Hi all. Today I will share with you a recipe for the so-called American apple pie. Its distinctive feature is a large amount of filling and thin, crispy dough. All this combined with cinnamon is simply incredibly tasty.

The dough for our pie will be the same as for - unsweetened chopped dough, or in other words false puff pastry. It is prepared quite easily and quickly; preparing the filling will take a little more time. We will need to peel and seed the apples. The variety of apples can be absolutely any. You will only need to adjust the amount of sugar. This time I took the Semerenko variety, they are slightly sour, so it took a little more sugar than, say, the Grushovka variety. But, as for me, it is still better to use sweet and sour varieties for filling pies, so the play on contrast will be more noticeable.

How to make apple pie at home.

Ingredients:

  1. 300 gr. flour
  2. 180 gr. butter
  3. 40 gr. ice water
  4. juice of half a lemon
  5. a pinch of salt
  6. 1.5 kg apples
  7. 100 gr. Sahara
  8. 1 tbsp. l. starch
  9. zest of 1 orange
  10. cinnamon 2-3 tbsp. l.
  11. egg (yolk)

Preparation:

First, we need to thoroughly cool the butter and water, so we put them in the freezer for 20 minutes. Sift our flour into a bowl and combine it with a pinch of salt.

We rub our chilled butter on a coarse grater, constantly mixing with flour.

Now pour ice water and the juice of half a small lemon into our butter-flour mixture (if the lemon is large, take the juice from a quarter of it).

Quickly knead the dough, spending no more than 3-5 minutes. We just need to gather all the ingredients into a ball. The dough will be uneven in structure with pieces of unmelted butter. We put it in the refrigerator.

In the meantime, we are busy with the filling. Peel and seed the apples and cut them into cubes. You can grate them on a coarse grater, but I prefer the option with small pieces for the filling.

Add orange zest, a tablespoon of cinnamon, starch, sugar to the apples (the amount depends on the variety, I added 60 grams, try the filling and decide for yourself how much sand you need to put there).

Mix everything. During this time, our dough will just rest.

Let's start rolling out. We divide the dough, take two thirds to the bottom, and leave a third for our lid.

I suggest rolling out the dough between two sheets of parchment, it's much easier and there's no need to add flour.

Roll out the first portion of dough and place it in a prepared pan (greased with butter and sprinkled with flour). Distribute to the bottom and sides of our form.

Prick with a fork so that the dough does not deform during baking.

We spread our filling.

Cover the top with the rolled out second layer of our dough.

We make cuts to allow steam to escape. For a better appearance, cover the top of the pie with an egg, beaten with a fork, and sprinkle generously with sugar and cinnamon.

Place in a preheated oven and bake at 200° for 40-50 minutes. If the top browns too quickly, you can cover it with foil, metal side up. In any case, the time is approximate, look at the appearance of the pie.

At first it will be crumbly, but after a few minutes it will acquire the necessary density.

We divide the mass into two parts – smaller and larger. Wrap each one in film and put it in the refrigerator. Let the dough freeze there for 30 to 40 minutes.

At this time, as the classic recipe prescribes, you need to start filling. Turn the apples into small cubes, approximately 2 cm in diameter. Sweeten them and flavor them with cinnamon. Then add the rest of the ingredients. All that remains is to mix it all well, making sure that the apple pieces are evenly covered with spices. We also put the composition in the refrigerator.

While the oven is heating up to 200 C, roll out most of the dough into a not too thin (about a centimeter thick) cake. Carefully, so that it does not tear, we wind it onto the rocking chair, and unfold it in the baking dish.

What do you need to quickly bake a small apple pie for a cozy evening tea party? Quite a bit of effort and time, because you don’t have to knead the dough yourself: we use store-bought puff pastry.

  • Ready dough - take one sheet;
  • apples – 6 pieces;
  • granulated sugar - you need 2 tablespoons. But the amount of sugar is allowed to vary. If the fruits are sweet, take less than the specified amount, and add more to the sour ones.
  • cinnamon - a teaspoon (you can do without it);
  • sugar, but vanilla (for sprinkling the finished pie) - the same volume.

We will cook from:

  • margarine (preferably butter) – 400 g;
  • water – 4 tablespoons is enough;
  • eggs - 4 pieces are enough;
  • salt - pinches;
  • apples - take 7 fruits;
  • Cheddar cheese – 300 g (unsweetened cottage cheese can perfectly replace it);
  • sour cream - at least one and a half glasses;
  • granulated sugar – 2 glasses;
  • semolina - ½ cup.

Be sure to stir the fruit, especially at the beginning: there is a risk that they will burn. We will not bring it to a puree state - we need the fruit to soften. Place them in a baking dish to cool.

During this time, we just have time to make something like bread crumbs from flour, butter and leftover sugar. Nothing complicated: just knead and rub with your fingers.

Sprinkle the crumbs onto the apples. We don't press down!

The “wartime dessert” is baked at a temperature of 150 C for about half an hour until the crumbs turn golden.

  • Calvados (apple or pear brandy, can be replaced with good cognac) - at least 3 tablespoons;
  • milk - the same;
  • dried grapes (choose seedless) - 50 g is enough;

  • eggs – 2 pieces are enough;
  • sugar (ideally cane) – about 180 g;
  • lemon, or rather its zest;
  • high-quality butter - a little more than 200 g.

Fill the raisins with Calvados (or cognac). Chop the apples as finely as possible. Pour into a frying pan where 15 g of butter and 50 g of cane sugar have already been mixed and heated. Stir and wait for the mixture to acquire the color and thickness of hot caramel. And add “drunk” raisins.

Place the apple-raisin caramel in an even layer into a baking dish (don’t forget to grease it with butter).

On top is a dough made from the remaining butter and sugar, eggs, flour, lemon peel and milk.

The culinary miracle should be baked in an oven heated to 190 C for 40 minutes.

Combine finely chopped apples with cinnamon, sugar, nutmeg and flour. Mix. The filling is ready. Place it in a dough “pot” and sprinkle with crumbs. We made it by chopping cow butter freshly taken out of the refrigerator with granulated sugar and flour.

Now put it in the oven for 45 minutes. And the open-faced American-style apple pie is ready.
