Since salmon is often sold in a stale state, which is pre-cleaned in a solution of potassium permanganate to remove all mucus and cloudiness from the eyes, you need to know the rules for choosing this fish.

In order to purchase truly fresh fish, take note of the following tips:

  1. The appearance of the salmon must be absolutely healthy - clean scales, transparent eyes with a black pupil, bright red gills and no damage;
  2. It is advisable that there is a moderate amount of ice on the fish - if it is absent, then after cooking the fish will turn out dry, and if there is a lot, it will add extra weight;
  3. The color of the fillet should be soft orange or pinkish;
  4. If you buy fillets in a package, there should be no condensation or any liquid inside the package. The packaging must be intact and without damage;
  5. The smell should be of sea fish.

It is not advisable to buy fish in the following cases:

  • Cloudy eyes, the presence of a sticky coating on the scales and dark color of the gills;
  • There are slight darkening of individual areas on the surface of the fillet;
  • If pressing with your finger leaves depressions and dents on the surface of the fish. This is the first sign that the fish is starting to spoil;
  • Red or reddish-brown fillet color. This is a sign that the fish is old;
  • If there is any foreign odor.

Using your hands, distribute all the spices over the surface and pour 40 ml of olive oil over the pieces.

If red fish appears on the kitchen table, then most often this means the approach of a festive feast or some important event. And, of course, we want this dish to be especially tasty and aromatic. Baked salmon with vegetables in the oven is one of those options that are ideal for such events.

A very appetizing, aromatic and, importantly, healthy dish, which will be discussed further, can easily be classified as dietary food. The protein/fat/carbohydrate content per 100 grams is only about 17/11/13 g respectively. Calorie content is approximately 176 kcal per 100 g.

Ingredients for 4 servings:

  • Salmon fillet – 4 pieces;
  • Young zucchini – 4 pcs.;
  • Medium tomato – 3 pcs.;
  • Blue onion – 2 pcs.;
  • Garlic – 2 cloves;
  • Lemon juice – 2 tbsp. spoons;
  • Seasonings: dried thyme – 1 pinch, dried oregano – 2 pinches; black pepper – ½ teaspoon;
  • Olive oil – 2 tbsp. spoons;
  • Salt.

From a roll of foil, cut four equal rectangular sheets, 40-45 cm long.

Wash the zucchini, remove the ends, remove a thin layer of peel, cut into thin discs, then divide into halves. If the zucchini is very young, then it is not necessary to remove the skin.

Our recipe uses two different colors of zucchini: yellow and green. This way, when served, the dish will look more impressive, however, if you don’t have colorful vegetables in your arsenal, it’s okay.

We used blue onions again for aesthetics, to diversify the color scheme of the dish, but it is worth noting that regular onions are also suitable for this role. We cut it into thin half rings and, together with the zucchini pucks, mix it with chopped garlic, 1 tablespoon of olive oil, salt and pepper. Leave a little onion to sprinkle on top of the fish.

Spread the prepared vegetable mixture evenly on sheets of foil greased with oil.

Place pieces of salmon on the vegetables, sprinkle each with lemon juice, sprinkle with dried herbs.

Cut the tomatoes into small cubes, mix with the rest of the blue onion, and spread over the red fish.

Cover the blanks with foil, preferably so that it does not touch the tomatoes, transfer to a baking sheet, and place in an oven preheated to 180-190 degrees for half an hour.

After the specified time has passed, open the envelopes and check the fish for doneness. Salmon with vegetables in foil in the oven is ready if it is soft and juicy. Sprinkle the dish with finely chopped fresh herbs and serve. Bon appetit!

Recipe 5: salmon in cream sauce in the oven

Salmon will be especially tender and aromatic if baked under a “fur coat” of sour cream, mayonnaise with the addition of lemon juice, dill and parsley. And to give the dish a beautiful, aromatic crust, sprinkle with grated hard cheese before baking.

  • Salmon 800 gr.
  • Hard cheese 70 gr.
  • Sour cream 3 tbsp. l.
  • Mayonnaise 1 tbsp. l.
  • Dill 1 bunch
  • Parsley 1 bunch
  • Salt to taste
  • Lemon 1/3 pcs.

Defrost the fish carcass or take it chilled. Remove the head and entrails, cut the large bone lengthwise into 2 halves and remove the bones. Cut the prepared fillet into pieces 2-3 cm thick.

In a bowl, mix sour cream with mayonnaise and lemon juice. Finely chop the greens and add to the sauce.

Mix well.

Line the pan with foil, distribute the fish pieces evenly onto the bottom and sprinkle with salt.

Lubricate the pieces with sour cream sauce and herbs on top.

Sprinkle with coarsely grated cheese, place in the oven, preheated to 200 degrees, and bake for 30 minutes.

We take out the fragrant juicy fish under the cheese and creamy “coat” and immediately serve it on the table with a hot vegetable side dish and fresh bread.

If desired, the dish can be supplemented with your favorite spices or other fresh herbs (thyme, rosemary or basil).

Our family loves red fish in all its forms! In addition to being tasty, it is also healthy, containing Omega-3 polyunsaturated fatty acids. These fatty acids have a restorative, antioxidant, anti-inflammatory and immunocorrective effect. In addition, these polyunsaturated fatty acids are important for the good appearance of skin, hair, and nails. Today I offer one of the options for preparing salmon. Pepper the salmon fillet with a mixture of peppers, lightly add salt and leave to soak for half an hour.

While the salmon is soaking, cut the potatoes into thin slices.

Mix potatoes, rosemary, salt in a bowl, sprinkle with olive oil and stir.

Place the potatoes on a baking sheet and place in an oven preheated to 180 degrees. Bake until half cooked.

Cut the tomatoes into 8 parts, add salt, squeeze out the garlic, sprinkle with olive oil and mix.

Recipe 8: Baked rolls with salmon and shrimp

  • sushi rice - 200 gr
  • shrimp – 100 gr
  • salmon or salmon - 100 g
  • nori seaweed - 1 piece
  • rice vinegar - 20 ml
  • spicy sauce - 6 tsp.

Baked salmon and shrimp rolls are one of my favorite rolls. In my opinion, rolls baked with spicy sauce have a brighter taste. For these rolls we need special sushi rice, one sheet of nori seaweed, a small piece of salmon and some shrimp. You will also need rice vinegar and spicy sauce. There are a lot of variations in preparing spicy sauce, so I suggest you simply purchase it in a specialized store (or sushi market).

Shrimp need to be thawed and peeled. To do this, tear off their head and remove the shell. I took headless tiger prawns, they are large and the most delicious. Then they need to be boiled. To do this, boil water, salt it, add a couple of black allspice peas and place the shrimp in the water. Cook for 2 - 3 minutes. If you have boiled-frozen shrimp, then simply put them in boiling water for a minute. Cool the boiled shrimp and cut into strips. no more than 1 centimeter wide.

Lightly salted salmon (can be replaced with lightly salted salmon), cut into layers. Then cut into thin strips. You can leave them in layers and then wrap the shrimp in them, it will be even more interesting.

Rinse sushi rice in water several times. Then boil them in water in a ratio of approximately 1 part rice to 1.5 - 2 parts water. There is no need to salt the water; the rice should be fresh. Boil until the rice is ready for 20 - 30 minutes. Then transfer the rice into a cup, let it cool a little (15 minutes is enough) and pour rice vinegar into it. Stir until the vinegar is evenly distributed. Next, we divide all the ingredients by two, since we will have two rolls.

Divide the nori sheet into two parts.

Cover the makisa with cling film, place one half of nori on it, then distribute half of the rice evenly over the nori, slightly short of the edge (leaving about 1 - 2 centimeters). Then place the shrimp and salmon in a stripe in the middle.

Roll everything into a roll, pulling it slightly toward you.

We cut off the side sloppy parts. And cut the roll into rolls with a sharp knife. Place the rolls on a baking sheet and top with a teaspoon of spicy sauce.

Place in the oven for 10 - 15 minutes until the spicy sauce has browned. Serve the rolls warm with soy sauce, wasabi and ginger.

In this article we will look at how to bake salmon in the oven at home, because this cooking method is the most common. The secret of popularity is that the same dish, depending on the recipe, turns out to be high-calorie and fatty or dietary and light.

Salmon is a flavorful and incredibly healthy fish, the regular consumption of which has a positive effect on your figure and physical fitness. Today, skillful housewives cook salmon in different ways, but all dishes look appetizing and noble.

Calories in baked salmon

Calorie content of baked salmon is 253 kcal per 100 grams.

Oven-cooked salmon is a healthy, filling, tasty and easy-to-prepare culinary masterpiece. Among the advantages are the minimum time spent on cutting and processing a whole carcass. Using steaks or fillets further reduces cooking time.

Even a beginner can handle the task of cooking in the oven, because it’s simple. But there are several subtleties that will make cooking easier, help improve the result and end up with a blissful treat.

  • The taste of the finished dish largely depends on the correct choice of the main ingredient. A chilled carcass is better suited for baking in the oven. In this form, the original benefits and taste are preserved.
  • Buy a product that has a fishy aroma and a moderately rich color. A pale shade indicates age, and a too bright color indicates the presence of dye.
  • Some housewives use frozen salmon. In this case, it is important to defrost correctly. To ensure that the carcass thaws and retains its structure, leave the fish in the refrigerator on the bottom shelf until the morning. I do not recommend defrosting in water, as the liquid has a bad effect on the taste and appearance.
  • Do not defrost at room temperature, especially in summer. Warm air promotes the formation of pathogenic bacteria, and eating such fish is dangerous to health.
  • If you bought fresh fish, but you can’t cook it right away, wash the carcass, remove the entrails, dry it slightly, put it in a glass container and put it in the refrigerator. Under this condition, salmon is allowed to be stored for three days. If you put it in the freezer, the period will increase several times.
  • To cut the carcass, wait until it thaws slightly, but not completely. This way it is easier and more convenient to clean. Wash salmon only in cool water. Using warm liquid will spoil the taste and loss of juiciness. After the water procedure, be sure to blot with a napkin.

We figured out the intricacies of preparing salmon. It's time to look at popular recipes for cooking red fish in the oven. I offer time-tested recipes that have gained incredible popularity over the years and earned a lot of positive reviews.

    Rinse the fish pieces with cool water and dry with a paper towel. Squeeze the juice of half a lemon and brush each piece. For convenience, use a pastry brush.

    Grease a baking dish with vegetable oil and place the fish. The main thing is that the pieces do not touch each other.

    In a small container, mix sour cream, spices and chopped herbs. I usually use dill, parsley, basil, coriander, red pepper and oregano. Just don’t overdo it with spices, otherwise the original taste will be lost.

    Place the resulting mixture on top of the fish and distribute. Take a teaspoon of the mixture for one piece. This is enough to create a kind of cap that will protect against drying out and make the taste rich.

    Place the salmon pan in an oven preheated to 200 degrees. In about 25 minutes the delicacy will be ready. A minute before the end of cooking, I advise you to put a lemon ring on each steak.

Salmon cooked in the oven according to a classic recipe is ideal for a holiday table. It cooks quickly, has a presentable appearance and exquisite taste. Fresh or baked vegetables are suitable as a side dish.

  3. For best results, wrap the fish properly. To do this, cover the steak with one side of the sheet and press. Then turn over along with the foil towards the second end. Press the free ends and twist them into the center with a tube. You will get an envelope with filling.
  4. Place the prepared fish in a baking dish and place in an oven preheated to 200 degrees for 25 minutes. When finished cooking, do not remove the foil, but carefully open the envelope and tuck it around the salmon, forming a boat. This is the secret of the juiciness of the delicacy.

Pour mayonnaise over hot salmon and serve along with boiled potatoes.

If you want to surprise your household, replace mayonnaise with a sauce made from yogurt, crushed garlic and chopped dill. It tastes much better this way.
