What are the features and secrets for baking waffles?


1. Traditionally, to bake waffles you will need flour, sugar and eggs. Various recipes suggest using cream, milk, yeast, nuts, mineral water and baking powder. Salt, water, soda, vanillin, additives and flavorings are required.
2. In order for the waffles to be crispy, the dough must contain starch in equal doses with flour. Before you start mixing the ingredients, it is important that they are at room temperature and not cold.
3. The liquid batter is not spread on the waffle iron; the thick batter is smoothed out before closing the device. So that after the dough is baked, it does not stick to the waffle iron, sugar is replaced with powdered sugar. Before baking the waffles, the appliance is heated for 10 minutes and lubricated with vegetable oil.
4. You need to bake each pancake for 1-2 minutes, but it is important to take into account the thickness. Thin ones will be ready in 30 seconds. There is no need to overexpose the treat. If thin waffles are being prepared, roll them immediately after removing them from the surface of the waffle iron. It’s easier to pick it up with a fork so as not to get burned by the hot product.
5. When cooking on a baking sheet, pour the dough onto parchment paper, after which it will be easier to roll it into tubes. Not everyone can turn it off right away. If the first ones turn out unsuccessful, you can mash them and add them to the cream - it’s interesting and will have a crunch.
6. Waffles can be filled with various creams, but you can’t let them sit for a long time - they will soften. You can fill the tubes with cream using a pastry bag or syringe. On the festive table you can place tubes dipped in chocolate glaze and then dipped in coconut flakes.

VIENNAIAN WAFFLES.


Real Viennese waffles are soft on the inside and crispy on top. Prepare in 10-15 minutes. They can be prepared for breakfast and eaten with jams, honey or berries. They go well with salty foods like bacon or cream cheese.

You will need to take:

3 eggs,
¼ tbsp. Sahara,
2 tbsp. milk,
30 gr. butter,
2 tbsp. flour,
1 tsp vanillin,
half a teaspoon of soda and the same amount of salt.

The preparation steps are as follows:

Mix 3 yolks with sugar in a deep bowl with a mixer until smooth;

Add vanillin and beat again with a mixer;

After melting the butter, add it to the prepared base;

Two glasses of milk are poured in;

Separately mix flour, salt and soda and pour in the base, mix with a mixer;

Beat the remaining egg whites with a mixer until fluffy.

Mix the base with the cream with your hands very carefully so that the waffles come out soft and light.

Preheat the electric waffle iron for 2-3 minutes, grease with oil and bake the waffles.

In addition to Viennese waffles, there are also Belgian waffles, which are prepared on a yeast basis. The dough for baking soft waffles contains sour cream.

The consistency of the dough for baking in an electric waffle iron should be slightly thicker than for pancakes, but not as thick as for pancakes. They become fluffy thanks to baking powder.

To prepare dessert, you definitely need to take baking powder and good butter with a high percentage of fat content. The finished dish can be supplemented with a scoop of ice cream, pieces of chocolate, jam or condensed milk.

Ingredients:

  • butter – 50 g;
  • sugar - half a glass;
  • milk – 900 ml;
  • Eggs – 2 pcs.;
  • flour – 2 tbsp;
  • baking powder – 1 tsp;
  • salt – 1 tbsp. l.

How to cook:


  1. Separate the eggs into whites and yolks as carefully as possible. We put the whites in a cold place. Mix the yolks with sugar and stir until a homogeneous white consistency.
  2. Melt the butter over low heat. Pour milk and salt into the mixture, stir until smooth.
  3. Add sifted flour with baking powder. Stir so that no lumps remain.
  4. Remove the whites from the refrigerator and beat them until thick foam.
  5. Combine all the ingredients and mix until smooth (do not use a mixer when mixing, otherwise the dough will “settle” and will not be fluffy).
  6. Turn on the electric waffle iron and grease the tiles with oil (only grease once at the beginning). Pour the mixture into the pan and bake for 2-3 minutes.

Thin crispy waffles

Thin wafer layers are often used for cakes or rolled and filled with fillings. The method of cooking in an electric waffle iron is quite simple and does not take much time.

Ingredients:

  • milk – 250 ml;
  • flour – 2 tbsp;
  • sugar – 1 tbsp;
  • butter – 150 g;
  • eggs – 4 pcs.

How to cook:


  1. Melt the butter over the fire. Cool it down.
  2. Combine eggs with sugar and beat with a mixer. While whipping, gradually add milk and butter. Add flour to the resulting mass. Mix everything until smooth.
  3. Turn on the electric waffle iron. Using a ladle, carefully pour the dough into the middle of the device. Bake for 1.5-2 minutes until golden brown.
  4. If desired, you can put the filling on the finished dessert and roll it into a tube while it is still warm.

This is America's favorite dish. Heart waffles are more like pancakes. They are lush and look romantic.

Ingredients:


  • sugar – 100 g;
  • sour cream – 250 g;
  • flour – 1.5 tbsp;
  • salt;
  • eggs – 3 pcs.;
  • baking powder – 1 tsp.

How to cook:

  1. Mix eggs with sugar and beat with a whisk until fluffy white mass.
  2. Add sour cream, salt, vanillin and sifted flour with baking powder. Mix all ingredients until smooth.
  3. Turn on the electric waffle iron. Pour a small amount of dough into the center of the appliance (if you pour a lot of liquid, it will come out around the edges during cooking). Cook for 2 minutes.

Belgian waffles

  • sugar - half a glass;
  • eggs – 2 pcs.;

  • berries – 300 g;

  1. Remove the butter from the refrigerator in advance (to soften). Salt, add vanillin.
  2. Beat two eggs into the resulting mixture and knead.
  3. Add baking powder and beat with a whisk or mixer, adding sifted flour.
  4. Turn on the waffle iron. Pour the dough into the mold of the device and bake for 5-6 minutes.
  5. Break the chocolate and melt in a water bath. Once the chocolate becomes liquid, remove from heat and let sit.
  6. Place the dish on a plate, place strawberries or currants on top and pour melted chocolate over it. If desired, you can also sprinkle with powdered sugar.

Curd waffles

Ingredients:

  • cottage cheese – 100-150 g;
  • eggs – 2 pcs.;
  • baking powder - 1 tbsp. l.;
  • flour – 2 tbsp. l.;
  • granulated sugar - 2 tbsp. l.;
  • butter – 70 g.

How to cook:


  1. Heat the butter until soft, combine with eggs and sugar.
  2. Add cottage cheese (0-4% fat) to the cream mixture.
  3. Add sifted flour to the mixture and knead the dough.
  4. Grease the waffle iron with oil and let it heat up.
  5. Pour the dough into the mold of the device and bake for 1-2 minutes.

Original waffles with cheese cream

  • water – 1 glass;
  • lemon zest - from 1 pc.;
  • lemon juice – from 1 pc.;
  • sugar – 2 tbsp. l.;
  • baking powder – 2 tsp;
  • salt – 1 tsp;
  • yogurt – 200 ml;
  • milk – 200ml;
  • corn flour – 150 g;
  • eggs – 2 pcs.;
  • butter – 200 g;
  • soda - half a tsp;


I can’t tell you how long I’ve dreamed of making my own waffles. Someone tells stories from childhood about nuts with condensed milk and waffle rolls. My childhood is a mold for lollipops and a large aluminum circle for dumplings.

And here are the waffles! This is completely different.

On the narrow streets of Brussels you are enveloped by the smell of waffles from the windows of shops located on the first floors of houses. Buy a waffle like this, fill it with chocolate, whipped cream, and sprinkle with colored sugar confetti.

But these are all tourist joys.

I wanted to make the same waffles at home. Have a lazy and beautiful Sunday breakfast.

When I got it in my hands, I was so happy that I immediately showed it off on Instagram. Several people wrote to me that they use the same one and, using removable panels, make not only waffles, but also those same nuts with condensed milk, hot sandwiches and even pizza.

I was even more inspired until I received a comment that it was all bullshit and nothing worked. For good waffles you need a real waffle iron, and all these replaceable panels are nonsense, everything sticks to them and turns out ugly.

Of course, I immediately thought that I wouldn’t succeed either. They fooled me, the dough will stick and, look what you came up with, 40 replacement panels will replace everything for you!

But I took a risk and, oh, what nonsense it all turned out to be.

I took the waffle recipe directly from the book that came with the multi-baker. There were four of them, I chose soft Viennese waffles: soft inside and crispy on top. If I understand correctly, Viennese waffles are soft and taste more like pancakes. Belgian waffles are prepared with yeast and this makes them more airy and somewhat donut-like.


Ingredients for Viennese waffles

  • wheat flour - 350 g
  • milk - 200 ml
  • butter - 150 g
  • eggs - 3 pcs.
  • sugar - 100 g
  • baking powder - 10 g
  • lemon juice - 5 ml
  • berries, cream, chocolate, honey - whatever you want to decorate waffles with

Soften the butter and grind with sugar. Add milk and eggs, mix with a whisk.

No mixer and you don’t have to worry about waking up your family.

It is important that the milk is at room temperature and not from the refrigerator, otherwise the butter will freeze and the dough will no longer be homogeneous and lumps will appear.

Add flour, baking powder, lemon juice and salt, mix thoroughly until smooth. Boom! The dough is ready!

Experienced housewives told me that it is better to let the dough sit in the refrigerator for some time. You can prepare it in the evening, put it in the refrigerator, and in the morning all you have to do is bake the waffles.

Then everything is extremely simple. Turn on the multi-baker. There are no settings, buttons or controls, which I instantly get confused about. You simply insert the panels you need, plug the cord into a power outlet, and wait a few minutes for the panels to warm up.

Then you spoon the dough onto the panel, close the lid and wait until the green light comes on. Ready!

You can hold the waffles a little longer, then they will turn out more rosy.

I spread the batter unevenly so that I ended up with irregularly shaped waffles. You can lay out the dough so that the waffles are neat and square. It's just the way you like it.

What amazed me was that it doesn't require any oil at all. In a bunch of recipes on the Internet that I reviewed, the panels are greased with oil and somewhere the finished waffles are actually torn off the panels with a knife.

I don't know what the Redmond multi-baker panels are made of, but not a drop of oil was wasted, and the waffles simply came out. No picking, God forbid.

I decorated the waffles with berries and... sour cream. At first I was upset that there was no cream in the refrigerator, but I didn’t regret the taste at all. Very, very tasty.

My plans are to try waffles with chocolate, caramel and honey. And yes, with whipped cream too.

And then boil water in a kettle, make delicious tea and pour it into beautiful cups.

    You will need:

    • wheat flour - 120 g;
    • butter - 50 g;
    • granulated sugar - 1/2 tbsp.;
    • yeast - 0.5 sachet.

    Cooking method:

    1. 1. Beat the yolks with sugar.
    2. 2. Sift flour and add salt. Make a well and pour in the yolks. Carefully begin kneading the dough.
    3. 3. Melt the butter, add milk, rum and yeast. Mix with a mixer. Add to flour.
    4. 4. Leave the dough for half an hour until it rises.
    5. 5. Beat the whites with salt and carefully fold into the dough.

    Based on cottage cheese


    Viennese waffles made with cottage cheese are very tender.

    Ingredients:

    • low-fat cottage cheese - 2 packs;
    • Flour - 150 g;
    • egg - 3 pcs.;
    • butter - 100 g;
    • granulated sugar - 2 tbsp. l.;
    • salt - 1 tsp;
    • vanillin - 1 tsp.

    The waffles are prepared as in the previous version. The only difference is that the cottage cheese must be ground several times in advance and excess moisture, if any, must be removed. The ingredients are combined and mixed with a mixer until smooth and without lumps. The waffles take a little longer to bake because of the cottage cheese, about 7-8 minutes.

    The finished dish can be served with citrus fruits and a mint leaf, which will highlight the delicate taste of the waffles.

    Kefir based


    For waffles you need:

    • kefir - 200 ml;
    • oat flour - 150 g;
    • egg - 1 pc.;
    • butter - 50 g;
    • granulated sugar - 2 tbsp. l.;
    • salt - to taste;
    • baking powder - 1 tsp.

    Preparation:

    1. 1. Beat eggs with sugar and kefir, add salt and baking powder.
    2. 2. Sift the flour and add to the eggs.
    3. 3. Melt the butter, cool and add to the eggs. Knead the dough.

    Viennese waffles without milk or eggs


    Another recipe for classic waffles is a version without milk and eggs.

    For this you will need:

    • wheat flour - 450 g;
    • condensed milk - 100 ml;
    • corn oil - 100 ml;
    • water - 1.5 tbsp;
    • soda - 0.5 tsp;
    • salt - to taste.

    Preparation step by step:

    1. 1. Mix the bulk ingredients, sifting the flour in advance.
    2. 2. Add water, oil and 1/2 portion of condensed milk.
    3. 3. Put soda, quenched with vinegar or lemon juice, into the dough.

    Pour the remaining condensed milk over the finished waffles.

    Wafers with chocolate drops


    You will need:

    • chocolate drops - 100 g;
    • egg - 4 pcs.;
    • flour - 1 tbsp;
    • butter - 200 g;
    • granulated sugar - 1 tbsp.

    Preparation step by step:

    1. 1. Beat the egg with sugar and melted butter.
    2. 2. Carefully add flour into the egg mixture in portions.
    3. 3. Add drops to the finished dough.
    4. 4. Bake waffles for about 2-3 minutes.

    Crispy waffles

    Crispy waffles are mainly prepared using sour cream and margarine.

    With sour cream


    For waffles you need:

    • sour cream - 2 tbsp. l.;
    • granulated sugar - 150 g;
    • egg - 3 pcs.;
    • butter - 100 g;
    • cream - 200 g;
    • starch - 10 g;
    • lemon zest - 10 g;
    • soda slaked with vinegar - 0.5 tsp;
    • vanillin - 1 sachet.

    Preparation step by step:

    1. 1. Beat eggs with sugar, add vanillin and salt.
    2. 2. Melt the butter in a water bath, add cream and sour cream.
    3. 3. Add sifted flour to the eggs. Add the homogeneous mass from step 2.
    4. 4. Add lemon zest and soda to the dough.
    5. 5. Bake in batches for about 5–6 minutes.

    Serve with berries or pieces of fruit.

    To prevent the waffles from drying out the next day, you can prepare them differently: beat sour cream, whites and yolks with sugar separately (sugar is divided into 3 parts). Then mix the yolks, flour, butter, knead the dough. Lastly, carefully add the whites and mix. Bake in the same way as in the previous version.

    Blueberry


    These waffles are perfect for a summer breakfast. The main thing is not to damage their structure during the cooking process.

    What do you need:

    • fat sour cream - 150 g;
    • egg - 1 pc.;
    • butter - 100 g;
    • milk - 140 ml;
    • flour - 190 g;
    • powdered sugar - 100 g;
    • fresh or frozen blueberries - 150 g;
    • salt - 0.5 tsp;
    • baking powder - 1 tsp. no slide.

    Cooking algorithm:

    1. 1. Cut the butter into cubes and leave to melt at room temperature. Then add powdered sugar, baking powder, salt and egg.
    2. 2. Sift the flour and carefully add it to the milk.
    3. 3. Add liquid products to the oil. Knead the dough.
    4. 4. Add blueberries.
    5. 5. Bake as usual, about 4 minutes (depending on the power of the electric waffle iron).

    Banana


    The waffles require the same ingredients as the blueberry recipe. However, the berries need to be replaced with mashed one banana, and sugar with fructose (1/2 tbsp.). If desired, you can add chopped pine nuts and vanillin. The dough can be diluted with warm boiled water if it turns out to be too thick.

    Butter can be replaced with margarine. This will not spoil the taste, and the waffles will become crispier.

    With nuts and pear


    Waffles with nuts and pear are very filling and high in calories.

    For the recipe you will need:

    • sour cream - 1 tbsp. l.;
    • margarine - 1/2 pack;
    • egg - 3-4 pcs.;
    • flour - 120 g;
    • granulated sugar - 100 g;
    • vanillin - 1/2 sachet;
    • hazelnuts - 10 g;
    • chocolate - 1/2 bar.

    Filling:

    • sugar - 1 tbsp. l.;
    • liquid honey - 1.5 tbsp. l.;
    • pear - 3 pcs.;
    • cream.

    The dough is kneaded as in the previous version. Nuts and chocolate are crushed to fine crumbs and added to the finished dough. The pear is cut into small cubes.

    Pieces of pear are placed on the finished waffles, honey is poured over the top and sprinkled with powdered sugar, and the ice cream is served separately.

    No eggs


    Viennese crispy waffles can be made without eggs.

    For the recipe you need:

    • milk - 250 ml;
    • wheat flour - 160 g;
    • butter - 130 g;
    • granulated sugar - 1 tbsp. l.;
    • salt - a pinch;
    • dry yeast - 0.5 sachets.

    Cooking algorithm:

    1. 1. Mix crushed yeast with sugar.
    2. 2. Carefully add flour to 1/2 portion of milk, stirring constantly. Add yeast with sugar.
    3. 3. Mix the second half of the milk with cooled melted butter. Add to flour. Knead the dough.
    4. 4. Bake for approximately 2-3 minutes.

    Unsweetened Viennese waffles

    Unsweetened, delicious waffles are suitable for those who are on a diet or want to give up sweets.

    With hard cheese

    For the recipe you will need:

    • cheese "Russian" - 100 g;
    • olive oil - 50 ml;
    • flour - 250 g;
    • low-fat sour cream - 250 g;
    • egg - 3 pcs.;
    • semolina - 50 g;
    • salt - to taste;
    • baking powder - 1 pack.

    Cooking method:

    1. 1. Leave the sour cream at room temperature for about an hour. Add semolina. Let it swell for half an hour.
    2. 2. Beat eggs with butter, add salt.
    3. 3. Sift the flour and add to the egg-cream mixture.
    4. 4. Grind the cheese on a grater. Add to sour cream and semolina.
    5. 5. Knead the dough from the resulting products.
