Start with the simplest thing: fold the lavash leaves into triangles, fill them with something tasty and healthy - and voila!, the Christmas trees have grown and are asking to be eaten.

Ingredients:

  • 5 round sheets of pita bread;
  • 150 g cream cheese;
  • 10 slices of lightly salted salmon;
  • a few leaves of green salad;
  • bunch of dill.

Cut the lavash sheets in half - you will get 10 semicircles.

Grease each piece with cream cheese, place a leaf of lettuce and a slice of fish on top. Visually determine the center of the straight line along which the pita bread was divided, and begin to fold triangles, the vertex of which is this central point. As a rule, 4-5 bends are obtained.

Place the finished triangles on a dish (an oblong plate with a “forest” growing on it looks good), put a small layer of cream cheese on top of the pita bread, and sprinkle with finely chopped dill pine needles.

Christmas tree sandwiches for little ones

Children often perceive the world through pictures - and the brighter they are, the more fun and meaningful they are for the child, the better the information about the world around them will fit into little blond and dark-haired heads. Are you planning to prepare profiteroles with salmon mousse for the New Year's table? Adults will probably appreciate it, but what about kids? I suggest making funny Christmas tree sandwiches for them: the base will be the same mousse, however, the overall picture will compare favorably with the “adult” version.

Ingredients for 3 sandwiches:

  • 6 slices of white bread;
  • 1 boiled carrot;
  • a piece of bell pepper for decoration;
  • 5 tbsp. l. soft cottage cheese or cream cheese;
  • 50 g boiled salmon;
  • salt to taste;
  • a small piece of celery stalk.

Mash the fish with a fork until smooth, add half the cottage cheese or cheese, add salt and stir again.

Cut off the crusts of the bread and shape each slice into a triangle. Make sure that all the cut pieces are the same size.

Spread fish cream on three slices of bread and cover with the remaining three.

We cut out decorations from carrots and peppers - Christmas balls, a star, garlands. We “decorate” the Christmas tree, do not forget to install a “trunk” from a piece of celery at the base of the tree.

Christmas tree garnish – cauliflower and broccoli with béchamel sauce

Traditionally and out of habit, we cook potatoes as a side dish, which no one traditionally eats on New Year’s Eve. Let's try to deviate from the rules? Healthy vegetables, wrapped in a delicate milky sauce, laid out in the shape of a shaggy spruce - in my opinion, such a dish will not only decorate the holiday table, but also perfectly diversify the menu, creating the necessary balance between heavy appetizers and substantial dishes.

Children perceive everything unusual with delight - and even the hated cabbage, which on ordinary days they refuse to eat, will become a holiday and a reason for joy for them if the vegetables are served in an original and non-standard way.

Ingredients:

  • 400 g cauliflower;
  • 400 g broccoli;
  • 50 g hard cheese;
  • 1 tbsp. l. flour;
  • 1 glass of milk;
  • 50 g butter;
  • nutmeg, salt to taste;
  • cherry tomatoes for serving.

Boil broccoli and cauliflower alternately in salted water. Grease the baking dish with a small piece of butter, put the rest of the butter in a well-heated frying pan (heat is minimal), sprinkle with flour, stir until smooth and add milk a little at a time, each time stirring the sauce until it has an even, smooth texture. Add a pinch of nutmeg, add cheese, stir. Turn off the fire.

Place broccoli in the center of the mold, giving the inflorescences the shape of a Christmas tree. Don't forget about the barrel. Fill the remaining space with cauliflower. Pour the sauce over the vegetables and bake in an oven preheated to 200 degrees for about 15 minutes. When serving, garnish with cherry tomatoes.

Fruit snacks on skewers

I have a suggestion - let's decorate the Christmas tree! Well, just don’t laugh sarcastically, listen to the end.

You can buy an inexpensive cone-shaped foam base at flower shops. If you don’t have time to look for something ready-made, roll a piece of whatman paper into a cone, cut off the excess along the base, and blow foam inside. After drying, again remove what is unnecessary - and you will have the same wonderful base that can be decorated! Cover it with a clean sheet of green paper (foil is a good substitute: simple and elegant) and get creative.

Thread pieces of fruit, cubes of delicious cheeses, shrimp and olives, grapes and ham onto skewers, and insert the sharp end of the skewers into the prepared cone base, forming “Christmas tree needles.” This table decoration will attract a lot of admiring glances, no doubt about it!

One side of the “Christmas tree” can be made for children (pieces of banana and apples, slices of tangerine and mango, cheese like “Russian” and cubes of homemade boiled pork), the second side can be decorated for adults (dor blue and brie, smoked ham and thin slices of salami, pickled olives and stuffed chili peppers).

Cake “Woodpile” - a classic for children’s New Year’s table

A holiday without a cake is not a holiday at all, and don’t argue! Even if you are indifferent to sweets, do not forget that children are still waiting for dessert, so I recommend paying special attention to this moment. Let the fashionable “Sacher” and the popular “Esterházy” stand aside, today is the time for delicious homemade baking according to grandmother’s recipes.

In our family, for the New Year, we traditionally bake the “Woodpile” cake - crispy “firewood” with sour cherries, carefully covered with sweet sour cream “snow”. And tell me that your children will not appreciate the fairy tale about how forest animals prepare firewood for Santa Claus, knowing that before the New Year he has a lot of things to do, that he is busy selecting gifts for each child, that after the chimes strike his 12 times on the night from December 31 to January 1, the old wizard comes to his house, where no one has lit the stove... and there is nothing to light it with. Forest animals are sympathetic people: they worry about grandpa, that’s why they collect firewood for him! Maybe you can try the cake for now, and in the morning while walking you will also think about someone else? And not necessarily about Santa Claus - birds, for example, also need attention!

Ingredients for the dough:
250 g butter;
200 g sour cream;
3.5 cups flour;
1/3 tsp. salt;
1/3 tsp. soda

Filling ingredients:
1000 g cherries, canned in their own juice (can be replaced with frozen berries).

Ingredients for cream:
700 ml fat sour cream;
2 cups powdered sugar.

From these components, knead a soft dough that does not stick to your hands. We divide it into 15 parts, roll each ball into a long rectangular strip about 5 cm wide. We lay out the cherries in a row along the length of the entire strip, roll them into a tube and pinch the edges. In this way we form all 15 “logs”.

Bake the tubes at 180 degrees for about 25 minutes. After cooling, remove from the baking sheet.

Beat the sour cream with powdered sugar and begin assembling the cake.

Place 5 “logs” on a fairly large dish. Pour a little cream and place 4 “logs” on top. Cream, then 3 tubes, cream, 2 tubes, cream, last tube. Fill the cake with the remaining cream and leave to soak. During the soaking process, scoop up the sour cream from below with a spoon and periodically pour the cake over the top.

Before serving, the Woodpile can be sprinkled with grated chocolate if desired.

Cupcakes “Christmas trees” - cream needles

Well, based on the principle that there can never be too much sweets on a children’s holiday table (and not only on a children’s table), I suggest whipping up some quick cupcakes - funny cupcakes with a huge top of cream. It has been tested more than once: the kids will devour such baked goods in an instant, so don’t hesitate and be sure to bake!

Under each cupcake you can put a piece of leaf with a number that will determine the number of the forfeit; based on the results of the tea party, the children will be happy to do the tasks that you prepare for them in advance: number one is to go to the neighbors for snowdrops for soup (and don’t forget to congratulate them on the upcoming holiday!), number two - call your godmother and ask if she forgot to turn off the gas under the saucepan with milk, number three - depict a cuttlefish with facial expressions and gestures, postures and movements, and so on.

Ingredients:

  • 2 eggs;
  • 100 g chocolate;
  • 70 g butter;
  • 1/2 tsp. salt;
  • 1/2 tsp. soda;
  • 1/2 tsp. baking powder;
  • 150 g flour;
  • 150 g sugar;
  • 200 ml milk.

Ingredients for cream:

  • 150 g white chocolate;
  • 200 g butter;
  • 200 g powdered sugar;
  • 2 tbsp. l. spinach juice.

For decoration:

  • strawberries by the number of cupcakes;
  • small sugar figures of different colors (it is convenient to use those offered in Easter sets).

Separate the yolks from the whites.
Sift together flour, salt, soda, baking powder.
Beat softened butter with sugar, add yolks. Gently pour in the melted chocolate, continuing to whisk.

Add half of the flour mixture and stir. Pour in half the milk and stir. Stir the remaining flour. Stir the remaining milk until smooth.

Beat the whites until they form a stable foam; using a wooden or silicone spatula, carefully fold them into the dough.
Using a spoon, spoon the dough into the molds and fill them 2/3 full. Bake in an oven preheated to 180 degrees for about 25 minutes.

After complete cooling, we begin growing Christmas trees.
Beat softened butter with powdered sugar and spinach juice until fluffy. Add melted chocolate, continuing to beat until smooth.

Glue a strawberry in the center of each cupcake (dropping a small amount of cream). We transfer the remaining cream into a pastry envelope and, using a suitable nozzle, decorate the cupcakes with “needles”, starting from the base of the strawberry “Christmas tree” and moving upward in a spiral. Decorate with sugar stars-hearts-snowflakes. Don't forget about forfeits!

Porridge with reindeer sausages

I propose to declare breakfast on January 1st a holiday. For us adults, a bowl of yesterday’s Olivier and a couple of dried sandwiches with caviar seem like a completely worthy option after New Year’s Eve, but for some reason children are delighted with completely different things. For example, sausages - due to their low availability (I don’t buy them!), my child seriously considers them a holiday food! I suggest pampering a person - a couple of times a year is possible.

Ingredients:

  • 1 sausage;
  • 1/3 cup rice;
  • 1 cherry tomato;
  • 1 tbsp. l. butter;
  • 2 peas or corn kernels;
  • salt to taste.


Boil the rice in a sufficient amount of salted water, drain the water and rinse the cereal with boiling water (we are not cooking porridge, but just rice as a side dish, so you can resort to this method).

Clean the sausage and cut it in half. On both sides (rounded) we make longitudinal cuts approximately half the depth of the sausage (more precisely, half the sausage). Lightly fry in butter - the cut “horns” will move apart under the influence of temperature, acquiring the desired shape.

Place the rice in a deep plate. We insert the sausages on one side of the plate, submerging them slightly into the grain - you get deer horns. Place a cherry tomato (nose) in the middle, and use peas to mark the eyes.

An excellent holiday breakfast is ready - all that remains is to tell how long the deer ran to your child, jumped over hummocks, fought with the winter winds, carrying another tiny gift from Santa Claus through the snowdrifts. Well, and, of course, give them a box with a puzzle or a set of colored pencils.

Sugar cookies “Deer horns”

For me, January 1 has always been an unfavorite day: the adults were sleeping, I wasn’t allowed to walk around the snowy city alone, I watched beautiful snowflakes only through the window, and all day long I had to nibble on candy from gift sets and lazily search for cartoons on TV. Remembering very well my first days of the new year, I suggest organizing a different scenario for your children: getting up together, having a delicious breakfast, sitting in the kitchen and playing with dough.

Ingredients:

  • 1.5 cups flour;
  • 150 g butter;
  • 1 cup of sugar;
  • 1 egg;
  • 1/3 tsp. salt;
  • 1/3 tsp. soda

For decoration:

  • 30 ml cream with 33% fat content;
  • 50 g chocolate;
  • multi-colored round jelly beans like “M&M’s”.

Grind butter at room temperature with sugar, salt and soda, add an egg and, adding flour, knead a soft, elastic dough that does not stick to your hands.

Roll out the dough into a layer 3-4 mm thick, cut out cookies using a fairly large glass or round cookie cutter. Place the rounds on a baking sheet (no need to grease them with anything), bake the cookies for about 15 minutes at 200 degrees.

Decorate the cooled cookies. Melt the chocolate and cream, pour the ganache into a ready-made or homemade cornet (or a regular medical syringe - once you get used to it, you can work with it). At the top of the deer’s “head” we draw small deer horns using chocolate mixture. Glue a nose (colored round candy) onto a drop of chocolate in the middle. We designate the eyes (with ganache). Let it dry - and we begin a competition: whose deer can quickly reach the mouth and disappear into its depths!

It is completely pointless to cook separately for such a baby; he is unlikely to appreciate your efforts.

But to interest and accustom your little one to a festive meal, you can make a small and, of course, healthy dish especially for him. As a rule, small desserts are made for such little ones, which they will surely like.

New Year's cake made from baby food

You will need:

Children's cottage cheese, 1 pack. (possible with additives);

Children's fruit puree, 1 small jar;

Children's cookies, 1 pack (Bondi, Hainz);

Milk;

Optionally, finely chopped fruits or berries (banana, cherry, strawberry).

Mix a package of cottage cheese and a jar of fruit puree until a paste forms. Place a layer of cookies (dip in warmed milk first). Enough 6 cookies per layer. Apply a layer of curd and puree slurry on top with a small spoon or silicone brush. Next is another layer of cookies. You can make 3 layers of cookies and 3 layers of cottage cheese, the last one should be cottage cheese. For beauty, the remaining mixture can be beautifully poured onto the edges to create drips. Fruit jelly

You will need:

Compote or juice, 2 glasses;

Gelatin, 25 g;

Fruits or berries (optional);

Sugar, 1 tsp;

Molds.

Dilute the gelatin with juice and leave for one hour so that the gelatin swells. Add sugar to the mixture and heat over low heat, stirring until completely dissolved. Pour the liquid into molds and put in a cool place. The jelly is ready! You can decorate with small pieces of fruit, or you can add them directly to the jelly when pouring into molds. To make the jelly multi-colored, you need to make a jelly liquid from different juices according to the principle described above and pour it in layers.

Dry ginger (powder) (1 tbsp);

Flour (300g);

Cocoa (1 tbsp);

Soda (1/2 tsp);

Mix the dough. Beat the egg with sugar and butter. Gradually add bulk ingredients: flour, cocoa, ginger, cinnamon, cloves, soda. Knead the dough and put it in a cold place for half an hour. After that, we roll out the dough into a thin cake (you shouldn’t make it too thin, but too thick will not be useful, the ideal option is up to 1 cm). We take any molds and cut out the figures.

Let's not forget about this in the bustle of New Year's Eve. When inviting guests, think about the children - with whom will they celebrate this holiday? When thinking through the New Year's Eve scenario, don't forget about the kids - what games will you organize for them? When deciding what to prepare for the holiday table, try for the small participants in the celebration - the New Year's menu for children should be such that they are happy and know for sure: there is a fairy tale!

Festive ideas for the children's table are as abundant as a child's imagination. This is only the smallest part of our collection.

Children's salad "Joyful Doggie"

Any holiday is an occasion to prepare not only the desired dishes for guests, but also to please your own children with something tasty. It’s easy to achieve your goal by preparing a very light and incredibly tasty winter salad.

Required ingredients:

800 grams of fresh or frozen mushrooms;
300 grams of boiled sausage;
8 chicken eggs;
8 potatoes;
4 carrots;
1 can of canned peas or corn;
a couple of tablespoons of low-fat mayonnaise or sour cream;
salt and pepper to taste.

Cooking steps

1. Vegetables should be boiled in their skins, rinsed with cold water, peeled and finely cut into cubes.
2. The eggs are also hard-boiled, after which the yolks are separated from the whites. The yellow part crumbles into the salad.
3. Chopped greens, peas or corn are added to the total mass.
4. This also includes a few spoons of sour cream or mayonnaise and salt. Now all the ingredients are mixed together.
5. A sleeping dog is formed from the finished base. Boiled sausage and egg white are used to “fur” the dog, “coloring” it in a spotted color. Before this, of course, both ingredients will have to be grated on a fine grater.
6. Olives are used as the eyes and nose, while the ideal tongue would be a small piece of sausage.

Salad "Bunch of Grapes"

An excellent meat dish that has become a favorite New Year's Eve treat for many guests.

Required ingredients:

300 grams of ham;
300 grams of grapes;
200 grams of hard cheese;
100 grams of rye crackers;
3 chicken eggs;
a couple of spoons of mayonnaise;
salt and pepper to taste.

Cooking steps

1. The ham is chopped into strips, and the cheese and hard-boiled eggs are grated on a coarse grater.
2. Crackers, mayonnaise, salt and pepper are added to the total mass.
3. The finished base is laid out on a beautiful plate and decorated with halves of grapes on top.

The salad is served to the table immediately after its preparation, before the crackers have time to get wet. By the way, instead of grapes, you can use olives or black olives, lay out the ingredients themselves in layers and coat them with your own homemade sauce.

Lavash snack for children's New Year's table "Christmas trees"

Let there be... Christmas trees in the center of the children's New Year's table! Many, many Christmas trees - shaggy and prickly, cold and hot, bright and fragrant. No ideas? Start with the simplest thing: fold the lavash leaves into triangles, fill them with something tasty and healthy - and voila!, the Christmas trees have grown and are asking to be eaten.

Ingredients:

  • 5 round sheets of pita bread;
  • 150 g cream cheese;
  • 10 slices of lightly salted salmon;
  • a few leaves of green salad;
  • bunch of dill.

Cut the lavash sheets in half - you will get 10 semicircles.

Grease each piece with cream cheese, place a leaf of lettuce and a slice of fish on top. Visually determine the center of the straight line along which the pita bread was divided, and begin to fold triangles, the vertex of which is this central point. As a rule, 4-5 bends are obtained.

Place the finished triangles on a dish (an oblong plate with a “forest” growing on it looks good), put a small layer of cream cheese on top of the pita bread, and sprinkle with finely chopped dill pine needles.

If desired, “Christmas trees” can be decorated with pomegranate seeds, sweet peas or milk corn.

Option for decorating Christmas trees: cream cheese + avocado, turned into paste, and pieces of bright sweet pepper.

Christmas tree sandwiches for little ones

Children often perceive the world through pictures - and the brighter they are, the more fun and meaningful they are for the child, the better the information about the world around them will fit into little blond and dark-haired heads. Are you planning to prepare profiteroles with salmon mousse for the New Year's table? Adults will probably appreciate it, but what about kids? I suggest making funny Christmas tree sandwiches for them: the base will be the same mousse, however, the overall picture will compare favorably with the “adult” version.

Ingredients for 3 sandwiches:

  • 6 slices of white bread;
  • 1 boiled carrot;
  • a piece of bell pepper for decoration;
  • 5 tbsp. l. soft cottage cheese or cream cheese;
  • 50 g boiled salmon;
  • salt to taste;
  • a small piece of celery stalk.

Mash the fish with a fork until smooth, add half the cottage cheese or cheese, add salt and stir again.

Cut off the crusts of the bread and shape each slice into a triangle. Make sure that all the cut pieces are the same size.

Spread fish cream on three slices of bread and cover with the remaining three.

We cut out decorations from carrots and peppers - Christmas balls, a star, garlands. We “decorate” the Christmas tree, do not forget to install a “trunk” from a piece of celery at the base of the tree.

Christmas tree garnish – cauliflower and broccoli with béchamel sauce

Traditionally and out of habit, we cook potatoes as a side dish, which no one traditionally eats on New Year’s Eve. Let's try to deviate from the rules? Healthy vegetables, wrapped in a delicate milky sauce, laid out in the shape of a shaggy spruce - in my opinion, such a dish will not only decorate the festive table, but will also perfectly diversify the menu, creating the necessary balance between heavy appetizers and substantial dishes.

Children perceive everything unusual with delight - and even the hated cabbage, which on ordinary days they refuse to eat, will become a holiday and a reason for joy for them if the vegetables are served in an original and non-standard way.

Ingredients:

  • 400 g cauliflower;
  • 400 g broccoli;
  • 50 g hard cheese;
  • 1 tbsp. l. flour;
  • 1 glass of milk;
  • 50 g butter;
  • nutmeg, salt to taste;
  • cherry tomatoes for serving.

Boil broccoli and cauliflower alternately in salted water. Grease the baking dish with a small piece of butter, put the rest of the butter in a well-heated frying pan (heat is minimal), sprinkle with flour, stir until smooth and add milk a little at a time, each time stirring the sauce until it has an even, smooth texture. Add a pinch of nutmeg, add cheese, stir. Turn off the fire.

Place broccoli in the center of the mold, giving the inflorescences the shape of a Christmas tree. Don't forget about the barrel. Fill the remaining space with cauliflower. Pour the sauce over the vegetables and bake in an oven preheated to 200 degrees for about 15 minutes. When serving, garnish with cherry tomatoes.

Fruit snacks on skewers

I have a suggestion - let's decorate the Christmas tree! Well, just don’t laugh sarcastically, listen to the end.

You can buy an inexpensive cone-shaped foam base at flower shops. If you don’t have time to look for something ready-made, roll a piece of whatman paper into a cone, cut off the excess along the base, and blow foam inside. After drying, again remove what is unnecessary - and you will have the same wonderful base that can be decorated! Cover it with a clean sheet of green paper (foil is a good substitute: simple and elegant) and get creative.

Thread pieces of fruit, cubes of delicious cheeses, shrimp and olives, grapes and ham onto skewers, and insert the sharp end of the skewers into the prepared cone base, forming “Christmas tree needles.” This table decoration will attract a lot of admiring glances, no doubt about it!

One side of the “Christmas tree” can be made for children (pieces of banana and apples, slices of tangerine and mango, cheese like “Russian” and cubes of homemade boiled pork), the second side can be decorated for adults (dor blue and brie, smoked ham and thin slices of salami, pickled olives and stuffed chili peppers).

Salad "Santa Claus"

You will need:

  • 3 eggs;
  • hard cheese – 200 grams;
  • carrots – 1 piece;
  • crab sticks – 1 package;
  • long boiled rice - half a glass;
  • sweet bell pepper (red) – 2 pieces;
  • salt, red and black pepper, peppercorns - to taste;
  • dill, parsley;
  • mayonnaise.

Cooking method:

  1. Boil eggs, carrots, peel.
  2. Grate the carrots on a fine grater, eggs and cheese on a coarse grater. Leave one white to decorate the salad.
  3. Prepare crab sticks. Cut off the red edges and cut the white part into small cubes.
  4. Wash the greens and cut them.
  5. Mix all ingredients, add salt, pepper, seasonings to taste, season with mayonnaise.
  6. Place the prepared salad on a large plate. Make a figure of Santa Claus out of it.
  7. Make a “coat” from crab sticks (the red parts that you cut off).
  8. Sprinkle the beard and the edges of the “fur coat” with grated protein and boiled rice.
  9. Cut the pepper into small pieces, use them to make Frost’s rosy cheeks and nose.
  10. Peppercorns will be needed to make the eyes.

Salad "Cockerel"

Ingredients:

  • smoked meat (pork) – 400 grams;
  • bell pepper (different colors - for decoration) - 3 pieces;
  • 1 small onion;
  • cheese – 200 grams;
  • olives (pitted) - 1 can;
  • egg (yolk) – for decoration;
  • salt, pepper, mayonnaise.

How to cook:

  1. Cut the meat, onion and pepper (one part) into small cubes, olives into thin strips.
  2. Grate the cheese on a coarse grater.
  3. Cut the second part of the pepper into rings and set aside - they will be needed to decorate the plumage.
  4. Mix the ingredients (meat, cheese, onion, pepper), season with mayonnaise.
  5. Create the shape of a cockerel. It all depends on your imagination; you can watch a video that clearly shows how to do this.
  6. Decorate the tail, beard, and comb of the bird with pepper and grated yolk. The eyes and beak are like olives. A wonderful New Year's salad "Rooster" for 2019 is ready!

Beef salad “New Year’s wreath”

A hearty salad that is not only very tasty, but also beautifully decorated in the form of a real Christmas wreath. The dish is harmoniously rich in the flavors of boiled meat, boiled potatoes, pickled cucumbers and green olives.

Ingredients:

  • beef (tenderloin) – 300 t;
  • onions – 1 pc.;
  • pickled cucumbers – 3 pcs.;
  • chicken eggs – 3 pcs.;
  • dill – 1 bunch;
  • potatoes – 3 pcs.;
  • mayonnaise – 5-6 tbsp;
  • granulated sugar – ½ tsp;
  • apple cider vinegar – ½ tsp;
  • pomegranate – 1 pc.;
  • canned corn – 1 tbsp;
  • hard cheese – 50 g;
  • olives – 6 pcs.
  • salt, freshly ground black pepper - to taste.

Cooking method

  1. Boil a piece of beef in salted water. Cool and cut the meat into small cubes. Prepare a dish with a flat bottom. Place the glass in its central part. Place the meat around the glass.
  2. Boil the potatoes in their skins, grate using a medium grater. Spread in a second layer. Add salt, season with pepper, grease the layer with mayonnaise.
  3. Peel the onions. Cut into thin half rings, place in a bowl, pour in ½ cup of boiling water. Leave for 5 minutes, drain the water, hold the onion under running cold water, and squeeze a little. Pour in vinegar, sprinkle with granulated sugar, stir and let sit for 15 minutes. Spread the onions in a third layer.
  4. Grate the pickled cucumbers, squeeze a little, and place on top of the onion. Coat with mayonnaise. Rinse the dill, divide into small sprigs, and place on the salad. Take out the glass.

Cut the cheese into thin slices and cut out the stars. Cut the olives into thin slices. Place olive mugs, corn, pomegranate seeds and cheese stars on top of the “wreath”. Place the salad in the refrigerator for an hour.

Salad "Hedgehog"

To prepare it you will need:

  • chicken fillet – 300 gr.;
  • pickled champignons – 1 jar;
  • cheese – 200 gr.;
  • egg – 5 pcs.;
  • Korean carrots – 300 gr.;
  • black pitted olives - jar;
  • onions – 1 pc.;
  • mayonnaise – 200 gr.
  • greenery;
  • salt and spices.

Preparation:

  1. Cut the chicken fillet into strips and form the first layer on the dish.
  2. Cover it with mayonnaise.
  3. Grind the cheese on a fine grater and place a second layer, which we also grease with mayonnaise;
  4. Mix the mushrooms very finely with chopped herbs and form the next layer, which we again cover with mayonnaise.
  5. Three eggs on a fine grater and form the next layer, which we also grease with mayonnaise.
  6. We make the last layer from Korean carrots.
  7. Using olive rings we create spines for our “hedgehog”.
  8. We compare the finished dish with the picture and serve.

It is also impossible to imagine a New Year's table without snacks. It can be very different and consist of all kinds of products.

Cheese cones

This appetizer comes together in minutes and is perfect for New Year's Eve for two.

To prepare it you will need:

  • almond flakes – 300 gr.;
  • hard cheese -200 gr.;
  • soft cheese – 500 gr.;
  • mustard;
  • garlic;
  • greenery;
  • spices and salt.

Preparation:

  1. Place the soft cheese in the refrigerator first to harden.
  2. Grate two types of cheese and mix.
  3. Chop the garlic and herbs.
  4. Mix all the ingredients and form them into balls.
  5. Roll them in almonds and make them look like cones.
  6. The finished dish can be placed on a large plate and served.

There must be a hot dish on the festive table. It can be a stuffed bird, a baked piece of meat, with the exception of pork. All kinds of fish would also be appropriate on the table. It can be river, for example - pike or sea. We offer you a win-win option:

“Tender” cake with savoiardi cookies

Airy cookies, canned pineapples and delicate sour cream allow you to prepare an exquisite dessert that is not only tasty, but also very simple, because it does not require baking at all!

Ingredients:

  • savoiardi cookies – 220 g;
  • sour cream (fat) – 550 g;
  • canned pineapple slices – 320 g;
  • granulated sugar – 175 g.

Cooking method

  • Place the sour cream in a bowl, add granulated sugar and mix the ingredients thoroughly using a blender or mixer.
  • Place ½ of the savoiardi biscuits on the bottom of the springform pan. Fill with cream.
  • Open a jar of pineapples, cut the circles into cubes. Place on cookies. Place the remaining cookies on top and pour cream over them.
  • Place the mold in the refrigerator overnight to soak. The cake is ready!
  • Before serving, you can decorate the dessert with pineapple pieces and cookie crumbs.

Sand baskets with apples and meringues

Delicate cakes, the aroma of which is reminiscent of summer, and the fragile meringues are surprisingly harmoniously complemented by the berry flavor.

Ingredients

For the test:

  • wheat flour – 155 g;
  • butter – 85 g;
  • powdered sugar – 35 g;
  • yolks from chicken eggs – 3 pcs.;
  • vanilla sugar – 1 tsp.

For filling:

  • sweet apples – 450 g;
  • butter – 25 g;
  • granulated sugar – 25 g;
  • freshly squeezed lemon juice – 2 tbsp;
  • lemon zest – 1 tbsp;
  • currants, raspberries - 11 pcs.

For the meringue:

  • chicken egg whites – 3 pcs.;
  • powdered sugar – 125 g;
  • corn starch – 11 g;
  • freshly squeezed lemon juice – 1 tbsp.

Cooking method

To prepare the dough, sift the wheat flour, crumble the butter, add powdered sugar, add vanilla sugar, mix until crumbs form. Pour in the yolks of three eggs and mix. Roll the dough into a ball and refrigerate for 25 minutes.

Wash the apples, peel the skin, cut and peel the seeds. Cut into small cubes. To prepare the filling, place the apples in a thick-bottomed saucepan, add butter, granulated sugar and lemon zest. Stir with a wooden spatula and place on the stove over high heat. Keep for 2-3 minutes, then cover with a lid, reduce heat to low and simmer until the apples are soft. Remove from heat.

Remove the dough from the refrigerator. Divide into pieces, roll out into thin rounds and place in muffin tins, pressing into bottom and sides. Place in the freezer for 20 minutes.

Preheat the oven to 195 degrees. Place the molds with the dough on a baking sheet and bake for 10-15 minutes. Remove from oven. Place a layer of apples in the molds, pressing slightly. Arrange several currants and raspberries.

To prepare the meringue, place the egg whites in the refrigerator for 25 minutes, then beat with a blender, adding powdered sugar. Add freshly squeezed lemon juice and beat again until thick, adding cornstarch at the end. Place the resulting mixture into a pastry bag and form a curl on the basket.

Preheat the oven to 140 degrees. Place the baskets for 55 minutes until the meringue is dry. Remove the baskets from the oven and ramekins.

Every mother has already tried many recipes, trying to pamper her kids on holidays and birthdays. And it’s probably already difficult to come up with something completely new. But you can try to find and adapt original culinary ideas for yourself and your children!

Today we offer several recipes, using which you can prepare delicious and, of course, healthy holiday dishes for the children's New Year's table, without spending too much time. We won’t talk about cakes (although we, of course, have recipes for them too), but we’ll collect recipes for healthy desserts.

Desserts with cottage cheese

Candies "Raffaello" made from cottage cheese

Ingredients: 200 g cottage cheese, 150 g sugar, 200 g coconut flakes, almonds.

Cooking method: imitation of Raffaello sweets. Mix everything thoroughly, make balls the size of a teaspoon, put roasted almonds in the middle and roll in coconut flakes. Place in the refrigerator for at least 1 hour.

To remove the almond skin well, pour boiling water over it and let it sit for a while, and the skin will come off very easily.

Strawberries with cottage cheese

Ingredients: 500 g strawberries, 1 orange, 1 packet of vanilla sugar, 3 tbsp. sugar, 4-5 tbsp. milk, 200 g cottage cheese, 150 ml cream.

Cooking method: Wash the strawberries, dry them, set aside four berries for decoration. Peel the rest and cut into two or four pieces. Wash the orange thoroughly with hot water and dry it, remove the peel and cut it into thin strips. Squeeze the juice from the pulp. Stir orange juice and sugar until sugar dissolves. Pour the resulting mixture over the strawberries and place in the refrigerator for 1 hour.

Beat the cream with vanilla sugar into a stiff foam. Mix cottage cheese with milk and add to cream. Place the strawberries in 4 dessert bowls and place the curd mixture on top. Garnish with cut berries and strips of orange peel.

Cottage cheese with apricots

Ingredients:(for four people): 400 grams of canned apricots, 100 grams of butter cookies, ten tablespoons of sugar syrup, 80 grams of chocolate, 500 grams of 20% cottage cheese, 200 grams of cream.

Cooking method: Place the apricots in a colander and then cut into pieces. Place the cookies in a freezer bag or any tight bag, and use a rolling pin or bottle to crush them. Heat sugar syrup (6 tablespoons) in a frying pan, add apricots and lightly caramelize them. Cool. Chop the chocolate into large pieces with a kitchen knife and mix with cottage cheese and four tablespoons of sugar syrup. Whip the cream and add it to the curd mass. Take transparent glasses and lay out layers of butter crumbs (i.e. cookies), curd mass with cream, apricots and cottage cheese again, you can decorate with lemon balm sprigs. Serve well chilled.

Curd tower

Ingredients: per kilogram of cottage cheese - 120 grams of butter, 8 yolks, 300 grams of granulated sugar, nuts, candied fruits or dried fruits (cherries, raisins, dried apricots), a package of colored powder.

Cooking method: Pour boiling water over the dried fruits, rinse well and dry. We rub the cottage cheese through a sieve. Grind the butter with granulated sugar and yolks. Then add one tablespoon of cottage cheese, whisking constantly. Place the finished mass, mixed with dried fruits, in a mold and refrigerate overnight. Before serving, the curd tower can be decorated with colored sprinkles.

Fruit desserts

The fruits most often used for children's New Year's table are apples, bananas, oranges and their combinations.

Apples

Simply baked apples are very tasty. But on holiday we can do something more original:

Ingredients: 3 green apples, 6 dates, 2 tbsp. raisins, 2 tbsp. butter, 4 tbsp. brown sugar, 1 tsp. cinnamon.

Cooking method: Preheat the oven to 180°C. Wash and dry the apples, remove the seeds. Wash the dates and raisins and put them in the apples. Grind butter with sugar and cinnamon. Place the apples in the oven, fill with a mixture of butter and sugar, and place in the oven. Serve warm or cold.

Crumble is a traditional British dessert consisting of baked fruit covered with shortcrust pastry crumbs.

Ingredients: Filling: 4 apples, 1 tbsp. butter, 1 tbsp. sugar (you can use more), 1 tsp. cinnamon.
Shortbread crumbs: 65 g flour, 100 g oatmeal, 3 tbsp sugar, 100 g butter.

Cooking method: Heat the oven to 170-200 degrees. Peel the apples and cut into slices. Grease the mold with oil. Melt the butter, add sugar and cinnamon and add apple slices. Mix everything and fry everything in syrup for 3-4 minutes.

For shortbread crumbs, mix flour, butter, flakes, sugar. Place apples in the mold, crumble on top and place in the oven for 35-45 minutes or until golden brown at 175 degrees. Although the dessert is very tasty without any additions, it is often eaten with vanilla ice cream or whipped cream.

Ingredients: oranges, apples, coconut flakes, chopped walnuts, sugar, if for adults - wine.

Cooking method: Cut the oranges into slices, remove the skin. Core the apples, peel them and cut into slices. Chop the nuts. Place a circle of orange (or apple) on a saucer and sprinkle it with sugar, nuts and coconut. Next, put the apple, the same sprinkling procedure, etc. – layers. Usually they make 3 layers of apples, 3 of oranges. Let it brew for 2 hours.

Before serving - for adults - pour wine over this structure (the recipe calls for dry white wine, but red wine can also be used), for children - with sugar syrup. You can decorate this dessert with whipped cream and grated chocolate or serve with a scoop of ice cream.

Bananas

Fairy tale

Cool a large banana in the refrigerator, peel it, cut a deep wedge-shaped groove in it and fill it with ice cream taken straight from the freezer. Cover the ice cream with melted (but not hot) chocolate and decorate with whipped cream (pre-made can be used). The result is a surprisingly tasty, original and healthy dessert. Ice cream from such a boat cannot be swallowed very quickly, so it will not harm even kids with sensitive throats.

Banana clouds

You will need 4 bananas, 1 tablespoon cocoa, 2 tablespoons powdered sugar, nuts, whipped cream. Mix sugar and cocoa. Roll peeled bananas in cocoa mixture. Sprinkle crushed nuts on top and top with whipped cream.

Or roll bananas, cut into wide slices, in a mixture of sugar and cocoa, place on a dish, sprinkle with pistachios and decorate with whipped cream.

Dried fruits

Prunes with secret

(also known as "Parisian").

Soak the prunes in cold boiled water and remove the seeds, replacing them with walnut kernels. Place the stuffed prunes on plates, covering them with whipped cream on top.

You can pour chocolate over the prunes: melt the chocolate, add 1 tbsp. butter. Fill the molds halfway with chocolate, add prunes, pour chocolate over them. Place in the refrigerator until completely frozen.

Sweet balls

Ingredients: 100 grams of dried apricots, 100 grams of dates, 100 grams of prunes, 20 grams of walnuts, 20 grams of almonds, 2 - 3 teaspoons of honey, coconut flakes, 10 - 15 mint leaves.

Cooking method: Grind dried fruits and nuts by passing them through a meat grinder or in a blender. Add honey to the nut-fruit mixture and mix thoroughly. Scoop the mixture with a tablespoon and form small balls. Roll each ball in coconut flakes and place on a mint leaf.

Sea buckthorn jelly

You need to grind fresh sea buckthorn berries, heat the berry mass to 70 degrees, add sugar and, stirring constantly, bring the sea buckthorn to a boil. For 1 liter of sea buckthorn mass you will need 800 grams of sugar. When the puree boils, you can let the sea buckthorn boil down and pour it into molds. The most important thing about this dessert is that you don’t need to add gelatin! Everything will harden on its own and it will turn out even tastier.

For those who don't mind tinkering a little more and taking different fruits:

You will need two large ripe pears, 200 g of dark chocolate, a glass of warm boiled water, 100 g of ice cream, four slices of fresh pineapple, four peaches.

Wash the pears, dry them, cut them into two parts, remove the seeds from them. Pour 1 glass of water into a 3.5 liter steamer, place the cut pears in it, cover with a lid and cook for 10 minutes. To melt the chocolate, cut it into small pieces, place it in a metal bowl and place it over a pan of simmering water. Wash the peaches and cut them in half, remove the pits. Cool the steamed pears and place on plates. Place a scoop of ice cream in the cooled pear halves and pour melted chocolate over them. Garnish with peach halves and fresh pineapple slices.

Dessert “Tutti-frutti”

You will need frozen strawberries, apples, Chinese pears, bananas, canned pineapple slices, and walnuts. Peel the pear and apple, cut all the fruits and strawberries into pieces, leaving 2-3 berries to decorate the dessert. Break the nut kernels into pieces. Mix everything, pour sweet yoghurt or whipped cream. Garnish with strawberries. The quantity and ratio of fruits is according to your taste. Bananas add sweetness, Chinese pears add juiciness, strawberries and pineapple add aroma, apples add pleasant sourness, and nuts add a piquant taste.

There are other versions of the dessert with the same name.

Ingredients: 1 kilogram of marshmallows, 2 oranges, 3 - 4 kiwis, 2 bananas, 1 half glass of ground nuts, any jam of your choice, 2 packs of vanilla cream, grated chocolate or ground coffee or cocoa (to decorate the dessert).

Cooking method: Pour the cream into a deep bowl (bowl or saucepan) and beat using a mixer or whisk. A dense thick mass is formed. Peel and cut oranges, bananas and kiwi into thin slices. Carefully cut the marshmallow lengthwise. Place some of the marshmallows on a tray or large flat plate, top with bananas and pour in cream. Now again marshmallows, oranges and cream. And the third layer is also marshmallows, now kiwi and cream.

Then put marshmallows on top and spread the jam that you have already prepared on it. And finally, decorate the last layer of marshmallows with any chopped nuts and fill with the remaining cream. Grate a little chocolate on a fine grater (you can replace it with cocoa powder or ground coffee). Now our dessert is ready, we need to hide it in the refrigerator for a day so that it is thoroughly soaked. The cream in this dessert can be replaced to your taste, for example: sour cream or yogurt (low-fat). But then you will need to add a little granulated sugar there.

Ingredients: 2 oranges, 1 apple, 50 g cookies (shortbread), 1 tbsp. sugar, 1 egg.

Cooking method: Cut the oranges in half. Carefully remove the core without damaging the skin. It's better to do this with a spoon. Chop the orange pulp. Cut the apple into cubes. Break the cookies into pieces. Mix everything and fill the orange peel with this mixture. Separate the white from the yolk. Beat the yolk with sugar. Beat the whites into a stable foam. Gently stirring, combine the white with the yolk. Spread the mixture on top of the fruit.

Bake in an oven preheated to 200 degrees until the egg mass is set and slightly golden.

Rice balls with cherries and lingonberry sauce


Ingredients: 1 cup long grain rice, 100 g lingonberries, 100 g dried cherries, 4 tbsp. sugar, 1 tbsp. lemon juice, 0.5 tsp. starch.

Cooking method: Boil the rice and leave for 15 minutes. Dissolve sugar and lemon juice in 50 ml of hot water.
Pour into rice, stir. With wet hands, form small cakes, place a cherry on each and form into balls.

Rub the lingonberries through a sieve. Add 2 tbsp. sugar, 150 ml water, bring to a boil. Dilute the starch in a small amount of water, pour into the syrup, and bring to a boil again. Serve the balls with lingonberry sauce.

Berry risotto

(can be made using strawberries, raspberries, blackberries or blueberries).

Ingredients: half a kilogram of strawberries or other berries, 200 - 250 g of sugar, 200 g of short grain rice, 6 - 7 glasses of milk, two tablespoons of ghee, a teaspoon of refined flavourless vegetable oil, cinnamon or vanilla to your taste.

Cooking method: Wash and dry strawberries or other berries. Set aside 2-3 pieces for decoration. Grind the remaining berries in a blender. Add sugar to the berries, mix and place on low heat (about 10 - 15 minutes). Stir constantly. The milk needs to be heated, but not boiled. Add vanillin or cinnamon there. Heat vegetable and ghee oil in a saucepan. Add rice and fry until rice becomes translucent. Pour the rice with about 1 - 2 halves of warm milk, it should only lightly cover the cereal.

Stirring, cook over low heat until the rice has absorbed all the milk. We repeat the operation again until the milk runs out. When the risotto is almost ready, add berry puree to it and mix well. Serve berry risotto, garnished with whole berries.
