We wash and dry the turkey fillet, cut it into strips - this way the meat will cook faster (you can make it easier for yourself if you freeze the fillet a little, this will make it easier to cut).

Melt a piece of butter in a frying pan and add a couple of tablespoons of vegetable oil. Dredge turkey pieces in flour, shaking off excess. Place the meat in the heated oil and fry for about 3 minutes - over high heat, without a lid, stirring regularly.

Place the fried poultry fillet on a plate (cover with a lid to prevent it from getting chapped). Instead, put finely diced onion in the pan. Let it simmer in a frying pan, that is, lightly fry until soft, 1-2 minutes.

Once the onions have softened and begun to golden, return the roasted turkey pieces back to the pan. Pour in dry white wine and evaporate it by about half.

Then add hot water (or chicken broth), salt, black pepper and a sprig of thyme.

Bring the meat to a boil and simmer over low heat for 10 minutes under the lid, and then 10 minutes without the lid to remove excess moisture. Remove the pan from the heat and let it sit for 3-4 minutes so that the broth has time to cool a little.

In a bowl, combine cream, egg yolk (no white required) and mustard. Stir with a fork until smooth and the yolk has completely broken down.

Meanwhile, the contents of the pan have already cooled down a little. Stirring continuously, gradually add the cream mixture. Then return the frying pan to the heat. Slowly heat the fricassee until the sauce thickens, but it is very important not to bring it to a boil (the yolk may curdle). Test for salt and pepper. When it’s ready, don’t rush to serve it right away; let the dish sit for 10 minutes, covered, so that the turkey absorbs some of the sauce.

Serve hot turkey fricassee with cream sauce. It is best to serve spaghetti or mashed potatoes as a side dish. Bon appetit
