How to make jelly recipes. Jelly with fruits - a light and bright delicacy

Before you start preparing any gelatin dish, it must be diluted in water. The most important thing is to learn how to do it correctly. We initially dissolve gelatin in cold water, and then heat the solution, brought with additional water to the volume we need.

There are some tricks:

  • It is very important to observe all the necessary proportions, this is done so as not to end up with rubber. If you have 20 grams of gelatin, then mix them with one liter of water. You will end up with dangling jellies. A little more gelatin (from 40 to 60 grams) for the same liter of water, we get jelly that will need to be cut.
  • Gelatin should not be boiled under any circumstances, otherwise it will simply thicken and that’s it.
  • To make the fruit dish look beautiful and the gelatin to be evenly distributed in the mold, you need to finely chop the fruit.
  • Do not cool the gelatin in the freezer, otherwise you will get a crystallized mass.
  • Be sure to pay attention to the expiration date of gelatin; expired gelatin can let you and the entire dish down.

Here are some recipes using gelatin.

1.Dairy dessert

We need less than a tablespoon of gelatin, half a glass of water and two and a half glasses of milk. We will also add three large spoons of sugar and a little vanilla.

First of all, pour the gelatin powder into cooled boiled water and leave it to soak for half an hour, after which we squeeze it out thoroughly. Milk must be heated to a boil and sugar added to it. Boil further with sugar, and then remove from heat. Constantly stirring the milk, add our squeezed gelatin to it.

Let the resulting mass cool and season it with a little vanilla. Mix everything thoroughly and strain using a strainer or gauze napkin. Pour the prepared mixture into molds and place them in a cool place. When you are ready to serve the jelly, you need to place the molds in hot water for a couple of seconds and then it will come out of the molds well.

2. Chocolate soufflé

For this dish we will need 8 eggs, 200 grams of powdered sugar, a liter of milk, 50 grams of cocoa, 25 grams of gelatin and a couple of packets of vanillin.

We separate the eggs, not the yolks and whites. Mix the yolks with powder and add cocoa powder and milk to them. Cocoa must first be diluted with milk. Bring the mixture to a boil over low heat, stirring constantly. Remove and continue stirring, add gelatin soaked in cool water. The whites must be whipped together with vanilla powder into a stable foam, and in a foamy state, add them to the cooled mass. Stir, pour into molds and place in a cool place.

3. Yogurt jelly

We need 40 grams of gelatin, a little more than half a glass of water, boiling water, two tablespoons of yogurt, 100 grams of sugar, the zest of half a lemon, 2 tablespoons of an alcoholic drink - cognac or rum (to your taste).

The gelatin, left for some time in very cold water, is poured with boiling water and stirred very well. Pour yogurt there, previously whipped with sugar. It is better to beat the yogurt by steaming it, this will make it fluffier. Add the grated prepared zest and the alcohol you chose to the resulting mixture. Pour the finished mixture into any molds. Be sure to rinse the molds with cold water first.

4. Jelly “Air milk”

We will need: Half a liter of milk, two tablespoons of sugar and 25 grams of vanillin, just a little vanilla will also come in handy.

Soak the gelatin in water and wait until it swells. We dissolve sugar in milk, and you need to boil it, add vanillin to it. Dissolve gelatin in freshly boiled milk and then beat it into a stable foam. Distribute the resulting mixture into prepared molds and place in a cool place. The jelly will be delicious to eat with various syrups and fruit sauces.

5. Berry and milk pleasure

Required: gelatin - a tablespoon, half a glass of water, one and a half glasses of milk, 4 large spoons of sugar and three large spoons of berries of your choice.

Fill the gelatin with water, preferably cold, and leave to soak for half an hour. Meanwhile, prepare the milk base. We take milk and need to bring it to a boil along with half the required sugar. When the milk boils, add half of the soaked gelatin to it. Don't forget to stir constantly. Pour the resulting milk mixture into pre-cooled metal molds. The layer should be approximately 5 centimeters thick.

Place in the refrigerator and let cool thoroughly. When our mixture has hardened, take the molds out of the refrigerator and apply the next layer. this will be berry jelly, after which the layer will be milky again. Berry jelly is also very easy to prepare. Squeeze the juice from the berries and strain it. After straining, the remainder left on napkins is sent to boil along with sugar. Then filter again and add the remaining gelatin to this, stir thoroughly and mix with berry juice.

Gelatin is processed collagen, or a protein found in animal connective tissue. Many people practice consuming 1-2 teaspoons of dry gelatin daily. However, doctors are silent about its full absorption by the body with this use. But at home, you can make all kinds of desserts from gelatin. They are so simple to make that they will not present any difficulties even to a novice cook. The recipes proposed in the article will tell you how to make jelly with a bright and original taste using a variety of ingredients.

Basic cooking method

Per liter of liquid you will need about 40 g of gelatin. Since it is usually packaged in 15 g per package, you will need at least three of them. The contents should be placed in a glass, the remaining volume of which should be filled with cold water. To ensure uniform swelling of the gelatin, stir the mixture every 10 minutes. After 40 minutes, the jelly base can be turned off.

You can save significant time if you start preparing the remaining components of the jelly immediately after pouring the gelatin with water. These can be berries that need to be boiled in a separate container with water and lightly boiled. All that remains is to add the swollen gelatin to the resulting compote. The liquid must be brought to a boil again, stirring continuously, removed from heat and poured into molds.

They need to be placed in the refrigerator for a couple of hours. If the form is roomy enough, you can leave it overnight.

The type of berries or fruits taken does not affect the hardening time of the jelly. The main thing is to ensure that there is no imbalance in proportions: when there is less gelatin than needed, the jelly may not set. If you don’t have time to boil, you can use ready-made juices as a base. To do this, gelatin is also pre-soaked, after which it needs to be dissolved on the stove, and then added to the juice and mixed.

There is no need to limit yourself to the process of pouring gelatin into fruit liquids when you can experiment a little with fillings. You will be able to prepare completely different types of jelly: both in appearance and in taste.

Dessert No. 1 – striped flight

First of all, berry and fruit preparations are made so that the jelly is multi-colored:

  • pears + apples;
  • pineapples + oranges;
  • cranberry + strawberry.

First, one of the liquids is filled with gelatin, after which it must be poured into molds in a layer of about 1-2 cm thick. After an hour of hardening in the refrigerator, the next liquid is added on top of the mixture, which was also brought to a boil after adding gelatin. The forms are again placed in the refrigerator, and similar actions are performed with the remaining products.

If there are not many ingredients, and only a couple are available, then layers of different colors can simply be alternated. To decorate, you can alternately add a piece of fruit or berry to each of them. Experiments are welcome here!

Dessert No. 2 – avalanche

The dessert requires a small amount of ingredients:

  • gelatin;
  • milk;
  • sour berries.

The first step is to prepare the berry-gelatin base, which also needs to be poured into molds. They are placed in the refrigerator in such a way that the contents freeze at an angle. Therefore, wine glasses are perfect as forms for this dessert. The layer frozen in this position will act as a “mountain”.

The second layer will be milky. The mixture of gelatin base and milk is brought to a boil, after which it is added to the glasses. But now they need to be placed in the refrigerator in an even position to harden. The result is a layer of milky snow that adorns the red mountain.

The delicate milky taste and berry sourness combine perfectly.

Dessert No. 3 – a storm in a glass

The recipe contains alcohol, so it is suitable for a feast with friends.

The berry-fruit mixture must first be strained so that there are no fruit fragments or seeds left in it. Before introducing gelatin into the liquid, a small amount of vodka is added to it (1/8 of the total volume). Then gelatin is poured into the mixture and brought to a boil. Small glasses are used as containers into which the finished liquid is poured. To harden, they are placed in the refrigerator.

The berry and fruit base can be replaced with orange juice.

Dessert No. 4 – sour cream

Not too fatty sour cream (1 l) should be whipped with sugar (100 g) using a mixer. Finely chopped prunes in the desired quantity are added to the mixture. Pre-soaked gelatin is brought to dissolution and poured into the mixture. All that remains is to mix everything well and place in the molds.

Although jelly is not an instant dessert that can be used to surprise friends who happen to drop by, it is unlikely to cause much harm to their figure.

Pour the swollen gelatin into the hot raspberry syrup and mix everything. Place the finished dessert into glasses or bowls and place it in a cool place to harden for five hours. The finished dish can be decorated with chopped peaches, raspberries and mint leaves.

After the delicacy has hardened in the refrigerator, the prepared product is turned over onto a plate. The next step is to prepare the milk jelly. It is similar to the previous description. Without stopping, you need to beat and add gelatin, which has been cooled to ambient temperature, and add it to the strawberry jelly.

Jelly at home: photo

There are many ways to make jelly at home. It is made from cottage cheese and sour cream, jam and fruit juice. This list can be continued indefinitely. Experiment, add new ingredients, come up with original forms of jelly - and your dessert will be a success among guests and household members. Bon appetit!

Gelatin is nothing more than processed collagen (animal connective tissue protein), so many girls find it extremely useful to consume one or two teaspoons of dry gelatin daily. Doctors do not comment on how much it is actually absorbed by the body, so it is better to still use it for its intended purpose - to prepare delicious dishes from it, including wonderful and simple desserts. Due to the fact that the product is of animal origin, it should not be eaten by vegans, who are advised to make jelly from pectin or agar-agar as an alternative.

Basic gelatin recipe
Gelatin is taken at the rate of approximately 40 grams per 1 liter of liquid. Since the classic packaging is 15g per package, you need to take about 3 packs. Pour the contents into a glass and top up with cold water. To ensure that the gelatin swells evenly, stir periodically (every 10 minutes), and after 40 minutes the jelly base will be ready. In order not to waste time, as soon as you pour the gelatin with water, start preparing what you are going to make the jelly from. For example, rinse the berries, add water, put on fire, bring to a boil and boil a little. After this, add the swollen gelatin and, stirring constantly, bring your “compote” to a boil again. After that, remove it immediately. Pour the liquid into the molds and refrigerate for at least 2-3 hours, preferably overnight if you have a very deep mold. The jelly is ready!

You can take any fruits and berries - this will not affect the freezing in any way. The only problem may be that the jelly will not set if you do not add gelatin, so measure the proportions accurately. You can take ready-made liquids (for example, juices), then you do not need to boil them. Simply dissolve the gelatin on the stove after soaking, pour into the juice and stir.

Recipes for various types of jelly
In addition to simply filling fruit compotes with gelatin, you can play with fillings and make this dessert interesting both in appearance and in taste!

  1. Striped flight. Make several jelly preparations of different colors - oranges and pineapples, apples and pears, strawberries and cranberries, etc. To begin, fill only one of these liquids with gelatin - pour a small layer into your molds (1-2 cm, depending on the depth of the mold). Leave in the refrigerator for an hour, and then, as the mixture hardens, add the next liquid on top, into which you just poured the gelatin and brought to a boil. Also put it in the refrigerator. Repeat with all remaining products.
    You can make this dessert with one or two ingredients, alternating them often if you don't have many ingredients. You can put a berry or a piece of fruit on the previous layer before pouring a new one... In short, don’t be afraid to experiment!
  2. Avalanche. For this recipe you will need sour berries and milk. First prepare the berry base with gelatin and pour it into molds. Place in the refrigerator so that the mixture is angled in your pan - this dessert will look beautiful in a wine glass. It is necessary that this layer freezes in exactly this position - this will be our “mountain”.
    We will make the next layer from milk - pour the mixture of gelatin base and milk brought to a boil into your glass and place it in the refrigerator in a level position. After hardening, the dessert is ready! A layer of milky snow lies beautifully on the red mountain, and the delicate taste of milk goes well with sour berries. It also tastes delicious with strawberries.
  3. A storm in a teacup. This option is more likely to amuse your friends. It is better to strain the fruit and berry mixture from seeds and pieces of fruit. Before pouring gelatin into the prepared liquid, add a little vodka, about 1/8 of the volume (do not overdo the amount!). After pouring in the gelatin and bringing to a boil, pour the liquid into small glasses and leave to harden in the refrigerator. This recipe can also be made with orange juice.
  4. Sour cream recipe. Take about 1 liter of not very fatty sour cream, beat with a mixer with about one hundred grams of sugar. Finely chop the prunes (the quantity is limited only by your taste) and mix with the resulting mixture. After soaking, bring the gelatin to complete dissolution on the stove and pour into the resulting mass. Mix thoroughly and distribute into molds.
Even a novice cook can handle gelatin, and the variety of ingredients will allow you to constantly experiment. Jelly cannot be called a dessert with which you can pamper unexpected guests, since it still requires time to prepare, but it is an excellent budget option for a homemade delicacy that will not harm your figure (of course, it depends on the filling you choose).
