Kvass Frankly speaking, I don't really like this drink. In any case, I will not drink any kvass sold in bottles or jars even in the most terrible heat. At the same time, I remember very well the pleasure with which, as a child, I drank homemade kvass prepared by my grandmother. And all because homemade and purchased kvass are two completely different drinks. I suggest you remember how to prepare homemade bread kvass. This is not an easy and long task, but it is worth it. To prepare it you will need:
  • Half a loaf of rye bread
  • 3 liters of boiled water
  • 25-30 g dry yeast
  • Half a glass of sugar
  • Raisin

The bread should be cut into small slices. Place the pieces on a baking sheet and place in a low-heat oven. Dry the crackers for about 10-15 minutes over low heat, then turn off the oven, leaving the baking sheet in it.

Place the crackers in three liter jar and fill it with water up to the shoulders. Add three tablespoons of sugar and leave to cool. Dissolve dry yeast in a glass of water. When the water in the jar has cooled, pour the diluted yeast into it and stir. Cover the jar with a lid and place in a warm place for 2 days. After this, the kvass must be strained through cheesecloth to separate the grounds. Add the remaining sugar and raisins to the resulting drink, seal it and put it in the refrigerator. After a day you can drink kvass.

And you don’t have to throw away the grounds, but put them in a separate jar. Then it can be used as a starter.

Strawberry kvass Fruit kvass is prepared using a similar technology, only they use fruits and berries as a starter instead of crackers. As, for example, in strawberry kvass. To prepare it you will need:
  • 800 g strawberries
  • 250 g sugar
  • 4 liters of water
  • 25 g yeast
  • 1 teaspoon citric acid

Wash the berries, sort them, mash them slightly, add hot boiled water and bring to a boil. Infuse the decoction for 2-3 hours. Then strain through several layers of gauze, add diluted yeast, sugar, citric acid and leave for fermentation for 6-10 hours. Then strain again, cool and you can drink!

Water – 5 l

Sugar – 100 g

Yeast – 25 g

Honey – 250 g

Citric acid - on the tip of a knife

Raisins – 2 tbsp. spoons

1. Rinse the berries, sort them and squeeze out the juice.

2. Place the remains of the berries in an enamel bowl and fill with water. Bring to a boil, remove from heat and strain after 10 minutes.

3.Add pressed berry juice, sugar ground with yeast, honey, citric acid. Mix everything well and put in a warm place for 1-2 days.

4.Pour the kvass into bottles, after adding 5-6 raisins to each. Store bottles tightly sealed in a cool place.

Mint kvass

Ingredients

Mint – 2-3 sprigs

Water – 1 l

Rye crackers – 2 handfuls

Granulated sugar – 1.5 tbsp. spoons

Dry yeast – 10 g

Raisins – 1 teaspoon

1.Crush the rye crackers, place in the oven and brown at low temperature for 10-15 minutes. Pour them into an enamel bowl and fill with water. Stir thoroughly, cover with a lid and place in a warm place for 1.5-2 hours. Don't forget to stir periodically.

2. Strain the resulting liquid, add yeast diluted in water, granulated sugar, mint. Leave at room temperature for 10-12 hours.

3.After this, strain the kvass through cheesecloth and pour into bottles, adding 2-3 raisins to each. Seal the bottles tightly, keep at room temperature for another 2-3 hours, and then store in the refrigerator.

Custard Cossack kvass

Ingredients

Sourdough – 200 g

Sugar – 5 tbsp. spoons

Flour – 400 g

Water – 3 l

Salt – 1 tbsp. spoon

Mint – 1 sprig

1.Take large saucepan and put the starter in it (at room temperature). Add 1 tbsp. spoon of sugar. If the starter is runny ( perfect consistencythick sour cream), then you can stir in a little flour. Place in a warm place.

2. While the starter is “reaching”, sift the flour and pour boiling water over it (make sure that no lumps form!). Add the remaining sugar, salt and mint. Cool the resulting jelly to room temperature.

3. Pour flour jelly over the sourdough. There is no need to stir, just wrap the kvass and put it in a warm place.

4.After about three hours, foam will form and the dough will begin to rise. Then immediately move it to the cold and let it stand until ready.

5.Add salt to the resulting kvass. You can also season the drink with horseradish or sour cream.

According to statistics, greatest number alcohol is sold out on hot days. However, alcohol is one of those drinks that doctors do not recommend drinking in the heat. This also applies to beer. Sugary carbonated drinks and juices from concentrates are especially harmful in hot weather. They do not quench, but only inflame thirst. And all because they add a large number of Sahara. In addition, soda and unnatural juices contain a lot harmful substances, dyes and preservatives. For the same reason, it is not recommended to use purchased kvass in hot weather. And the gas contained in lemonades and kvass causes swelling.
