This marinade is also suitable for baking a whole chicken carcass, but to ensure that it is perfectly cooked, I recommend using a baking bag. Pumpkin can be placed both in the middle of the chicken carcass and around it. In addition to chicken, I only used onions from vegetables, but you can add potatoes, carrots, prunes, mushrooms, dried apricots, bell peppers, and grated cheese to the dish.

Ingredients:

  • Chicken legs – 1 kg.,
  • Pumpkin – 300-400 gr.,
  • Spices – 1 teaspoon,
  • Balsamic vinegar - 3 tbsp. spoons,
  • Apple cider vinegar – 2 tbsp. spoons,
  • Salt – 1 level coffee spoon,
  • Garlic – 3 cloves,
  • Onions – 2 pcs.,
  • Refined sunflower oil – 80-100 ml.

Any parts of the chicken for baking that you choose should be checked for feathers, and then be sure to rinse with cold water. Before marinating, it is advisable to pat the meat dry with napkins or a paper towel. It is advisable to cut whole chicken legs, consisting of thigh and drumstick, into two parts at the joint. Today I will bake chicken thighs with pumpkin.

Peel a piece of pumpkin and remove seeds. Cut the pumpkin pulp into cubes approximately 2 by 2 cm in size.

Peel the onion and cut it into rings. Cut the onion rings in half. And again in half. The end result should be quarter rings.

Let's move on to the next stage - preparing the marinade. To do this, pour sunflower oil into a bowl.

Add spices.

There are no strict rules for choosing them for marinating chicken. You can buy ready-made chicken or chicken spices, or mix your favorite spices. Most often I prepare spices for meat and fish myself. In this recipe for baking chicken with pumpkin in the oven, I used a spice mixture of paprika, black pepper, curry, and dry adjika.

Pour in balsamic vinegar, but do not confuse it with plain grape vinegar. Balsamic vinegar is very sweet and thick, while ordinary grape vinegar is very close in consistency and taste to table vinegar, but at the same time differs from it in its ruby ​​color and characteristic grape smell. If you don't have it, then replace it with a teaspoon of honey.

To fill the pumpkin, you can use boned legs, cut into pieces. Or you can remove fillets from the legs. But when using pieces with a bone, the filling will be thicker and more flavorful due to the gelling substances.

Cut the legs into two parts - drumstick and thigh. If fillet is used, it must be removed in large pieces. Salt and pepper the legs, fry in vegetable oil until a light crust appears. Leave the fried chicken to cool.

Let's wash the pumpkin. Let's step back 5 centimeters from the tail and cut off the cap. Using a spoon, scoop out the seeds and fibers. Then take out some of the pulp. It needs to be cut with a knife and taken out using the same spoon. You need to be careful not to pierce the pumpkin all the way through, otherwise the juice will leak out through this hole.

As a result, the pumpkin will look like a pot. It is necessary to salt the walls from the inside and lubricate them with vegetable oil.

Wash the tomatoes, cut them into halves, chop the onion into thin half rings. We clean the bell pepper from seeds and cut it into fairly wide strips. Chop the garlic and fresh herbs.

  • well-washed pitted prunes – 100 g;
  • medium bulb;
  • garlic – 1-2 cloves;
  • a glass of hot water;
  • spices to taste: third tsp. ground cinnamon, salt and pepper;
  • vegetable oil for frying;
  • chopped herbs (eg parsley) for serving.

Cooking method:

  1. Chicken meat is cut into portions and fried with spices in vegetable oil until golden brown.
  2. The peeled onion is cut into thin rings and, together with chopped garlic, is added to the chicken in the frying pan. Stir, add cinnamon, fry for another 10-15 minutes.
  3. The pumpkin pulp is cut into small pieces, placed in a frying pan with the chicken and onions, a glass of hot water is poured in and brought to a boil.
  4. Cover with a lid and simmer the vegetables and chicken over low heat until the pumpkin is ready – it should be soft. The stewing time depends on the type of pumpkin and its degree of ripeness and is usually 15-30 minutes.
  5. Add prunes, simmer for another 5-7 minutes until soft.
  6. A delicious and aromatic dinner is ready! When serving, it is recommended to decorate the plates with herbs.
