Homemade lavash roll. Lavash snacks for the holiday table

What can you wrap in pita bread?

A hearty snack comes with the addition of:

  • meat - pork, beef, lamb, chicken or turkey, which is fried, stewed or cooked in a slow cooker;
  • fish – salted, smoked, boiled, fried, baked;
  • vegetables – fresh, pickled or after heat treatment;
  • dairy products - cheese, cottage cheese;
  • liver and kidneys;
  • mushrooms;
  • pasta and various cereals;
  • seafood - caviar, shellfish and crab sticks.

What sauce can I use?

Mayonnaise, especially homemade one, goes great with lavash. It is prepared by beating egg yolks with sugar, salt and mustard. Gradually pour a little oil into this mixture, and when it reaches the consistency of dough, add vinegar. To enrich the taste, you can add lemon juice, crushed garlic, ketchup, and finely chopped pickles to the sauce.

You can also use sour cream and mayonnaise sauce, which, in addition to the main two ingredients, includes herbs, garlic, pepper and salt. First, the finely chopped ingredients are poured with village sour cream with 20% fat, and then with homemade mayonnaise, and spices are added.

How to serve lavash roll

It all depends on the filling, as some recipes suggest frying or baking the rolls. And, if the filling is sweet, then you can pour syrup on it before serving; if it’s salty, you can garnish with herbs. The roll can be cut into portions and served in the form of rolls.

Is it possible to freeze for future use?

It is unacceptable. In the freezer, the pita bread is not soaked, and the liquid from the filling freezes like ordinary water. When it thaws, the roll will simply unravel.

If you are looking for recipes for pita rolls with different fillings, you are on the right track. Today I will tell you how to prepare a variety of snacks from thin Armenian lavash that will help out both in your daily diet and will come in very handy on the holiday table.

You can choose different fillings for lavash - crab sticks, cheese, mushrooms, chicken, herbs, Korean carrots, ham, red or canned fish, cottage cheese, herbs and even herring oil.

So, let's start debriefing - how and what to cook so that it is tasty, simple, satisfying and beautiful. We will fry the rolls in a frying pan, bake them in the oven and simply, pre-greased with sauce and kept in the refrigerator, cut them for the festive table. There are many recipes, I’ve tried them all on my guests and family members - they’re all good. Choose any!

Rolls with cheese and garlic

The most popular appetizer for any table is cheese with garlic and mayonnaise; it will serve you in different ways. You can simply put it in a bowl and serve. You can roll it into balls like rafaelo, or spread it on pita bread and get several options for an excellent snack.

Preparing the cheese and garlic filling

There is scope for creativity here, so I won’t give exact proportions, experiment, I’ll just give you the basics.

Products:

  1. Hard cheese or good quality processed cheese;
  2. Garlic;
  3. Mayonnaise.

How to cook:

If you use processed cheese, my advice is to put them in the freezer for a while, they will shred better.

So, grate the cheese (on a fine grater the appetizer will be more airy, on a coarse grater it will be denser, see how you like it). The garlic was crushed, mayonnaise was added (it is better to use homemade mayonnaise), everything was thoroughly mixed, put in a bowl and decorated, that’s it, you can serve.

Second option- roll the appetizer into Rafaelo-type balls, you can put nuts or prunes inside, you can roll them in coconut flakes or chopped nuts. Place beautifully on a lettuce leaf - the appetizer is ready!

Third option- take thin pita bread, grease it with a little mayonnaise first so that our pita bread is soaked and not dry, apply the appetizer, roll it up and put it in a bag in the refrigerator. There it will soak for a couple of hours and can be cut for the table.

Advice: know when to stop - if you add too much mayonnaise, the roll will fall apart when slicing; if you spread too little, it will be dry. You can also do this: immediately cut the pita bread into strips of the desired size, and then form them into rolls.

This lavash snack is perfect for a festive feast and for breakfast for household members.

Components:

  1. Champignon mushrooms (or others to taste) – 300 g;
  2. Cheese – 100 g;
  3. Lavash - 1 of 2 sheets;

First, let's prepare the filling. Wash the mushrooms and cut into slices.

Rolls with mushrooms and cabbage

We prepared the filling in the evening, in the morning we just wrapped it in sheets, put it in a frying pan, a couple of minutes - the tea boiled, the pancakes were ready - here you have breakfast for the whole family. Cheap and cheerful, as they say in Odessa. You can change the fillings, experiment and get a different taste each time.

Ingredients:

  1. 2 Armenian pita breads, 2 sheets each (makes 10 rolls);
  2. 0.5 kg fresh champignons;
  3. 1 small fork of cabbage;
  4. 2 carrots;
  5. 0.5 kilos of onions.

Cooking process:

  1. Peel the mushrooms - remove the skin, wash, cut into thin slices. Next, take 4 onions, cut into cubes and fry in sunflower oil (take refined oil so that there is no smell).
  2. Add mushrooms to the fried onions (when they are already golden) and begin to fry them along with the onions. Meanwhile, chop the cabbage, pour half a glass of water into the cauldron and put the cabbage to simmer over low heat under the lid. Stir it like this periodically – either the cabbage or the mushrooms.
  3. When the mushrooms are thoroughly fried, salt them, add spices (I added dried dill, you can use fresh dill if available), ground ginger, and coriander. Then I added a spoonful of tomato to the mushrooms and mixed everything thoroughly.
  4. At this time, our cabbage was already stewed - we look and try. It should not become soft, that is, when you try it, there should be such a slight crunch in it - then the filling will turn out delicious.
  5. I add the mushrooms to the cauldron with the cabbage, mix everything, add salt and spices again (we don’t have any cabbage yet), let it boil and turn it off.
  6. That's it, put it on plates and let the filling cool. Once your filling has cooled completely, unwrap the pita bread. Place the filling on it along one edge, wrap it into a roll, and cut it.
  7. Place the frying pan on the stove, pour a little oil, and when the oil is hot enough, place your lavash pancakes on it. Literally a minute or two and they will be ready, so watch carefully and turn them over on time.

As soon as the pancakes are browned, remove and place on a plate. They are so delicious - golden brown, crispy and just melt in your mouth! Pour tea or juice into cups and feed your household. Bon appetit!

Bean rolls

This is a wonderful and tasty dish for Lent; you can cook it for breakfast for your family, take it with you to work, or take your child to school. Nourishing and healthy, because beans have many beneficial properties, and when else can you eat them, if not during Lent?

  1. I buy red beans and soak them in water overnight. In the morning, I drain the water and let our beans cook over low heat. While it is cooking, I fry an onion in a frying pan (cut it into cubes), carrots (usually grated on a coarse grater) and put it aside.
  2. When the beans are ready (that is, completely soft, but not to such a state that they fall apart), you need to pound them with a mortar, just like mashed potatoes.
  3. Then we add our overcooked onion with carrots to it, salt, pepper, and add any spices to taste. You can (even need to) add finely chopped herbs (whatever you like or what you have on hand), I prefer cilantro, parsley or dill.
  4. Mix it all well, and if you see that the filling is too thick, add a little butter. But don’t overdo it, our rolls will still fry in a frying pan.
  5. That's it, unroll one sheet, spread with filling, roll into a roll and cut into five pieces.
  6. We got these cute pancakes. Fry them in butter in a frying pan for just a minute or two until golden – place them on a plate, pour some tea and start eating. Bon appetit!

Lavash with liver pate and cheese

A very simple snack option, both for breakfast and for an afternoon snack, served with mustard.

We will need:

  • A little pate
  • Pita
  • Mayonnaise

Place a sheet of pita bread on the table, place circles of pate along the bottom edge, and grate cheese onto it. Roll the pita bread into a roll and cut into pieces.

Heat a little oil in a frying pan, add the pancakes, and fry for literally a minute on each side.

That's it, the crispy, delicious lavash pancakes are ready, you can pour some tea and have breakfast!

Making herring oil at home

For many years I have been preparing herring butter at home for sandwiches.

Or I spread it on thin Armenian lavash and make rolls from it for the holiday table. In any case, this snack leaves no one indifferent; everyone eats it with pleasure. It’s hearty and tasty, it’s quick and easy to prepare, I recommend it!

Products:

  • 1 large fatty salted herring (choose saltier, it will be tastier)
  • 2 processed cheese without additives
  • 0.5 sticks of butter
  • 1 large carrot cheese

How to make herring butter recipe with carrots and processed cheese - very tasty!

Freeze the cheeses and butter a little first to make it easier to process. Wash and peel the carrots.
We fillet the herring and remove all the bones.

Mixed everything well, tasted it - if the herring was lightly salted, it might need some more salt.

Now the resulting homemade herring oil can be used to spread on sandwiches.

Rolls stuffed with herring butter

We buy Armenian thin lavash, usually there are 2 sheets per package. We unfold the first sheet, grease it lightly with mayonnaise (the main thing is not to overdo it, otherwise the rolls will fall apart too much), and you can’t not spread it with mayonnaise, because it will be dry. Ingredients:

  • 2 slices of thin pita bread;
  • 200 grams of processed cheese;
  • 200 grams of salmon;
  • 100 grams of red caviar.

Cooking method:

  1. Let's start working with the pita bread: unroll it and grease it with melted cream cheese. If desired, you can take cheese with additives, for example, the taste of mushrooms or ham would be appropriate.
  2. We grease the pita bread carefully, it is important that future rolls are not damaged, so do not rush.
  3. We cut the salmon into slices; it is not necessary to chop the fish too much; neat oblong pieces will do just fine.
  4. Spread the salmon evenly on the pita bread, add red caviar (you can sprinkle the caviar first, then lay out the fish, some housewives claim that this is more convenient).
  5. Roll the roll tightly. Now you need to wrap it in cling film and put it in the refrigerator for several hours so that the snack is thoroughly soaked.
  6. Remove the rolls from the refrigerator and cut them diagonally into pieces about 3 centimeters.

  3. Then, put another leaf, and place the pre-dried lettuce on it. The last sheet should be greased with mayonnaise and thin slices of fish should be placed on it. Carefully roll it into a tight roll and wrap it in cling film. Leave in the refrigerator for 2 hours and you are ready to serve. You need to cut with a sharp knife soaked in water.

Lavash roll with cheese and herbs

Insanely easy, but very tasty and beautiful appetizer! Believe me, this dish can surprise even the most demanding gourmets! Soft and juicy Armenian lavash, delicious cheese filling, which is accompanied by a subtle aroma of garlic, and a light taste of fresh herbs... Well, who can resist such a treat!

Ingredients:

  • processed cheese – 400-500 g
  • chicken eggs – 4 pcs.
  • garlic – 3-4 cloves
  • thin lavash (Armenian) – 3 pcs.
  • chopped dill - 3 tbsp.
  • head of lettuce – 1 pc.
  • mayonnaise - to taste

Cooking method:

  1. So, first of all, let’s boil the eggs (hard boiled, of course). Then we cool them and clean them. Grate the peeled eggs on a coarse grater or chop them finely with a knife (or mash with a fork).
  2. After this, grate the processed cheese (or you can crush it with the same fork). We separate the salad into individual leaves, wash them thoroughly and dry them (put them on a paper towel). If you wish, you can chop them a little (or just tear them with your hands), however, as a rule, the leaves are laid out whole.
  3. We rinse the dill greens very well under running cold water (by the way, it doesn’t have to be just dill, you can safely use any other of your favorite greens). Dry it and chop it finely.
  4. Mix crushed eggs with melted cheese, then add chopped herbs to the cheese-egg mixture. Peel the garlic and chop it very finely (either grate it on a fine grater or pass it through a garlic press). Then we send it to eggs with cheese and herbs.
  5. After this, fill the resulting filling with mayonnaise and mix everything very thoroughly. It should be noted that the more mayonnaise you put in, the better the pita bread is soaked and, thus, it will be softer. However, do not overdo it so that your filling simply floats out of the roll.
  6. Place one thin fresh sheet of Armenian lavash on a comfortable work surface, and lettuce leaves on it. Now put the cheese and egg filling on the salad. Then lay out the next sheet of pita bread and repeat the procedure. Place the pita bread again (this is the last one), then the greens and filling.
  7. Next, wrap the pita bread into a roll (try to squeeze it tightly while rolling). We wrap the finished roll in cling film (foil or a simple plastic bag) and put it in the refrigerator to steep for about an hour and a half (or better yet, a couple of hours).
  8. When serving the lavash roll with melted cheese to the table, cut it into equal portioned pieces (approximately 2-3 centimeters wide) and place them on a beautiful dish that you can decorate with lettuce, herbs, cherry tomatoes or olives.

Lavash rolls with melted cheese and tomatoes

Ingredients:

  • thin lavash 1 piece
  • soft processed cheese 100 g
  • tomato 2 pcs
  • sprigs of parsley and dill 6 pcs
  • vegetable oil
  • 10 g green
  • onion feathers 3 pcs

Cooking method:

  1. This dish is very simple to prepare. For it we will need thin Armenian lavash, it is better to buy lavash in the shape of a rectangle, it looks better in the finished dish, because it has smooth edges and, accordingly, is more convenient to roll into a roll.
  2. The pita bread should be soft and not burnt (this happens), otherwise we will have to fry it anyway, but more on that later. As for cheese, it is better to use processed soft cheese (like Viola, Hochland) with a classic creamy taste.
  3. To begin with, we take our pita bread and spread it over the entire surface (on one side) with a thin layer of cheese (2-3 mm).
  4. Now cut the tomatoes into cubes and finely chop the greens. Place the tomatoes on the pita bread with cheese first, then the greens. We spread it over the entire surface of the pita bread, but not in a very thick layer, that is, the pieces of tomato and herbs should be located quite freely from each other.
  5. Heat a frying pan with vegetable oil over high heat and lay out our roll to fry. Within a few minutes, the roll acquires a golden brown crust (do not overcook the pita bread in the pan, it will turn out tough).
  6. As soon as one side is fried, turn the roll over and fry the other side.
  7. Cut the toasted roll into mini-portioned rolls and serve. This dish is wonderful both warm and cold. Great for picnics. The taste is delicately creamy with subtle notes of greenery. In short, it’s very tasty, I advise everyone to try it.

  7. We lay out two pita breads on the table, one on top of the other, that is, the base of the roll turns out to be two-layered.

  9. Roll the pita bread widthwise into a roll.

  11. Place sour cream on the surface of each roll (about 1 tbsp per piece) and distribute evenly.
  12. My miracle oven only bakes on top, so after one side of the rolls was toasted, I turned them over, brushed them with sour cream and put them back in the oven.
  13. The total baking time is 15 minutes at a temperature of 200 degrees.
  14. In principle, instead of an oven, you can use a microwave with a grill to melt the cheese and fry the roll.
  15. These are the two “beauties” we got. Of course, they were immediately mercilessly cut up and eaten.
  16. True, by some miracle, several pieces survived until the morning and were eaten cold.
