You will need: 500 g of any nuts or sunflower seeds, 300 g of honey, 1 cup of raisins, 3 tablespoons of unrefined sunflower oil.

Fry the nuts in a dry frying pan until golden brown, and then use a food processor or blender to chop into fine crumbs. Add raisins to the nuts and continue grinding. Mix raisins and nuts with butter and add melted honey to the nut butter. The finished halva can be placed on a baking sheet, leveled, and when it cools down, cut into squares, or placed in silicone molds, tamped with your hands and wait until it hardens completely. You will get a beautiful curly halva.

Sorbet is a light, refreshing dessert, the most dietary type of ice cream, without milk and fat. This tasty treat is prepared from fruit or berry puree, with the addition of sugar syrup, citrus or cherry juice. The beauty is that you can use any berries and fruits you like - raspberries, currants, banana, melon, pineapple, orange. Sorbets are served in beautiful transparent glasses or colorful bowls.

Kiwi sorbet

You will need: 7 small kiwis, liquid honey and lime juice (3 tablespoons each).
Remove the skin from the kiwi, cut into slices and place in the refrigerator for a couple of hours. After freezing, mix the fruit with honey and lime juice, beat with a mixer and serve immediately.

Strawberry sorbet

You will need: 400 k fresh strawberries, 3 tablespoons of honey, half a lemon and 50 ml of water.
Dissolve honey in water over low heat and boil until bubbles appear on the surface. While the liquid is cooling, cut the berries into slices and sprinkle with lemon juice. Then grind the strawberries in a blender, combine with the cooled syrup and place in the freezer. Before serving, garnish the dessert with slices of berries and mint leaves.

3. Desserts made from nuts and dried fruits

The combination of sweet dried fruits and aromatic nuts is always a winner. Both of them are very useful. Both of them are quite high in calories, but in reasonable quantities they are even recommended for people who have extra pounds, as they can pacify increased appetite and improve metabolism.

You will need: dried apricots, dates, cashews, sesame seeds - 100 g each, a handful of raisins and 50 g of cashews to decorate the dessert.

Dry the nuts in the oven or fry in a frying pan until golden brown, and then grind in a blender to flour. Lightly fry the sesame seeds in another frying pan. Rinse raisins, dates and dried apricots well and soak in warm water. Remove pits from dates. Mix ground cashews with dried fruits and grind in a blender until smooth. Use your hands to form balls of nut-fruit paste, roll them in sesame seeds and top with cashew nuts.

You will need: 200 g of any nuts, 200 g of prunes, 170 g of dried cranberries, 50 g of brown sugar or powdered sugar, 2 tablespoons of cocoa powder.

You must first grind the nuts and pour 30 grams into a separate container. Add cranberries, prunes to the remaining nuts and chop everything together. And now the fun part: with wet hands, form the resulting mass into balls the size of a walnut, roll each one in a coating made from powdered sugar, cocoa powder and 30 grams of nuts set aside. Place the finished candies in the refrigerator for a couple of hours.

4. Lenten baking

You will need: brown sugar and water - 1 cup each, cocoa and honey - 2 tablespoons each, 1 teaspoon of soda (or a bag of baking powder), raisins and favorite nuts - 100 g each, 100 ml of vegetable oil, cinnamon and nutmeg - each a pinch, flour - how much dough will take, any jam or preserves (optional).

Sift the flour. Chop the nuts. Add sugar, honey and vegetable oil to a saucepan with water, put on fire and stir until the sweets dissolve. In another bowl, combine cocoa, a pinch of salt, spices and soda, add the resulting mixture to the water and stir well. Gradually add flour; the consistency of the dough should resemble thick sour cream. Place the dough in a mold lined with baking paper and place in an oven preheated to 200 degrees for half an hour. The rug can be eaten in this form, but it will be much tastier if you layer it with jam.

You will need: 100 g of brown sugar, 200 g of wheat flour, 100 g of dried apricots, a packet of baking powder, 4 tablespoons of vegetable oil, 250 ml of applesauce, powdered sugar for sprinkling, 1 teaspoon of cinnamon, a pinch of salt.

In a large bowl, combine flour, baking powder, sugar, salt, cinnamon and finely chopped dried apricots. Combine applesauce, pre-mixed with vegetable oil, with the dry mixture. Knead the dough. Grease muffin tins, fill each half with dough (it will still rise) and bake in an oven preheated to 180 degrees for 30-35 minutes. Decorate the finished cupcakes with powdered sugar.

5. Fruit cocktails (smoothies)

It is believed that smoothies began to be prepared in Latin America, and in its modern form it appeared on the tables of Californians obsessed with a healthy lifestyle. A smoothie is a thick cocktail of berries, fruits or vegetables prepared in a blender, with the addition of pieces of ice, green tea, spices, etc. The smoothie has a lot of fiber, so it is very good for digestion.

Fruit and berry smoothie

You will need: 200 g of frozen raspberries and strawberries, 5 kiwis and 2 tablespoons of liquid honey.

Thaw the berries, beat in a blender: raspberries separately and strawberries separately, add 1 tablespoon of honey to each type of berry. Remove the skin from the kiwi and chop, just like the berries. Place in deep glasses in layers: strawberries, kiwi, raspberries.

You will need: green apple, banana, orange - 1 each, 4 kiwis, 5 g fresh ginger, 1 teaspoon green tea, 2 teaspoons honey, 200 ml water.

Cut the banana into slices, wrap in cling film and place in the freezer for half an hour. Squeeze juice from citrus fruits. Prepare green tea, add honey and a slice of fresh ginger (you can replace it with a pinch of powder). Add citrus juice and banana to the cooled tea (don’t forget to strain), chop with a blender, mix with sliced ​​apples, kiwi and chop again.

Vitamin smoothie

You will need: 100 g of frozen strawberries (raspberries, cherries), 1 tablespoon of honey, a large handful of frozen peaches, 3 kiwis, persimmons, apples and oranges.

Squeeze the juice out of the orange. Peel other fruits from skins, stems and seeds, cut into slices, place in a blender and chop. Add orange juice, honey to the fruit and berry mixture and beat again.

Mix both types of flour, sugar, salt, soda.
Separately combine the juice and oil. Gradually adding the dry mixture, knead a soft, non-sticky, tender dough.
Roll it out into a thin layer and cut out cookies using cookie cutters.
Transfer to a baking sheet and bake at 200 degrees for about 10 minutes.

Advice. If desired, you can add finely chopped dried fruits, nuts, and seeds to the dough.

LENTEN MUFFINS

The recipe is so simple that it’s hard to believe that anything good will come out of it. But believe me! Completely simple, almost primitive - but the result is very, very worthy.

2 cups of flour;
1 glass of any fruit juice;
1 cup of sugar;
6 tbsp. l. odorless vegetable oil;
1/3 tsp. salt;
1/3 tsp. soda;
nuts, berries or dried fruits to taste.

Mix dry ingredients. Mix oil and juice. Combine both masses, add berries or nuts. Place the dough in muffin tins and bake at 180 degrees for about 30 minutes. Check readiness with a wooden stick.

Advice. If desired, fruit juice can be replaced with strong tea.

LENT YEAST PANCAKES

Nothing special, just pancakes. Nothing complicated, just mix and wait until the mass doubles. Nothing complicated, just fry as usual. And yet... they are wonderful. Who wants thin lean pancakes with yeast?

2 glasses of warm water;
1.5 tsp. yeast;
1/3 cup sugar;
1/3 tsp. salt;
3 tbsp. l. vegetable oil;
1.5 cups flour.

Mix all dry ingredients, add warm water and oil. Knead a homogeneous batter and place it in a warm place to rise.
Fry in a well-heated frying pan like regular thin pancakes; if necessary, periodically grease the frying pan with oil. Enjoying the lace result.

Advice. Don’t forget to get a jar of grandma’s jam - it greatly improves the taste of lean pancakes.

Lenten desserts - three recipes for family tea parties

GALETTE WITH APPLES

Crispy and very tasty, the galette captivates with thoughts of usefulness: eating piece by piece, you want to think that whole grain flour brings more benefits than centimeters on the waist, and apples share vitamins more generously than calories.

150 g regular wheat flour;
100 g whole grain flour;
100 ml vegetable oil;
100 ml boiling water;
a pinch of salt;
3 large apples;
2 tsp. lemon juice;
1/2 tsp. cinnamon;
2-3 tbsp. l. Sahara.

In a bowl of sufficient volume, mix both types of flour and add salt. Pour in vegetable oil and grind into crumbs. Pour in boiling water and knead into a soft, elastic, non-sticky dough.
Peel the apples, remove the core, and use a vegetable cutter to cut into thin slices. Sprinkle with lemon juice.

Roll out the dough into a thin round layer. Place apples in an even layer over the entire surface of the biscuit, except for 2-3 cm at the edges. Sprinkle them with sugar and cinnamon.
Fold the edges of the biscuit up, carefully place it on a baking sheet and bake at 200 degrees until done - about 25 minutes.

Advice. Add some sea buckthorn or cranberries to the apples - the taste will be completely different!

ORANGE CAKE

The taste of this cupcake is very simple and unobtrusive - just what you need to decorate a family tea party. A simple cooking process, a fairly simple result, simple homemade gatherings. However, do not think that all this simplicity is an indicator of low quality baking - on the contrary, the cake comes out very good: light, aromatic, real.

150 ml orange juice;
zest of 1 large orange;
150 g vegetable oil;
150 g sugar;
380 g flour;
1/3 tsp. salt;
1 tsp. soda;
2 tbsp. l. water;
1 tbsp. l. vinegar.

Remove the zest from the orange and squeeze out the juice.
Mix fresh orange juice with vegetable oil (refined, odorless), add sugar, stir until all the grains are dissolved. Add salt and vinegar, add flour and knead into a homogeneous dough.

In a small container, mix soda and water and add to the dough.
Transfer the dough into a greased and floured pan and bake until done for about 40 minutes at 180 degrees. If desired, sprinkle with powdered sugar and cut after complete cooling.

Advice. If you have time, additionally prepare thick orange syrup and soak the finished cake with it.

GINGER CAKE

Like most Lenten baked goods, due to the absence of eggs in the dough, the cake turns out to be quite loose and crumbly, however, in this case this is not a minus, but rather a plus: a minimum of effort - and for tea you have a piece of ginger joy that melts on your tongue, nice surprising in its richness of flavors.

80 ml refined sunflower oil;
80 g pitted prunes;
80 g sugar;
150 ml strong black tea;
150 g + 1 tbsp. l. flour;
90 g honey (about 3 tbsp);
1 tsp. ginger powder;
1 tsp. cinnamon;
1 tsp. soda;
1/2 tsp. salt.

First, brew tea – strong and rich. For a more interesting result, you should take tea with bergamot, orange zest or candied lemon – the citrus note will fit perfectly into the overall taste, turning an ordinary cupcake into a stylish treat.
Pour oil into a saucepan, add sugar and honey, stir, place in a water bath and heat until the ingredients are completely dissolved.

Cut the prunes into small pieces and roll them in a tablespoon of flour.
Add soda to a saucepan with honey, sugar and butter, stir - the mass will begin to foam and grow. Great, that’s how it should be – add salt, cinnamon, ginger. Pour in the tea. Add flour and quickly mix everything until smooth. The dough will not be thick and pourable.
Add prunes and pour into a greased baking dish. Place in the oven for 40 minutes, temperature 180 degrees. Check readiness with a wooden stick.
The finished cupcake can be decorated with any jam or sprinkled with powdered sugar or cocoa.

Advice. When serving, decorate the cupcake with finely chopped candied ginger.

LENTEN TRUFFLE CAKE

Believe me, this is one of the most incredible Lenten cakes you have ever tried! Incredibly rich, chocolatey, moist and rich in flavor, guests will be blown away. And those who don’t fast, by the way, too.

Cakes:
250 ml of plant milk (soy, coconut, almond, sesame, oat or any other);
300 g flour;
1/2 bar of dark chocolate;
130 ml odorless vegetable oil;
130 g sugar;
3 tbsp. l. cocoa;
1/2 tsp. salt;
1 tsp. baking powder;
1 tbsp. l. lemon juice.

Fruit layer:
150 ml of any jam with a sour taste (currant, plum).

Cream:
270 ml strong tea;
300 g dark chocolate.

Korzh. To prepare the crust, heat the milk. Place the chocolate broken into pieces into a saucepan with milk and stir until completely dissolved. Add sugar, salt, baking powder, cocoa, pour in vegetable oil. Gradually add flour - the dough should be viscous, but flows quite well from a spoon. Add lemon juice and stir quickly again. Place the mixture in a greased pan, bake at 180 degrees for about 40 minutes, check for doneness with a wooden stick.

Remove the cake from the mold only after it has cooled completely. Cut lengthwise into two equal parts.
Using a blender, beat the jam into a homogeneous mass, spread it on the bottom cake layer, and distribute it evenly.

Cream. Prepare in advance two bowls of different sizes that will fit inside each other. You need to put ice in the larger one. Pour freshly brewed warm tea into the smaller one (it’s good if it’s tea with bergamot or orange zest), add chocolate and stir until it is completely dissolved. After this, place a small bowl in a large one filled with ice and begin to whip the cream. It sounds strange, but this is exactly what needs to be done - at first the mass will be liquid (it will begin to seem that everything is lost and the food has been spoiled in vain), then it will gradually begin to thicken. At this stage, periodically turn off the mixer and check the consistency of the cream - when the whisks begin to leave a distinct mark on the surface of the cream, stop, because at this moment it is easy to overbeat the cream (in this case, it will be so thick that you will not be able to grease the cake with it, you will have to cut and lay out in pieces). The final result should be soft, mousse-like and hold its shape well.

Place half of the finished cream on the bottom cake layer, distribute it evenly over the entire surface, and cover with the top cake layer. Spread the other half of the cream on top and sides of the cake.
We leave the cake to soak overnight, after which you can brew coffee and surprise your guests.

Advice. Prepare a little more cream - it makes excellent decorations that can be piped from a pastry syringe.

LENTEN "NAPOLEON"

Layered cakes, custard. Everything is for real, as in, only in the Lenten version!

Dough:
1 glass of vegetable oil;
1 glass of sparkling mineral water;
4.5 cups flour;
1/2 tsp. salt.

Cream:
150 g peeled almonds;
1 liter of water;
300 g sugar;
200 g semolina;
juice and zest of 1 lemon.

Mix oil, water, salt. Gradually adding flour, knead a non-sticky elastic dough. Form a ball and put it in the refrigerator for 2-3 hours. After the specified time, divide the dough into equal pieces (12-15 parts), roll each of them into a thin layer, cut off the excess using an inverted plate, carefully transfer it to a baking sheet, and prick it with a fork in several places. Bake at 200 degrees for 5-7 minutes each until light golden brown.

Grind the almonds into crumbs. Gradually adding water, do not stop working with the blender. Mix the resulting milk with sugar, bring to a boil, add semolina in a thin stream, cook until thickened. Add lemon juice and zest to the cooled cream and blend again with a blender.
Grease each cake with cream, leaving some of the cream on the sides and top. If desired, break one cake layer for sprinkles and decorate the cake.
Leave to soak for at least 5 hours. We serve it to guests and collect compliments.

Advice. If desired, decorate the cake with nuts.

Lenten dessert for a snack

OAT BARS

It's great to have something sweet and pleasant at hand - something that can lift your spirits, satisfy your hunger and at the same time be beneficial. How about homemade cereal bars?

2 cups oatmeal;
2 ripe bananas;
2 tbsp. l. honey;
1/2 cup chopped nuts (hazelnuts, peanuts, cashews, pistachios, almonds and others);
1/2 cup chopped dried fruits (raisins, dried apricots, prunes and others).

Place the oatmeal in a dry frying pan and dry it thoroughly - a pleasant, distinct oatmeal smell should appear in the air.
Lightly fry the mixture of chopped nuts in the same way.
Peel the bananas and mash them into a puree with a fork.
Mix nuts, cereal, dried fruits, puree and honey. Place the resulting mass in a baking pan lined with parchment paper. We level, compact - the thickness of future bars should not exceed 1 cm.

Bake at 180 degrees for about 20 minutes. Cut into bars, leave to cool completely in the mold, then separate from each other, if necessary, wrap in baking paper and store in an airtight container.

Advice. Try adding grated apple or pear to the bar mixture - this reduces the shelf life, but softens and improves the taste.

Craving something sweet during Lent? Prepare apple charlotte without eggs. Combine 200 g of applesauce, 150 ml of orange juice, ¼ tsp. cinnamon, a pinch of vanilla and salt. Pour in 200 g of flour and semolina, 100 g of sugar and beat the dough with a mixer. Place half in a baking dish, generously sprinkle with apple slices and cover with the other half of the dough. Bake the charlotte for 30 minutes at 180°C. This golden brown cake will bring immense joy to everyone.

Poppy miracle

The poppy seed roll was created for the Lenten menu. We dilute 50 g of yeast in 400 ml of warm water, stir in 400 g of flour and let the dough rise. Add another 600 g of flour, 180 ml of vegetable oil, a pinch of salt, knead the dough and keep warm for 2 hours. Cook 200 g poppy seeds with 6 tbsp. l. honey 15 minutes. Roll out the dough into a rectangle 1 cm thick, lay out poppy seeds, 2 bananas and an orange into cubes, roll up. Lubricate it with strong black tea and bake for 30 minutes at 200 °C. You can decorate the roll with fondant made from water and powdered sugar.

Fun muffins

Carrot muffins with dates are a delicious Lenten sweet. Puree 150 g of pitted dates with 50 ml of carrot juice. Add 200 ml olive oil, 300 ml carrot juice, 400 g flour and 1 tsp. baking powder. Pour in 100 g of nuts, knead the dough and fill the muffin molds. Lubricate them with glaze made from 70 g of powdered sugar, 1 tbsp. l. boiling water and 1 tsp. lemon juice and bake for 40 minutes at 180°C. These muffins are convenient to take with you to work or for a walk with the children.

Ruddy sun

Pancakes are quite acceptable on the Lenten menu. In a deep bowl, mix 200 g of flour, 400 ml of orange juice, orange zest, 30 ml of vegetable oil, 4 tbsp. l. sugar and ¼ tsp. ground ginger. Beat the dough with a mixer, pour in 130 ml of boiling water with ½ tsp. soda and mix again. And then fry the pancakes in a heated frying pan with vegetable oil.
