  • Cocoa 30 gr.
  • Cognac or Amaretto liqueur (optional) 2 tbsp. l.
  • Granulated sugar 130 gr.

Preparation:

  1. Prepare espresso and leave to cool. The classic recipe involves using this, but you can use regular natural coffee. To do this, pour 2 teaspoons of freshly ground coffee into a Turk and pour 200 ml. water. Bring to a boil and strain.
  2. Separate the whites from the yolks. Since the dessert cannot be heat treated, it is very important to choose only the freshest eggs, which must first be thoroughly washed and dried. Make sure that no yolk or water gets into the container with the whites, otherwise this will affect their “airiness”.
  3. Cover the whites with cling film and place in the refrigerator. Add sugar to the yolks and beat until white. Sometimes the sugar does not dissolve completely. In cases where there is a lot of it left, extend the beating time. You can also replace sugar with powdered sugar.
  4. Beat the whites into a strong foam. Properly prepared protein mass should not leak out when the container is turned over. Before you start using the mixer, you can add a pinch of salt to them, which will make them more stable.
  5. Stir the cream cheese into the yolk mixture and gradually begin adding the whites, in two or three additions. You need to mix the mixture very carefully, from edge to center, from top to bottom, using a wooden spatula. The finished cream should have a homogeneous, airy consistency.
  6. Pour cognac or liqueur into cold coffee.
  7. Proceed to forming the dessert. Dip the Savoiardi sticks into the coffee one at a time and fill the bottom of the bowl with them. Important: these cookies are very delicate and quickly absorb moisture, for this reason they cannot be kept in liquid for more than 1-2 seconds, otherwise they will become soggy and break. The sugar side of Savoiardi is denser, so it is better to lower it. For serving, you can use not only bowls, but also springform pans, but they are less suitable for this dessert - tiramisu has a light and airy texture, and it is not always possible to cut it into beautiful portions.
  8. Place the cream on top and smooth it out. The thickness of the layer should be approximately equal to the thickness of the cookies.
  9. Place the second layer of Savoiardi and spread the cheese mixture on it.
  10. Place the bowls in the refrigerator for 8-10 hours. The dessert can be served earlier, but the longer it sits, the better it will keep its shape, which is especially important when using springform pans instead of serving glasses.
  11. Sprinkle the surface with cocoa before serving. To do this evenly, you can use a small strainer. If desired, cocoa can be replaced with grated chocolate.

Ingredients:

  • Cookies "Bird's milk" (or any other shortbread cookies) 600 gr.
  • Milk 90 ml
  • Butter 250 gr.
  • Sugar 300 gr.
  • Nuts 150 gr.
  • Cocoa 80 gr.

Preparation:

  1. Grind approximately half of the cookies into fine crumbs using a blender or mortar. Break the remaining part into small pieces with your hands. Their presence in the dessert creates a color contrast.
  2. Place butter in a small stainless steel pan and add sugar. Melt the butter over low heat while stirring constantly. Remove the container from the stove as soon as the sugar has completely dissolved.
  3. Sift the cocoa, add the milk and mix well with the butter-sugar mixture until smooth. Mix the composition with cookies.
  4. Add pre-chopped nuts to the preparation.
  5. Mix the future sausage thoroughly so that the pieces of cookies and nuts are evenly distributed.

  5. Pour the remaining water into a saucepan, add 400 grams of sugar, salt and half the syrup. Bring to a boil, then reduce heat and simmer for another 8-10 minutes. Do not stir the contents during cooking.
  6. Line a suitable sized pan with cling film or foil. Grease with a small amount of vegetable oil.
  7. Start whisking the gelatin and gradually pour in the syrup. Only half of the syrup will be needed for this amount of ingredients. Pour the rest into a jar and save until next time.
