cubes, peeling it;
  4. Peel the carrots, wash and grate them;
  5. Peel the zucchini, wash and grate it on a grater of any size;
  6. Wash the chicken fillet, cut off the membranes and veins, boil the meat until tender;
  7. When cooking meat, be sure to skim off any foam that it produces. You can add spices to the water to taste;
  8. Leave the finished meat in the soup until it cools, then chop it;
  9. Combine zucchini, garlic, carrots, onion, chicken and green onions;
  10. Mix the whole mass well until smooth;
  11. Add eggs, half the mayonnaise and sour cream to the ingredients, mix;

Low-calorie muffins with unsweetened filling

  • 390 g flour;
  • 10 g baking powder;
  • 210 ml milk;
  • 2 pinches of salt;
  • 120 g cheese;
  • 5 g sugar;
  • 1 large tomato;
  • 1 egg;
  • 120 g chicken meat;
  • 60 ml vegetable oil.

Time: 1 hour and 10 minutes.

Calorie content: 194 calories.

Preparation:

  1. Grind the cheese into small pieces;
  2. Boil the chicken until tender, cool in the broth, and then finely chop the meat;
  3. Pass the flour through a fine sieve, add baking powder, salt and sugar;
  4. Mix dry ingredients well;
  5. Add cheese and chicken to them, mix well to coat all the slices;
  6. Combine the egg with milk, beat well;
  7. Pour in the oil and beat the mixture again;
  8. Rinse the tomato, make a cross-shaped cut on it;
  9. Boil a pot of water for the tomatoes;
  10. As soon as the water boils, lower the tomato for one minute;

Instead of boiled chicken fillet, you can add smoked breast or ham. You can also fry the chicken in a pan with spices instead of boiling it.

Do not fill the molds more than two-thirds full with dough, as the dough will rise and easily flow out over the edges. Moreover, it will be baked in this form. It's not the most appetizing sight.

Meat can be cut not only into cubes. You can chop it into cubes or grind it in a blender/meat grinder. The result will be a slightly different consistency and the cake will be more homogeneous, without pieces of food. The cheese can also be ground into crumbs in a blender or grated.

If there is no milk in the refrigerator, you can always replace it with kefir or fermented baked milk. But in this case, you need to fill the capsules no more than halfway.

You can add various spices to the dough to taste. For example, you can add sweet paprika, or, conversely, hot pepper. You can use various mixtures of herbs or single herbs, such as rosemary, marjoram, and basil. You can add fresh herbs to taste.
