Pork ribs on the grill: step-by-step recipe with photos

Ingredients for 1 kg of pork ribs:

  • ground paprika - 2 tbsp;
  • marjoram – 1 tsp;
  • hot red pepper flakes or ground – 1 tsp;
  • basil – 1 tsp;
  • cumin (cumin) – 0.5 tsp;
  • salt – 1 tsp;
  • apple – 1 piece;
  • salt - on the tip of the knife;
  • allspice peas - 3 peas;
  • bay leaf – 1 piece;
  • brown sugar – 2 tbsp;
  • thyme – 0.5 tsp;
  • bacon - a couple of slices;
  • onion – 1 piece;
  • apple cider vinegar – 2 tbsp;
  • ketchup – 1 tbsp.

Preparation:

  1. Wash the ribs and remove the films from them. Our ribs were meaty and we did not cut the meat off them. There is no need to cut them into individual ribs, just leave them like that – with a ribbon. In a small bowl, mix all the spices, and first grind the cumin in a mortar. At the same time, there is already such a scent, mmm! You close your eyes and it’s like you’re in an oriental bazaar.
  2. Rub the pork ribs, dried with napkins, with a mixture of spices on all sides.
  3. Wrap in a couple of layers of foil and refrigerate at least overnight.
  4. Now let's start preparing the spread. It needs to be prepared in advance, or the day before. I have four apples in the photo, which is how many were indicated in the original recipe. But this turned out to be a lot, so I did the following: I put the extra spread (sauce) into sterilized jars and put it away for storage until the next time.
  5. We cut the apples into small pieces; there is no need to peel them. Place in a saucepan, top with bay leaf, allspice, thyme, a pinch of salt and half of the brown sugar (1 tbsp). Place on moderate heat.
  6. Stirring occasionally, cook the apples until soft. They will give juice, but I didn't have much of it.
  7. Then take out the bay leaf and puree it in a blender. The puree has such an unusual surreal taste.
  8. Finely chop the onion.
  9. Pour some vegetable oil into a frying pan, add a couple of slices of bacon and fry it.
  10. We take out the fried bacon, we no longer need it, it has served its purpose - the oil has mixed with its fat and acquired a smoky taste and aroma. The bacon can be thrown away or eaten. Place the onion in the pan.
  11. Fry it until light golden brown and add apple cider vinegar.
  12. Stir and add the remaining brown sugar.
  13. Ketchup, my ketchup, by the way, is homemade (here it is).
  14. And applesauce.
  15. Mix everything and simmer, stirring often for 10 minutes. We get a very thick sauce - spread.
  16. The next day, we fire up the grill (or grill) and fry our pork ribs on the grill. Right in the foil. It’s convenient to use a grille for this; you don’t even have to snap it into place. Fry, turning every 10 minutes, for a total of 20-30 minutes on each side.
  17. Then we check the meat for doneness. Remove from the grill, unfold the foil and make a cut in the middle of the ribbon of pork ribs. If the juice that flows out is light, they are ready.
  18. Now the task is to bring them to taste by coating and frying them. To do this, remove the foil; it is no longer needed. Take a silicone brush and apply a thin layer of paste on the top side.
  19. Return the pork ribs to the grill, buttered side down. Fry for 3-5 minutes. Right here, without removing, spread a thin layer on the other side. Turn over and fry again for 3-5 minutes. And we spread the first side again and so on several times: grease - fry, grease - fry.
  20. Remove from the grill and onto the table quickly!
  21. Now we cut it into individual ribs and that’s it – enjoy the delicious meat.

Cooking notes

Cooking ribs is an art that needs to be learned. To ensure that the meat cooks evenly, it is best to trim off excess fat. You can add a special flavor to the meat with wet fruit chips added to the coals or with sour berries placed on the grill.

If the meat is tough, you can make it more tender by marinating it in pineapple juice. It is this fruit that contains a lot of the enzyme bromelain, which makes meat fibers softer, but the taste of the ribs will be very original and may not be to everyone’s taste.

To add piquancy to the dish, you can place slices of chopped apple or your favorite berries on the grill before frying.

First, let's prepare the meat. It must be washed and all film removed from the back surface, which can cause the meat to become tough. The ribs are chopped into pieces; some chefs recommend frying large pieces to obtain a juicy dish. If the meat has been frozen, it must be placed in the refrigerator and allowed to thaw at a temperature of 5 degrees. Do not use auto defrost in the microwave; meat should defrost naturally.

Place the sliced meat in the marinade for at least 4 hours. For best results, let the ribs sit overnight. You need to mash the onion in the marinade with your fingers.

10 minutes before frying, brush the surface of the meat with marinade, this will give the dish a beautiful gloss.

To prepare, take pieces of prepared meat and carefully place them over the entire surface of the grill. Watch the process and turn the meat over in time, pouring the marinade over them.

You need to fry over low heat first, and then add heat. This will make the meat juicy and crispy.

Do not allow the fire to flare up on the grate.

The process of cooking meat takes from 20 to 40 minutes.

Determining the readiness of the meat is not difficult: the crust becomes golden brown, and when a piece is pierced, clear juice releases. Excess fat must be removed, otherwise the dish may not cook well. After cooking, wrap the ribs in foil for a while; this simple move will preserve the taste and aroma of the finished meat.

To obtain soft meat, you can use pineapple juice, the component of which softens the toughest fibers. But ribs with a distinctive tropical fruit flavor aren't everyone's cup of tea.

It’s not difficult to prepare the dish; you just need to choose your favorite pork ribs on the grill according to a recipe with a photo and follow all the tips and cooking rules.

By the way, in addition to its amazing taste and aroma, the dish has beneficial properties. Ribs contain a large amount of protein, vitamins, and elements to maintain normal human life. Pork has antidepressant properties and has a positive effect on the functioning of the heart and blood vessels. With regular use, muscles and bones are strengthened.

Juicy ribs with the aroma of fire and wood are ideal as an appetizer for a foamy drink and are the signature dish of any outdoor picnic. Acquaintances and friends will undoubtedly appreciate this dish, the very process of preparing it already brings great pleasure. Bon appetit!

Simple BBQ Recipe

BBQ pork ribs is one of the most popular dishes North America. Barbecue cooking is a process of simmering a product at a relatively low temperature, during which, when properly cooked, a layer of caramel is formed on the surface of the meat.

The meat acquires a crispy and appetizing crust, an additional effect is that the surface pores of the meat are sealed, the juices do not leave the product, thus creating a tender and juicy dish. In order for a layer of caramel to form on the meat, I add sugar or honey to the marinade.

To make the barbecue of pork ribs look even more impressive when serving, when preparing, you should cut them along each rib, about a quarter. This will make the finished dish easier to separate and fan out. First, simmer the pork ribs in the marinade. This will reduce cooking time and soften the meat.

To prepare the recipe you will need tomato sauce; you can buy ready-made or make it yourself. How to prepare the simplest tomato sauce, watch the video lasting 1 minute 28 seconds.
